BROWN SUGAR BACON WAFFLES
These are perfect for those lazy weekend mornings when you have time to wake up late and still have time to cook breakfast! They are deliciously irresistible.

- Preheat an oven to 375 degrees F (190 degrees C). Prepare a baking sheet with cooking spray. Arrange the bacon on the prepared baking sheet, and sprinkle with 2 tablespoons brown sugar. Bake in the preheated oven until the bacon is crispy and the brown sugar is caramelized, 10 to 15 minutes. Immediately remove the bacon to a cutting board; cut into small pieces and set aside.
- Preheat a waffle iron; grease with cooking spray.
- Whisk the flour, 1/2 cup brown sugar, baking powder, baking soda, and salt together in a large bowl. Beat the eggs, buttermilk, vegetable oil, and vanilla together in a separate bowl; fold the wet mixture into the flour mixture. Add the bacon and stir, being careful to not over mix.
- Ladle the batter into the preheated waffle iron and cook until golden brown; serve hot.

BACON PECAN WAFFLES
Steps:
- For the bacon pecans: Add butter to a skillet over medium-high heat until melted. Then add the brown sugar, pecans, bacon and vanilla. Cook until a caramel texture, 2 to 3 minutes.
- For the waffles: Spray a waffle griddle with nonstick cooking spray. Heat the griddle on medium heat.
- Whisk together the pancake mix, milk, oil, cinnamon, sugar and vanilla in a large bowl. Ladle the waffle batter into the waffle griddle and close. Cook until golden, 1 to 2 minutes. Repeat with remaining batter.
- Remove and serve with the bacon pecans poured directly over the waffles.
BUTTERMILK-BROWN SUGAR WAFFLES
This recipe first appeared in The Times in a 2006 article Julia Moskin wrote about wedding registries and what items couples should (and shouldn't) include on theirs. A cookware set? No. Better to buy pieces individually according to a couple's needs. A waffle iron? Why yes, if there's any chance of children. These waffles are light, crisp and easy to throw together, like traditional waffles, but the buttermilk lends tang and the brown sugar an earthy sweetness. The secret ingredient here is wheat germ. It provides a lovely toothsome texture and crunch.

- Whisk eggs, buttermilk and melted butter in a large bowl. In another bowl stir dry ingredients together, then add to egg mixture and whisk just until smooth. Let batter rest briefly.
- Heat a waffle iron and butter lightly or spray with nonstick cooking spray (even nonstick waffle irons require this step). Ladle batter onto iron (about 1/4 cup for an 8-inch round iron), close, and cook just until light golden brown. Serve immediately.

- Cook bacon in medium skillet over medium heat 8-10 minutes or until browned and almost crisp, stirring occasionally; drain on paper towels. Reserve 2 tablespoons of bacon drippings from skillet. (reserve remaining drippings to brush over waffle iron, if desired.) Heat oven to 250. Place wire rack on large rimmed baking sheet. Whisk flour, brown sugar, baking powder and salt in large bowl. Heat waffle iron until hot. Meanwhile, whisk egg yolks in medium bowl until smooth. Whisk in milk, butter and reserve 2 tablespoons bacon drippings until blended. (Butter can be used instead of drippings in the batter.) Make a well in center of flour mixture. Pour in egg yolk mixture; whisk until almost smooth. Beat egg whites in small bowl at medium-high speed until stiff peaks form. Stir one-third of the egg whites into waffle batter to lighten; gently fold in remaining egg whites. Fold in bacon. Lightly brush waffle iron with some of the remaining reserved bacon drippings. (Canola oil can be used instead of drippings.) Pour ½ - 2/3 cup batter per waffle onto waffle iron (exact amount depends on size of waffle iron). Cook 2 ½ - 4 minutes or until crisp and golden brown, or cook waffles according to manufacturer's directions for iron. Arrange waffles on rack on baking sheet; place in oven to keep warm. Repeat with remaining batter.
