ASIAN STUFFED PORTABELLAS
Large portabellas stuffed with rice and sautéed veggies give you a tasty dinner. Perfect if you love Asian cuisine.

- Heat oven to 400°F. Spray 15x10x1-inch pan with cooking spray. In 1 1/2 quart saucepan, heat brown rice and water to boiling; reduce heat. Cover and simmer 45 to 50 minutes or until water is absorbed.
- Meanwhile, place mushrooms in pan, gill side down. Bake 5 minutes or until tender and beginning to brown.
- In 10-inch nonstick skillet, heat canola oil over medium-high heat. Add coleslaw mix, snow pea pods, green onions, gingerroot and garlic to oil. Cook 2 to 3 minutes, stirring frequently, until coleslaw mix is wilted and vegetables are crisp-tender. Stir in cooked rice; sprinkle with soy sauce and sesame oil. Cook rice mixture, tossing gently with soy sauce and oil, until thoroughly heated; remove from heat.
- In pan, turn mushrooms gill side up. For each serving, spoon about 3/4 cup rice mixture onto mushroom and sprinkle with 1 teaspoon sesame seed. Bake 13 to 15 minutes or until sesame seed begins to turn brown.

STUFFED PORTOBELLO MUSHROOMS
In this satisfying centerpiece dish from Chloe Coscarelli, the vegan chef and cookbook author, portobello mushroom caps are filled with savory lentil cashew stuffing, topped with a slice of tomato and fresh thyme leaves then baked until golden brown and bubbly. It is hearty fare that will surprise and delight everyone at your table.

- Preheat oven to 350 degrees Fahrenheit.
- In large skillet, sauté the onions and cashews with 2 tablespoons olive oil over medium high heat. Season with salt and pepper to taste, and sauté until onions are soft and lightly browned. Add garlic and let cook a few more minutes.
- In a large bowl combine onion mixture, brown rice, lentils, breadcrumbs, vegetable broth, basil and thyme. Mix together and season to taste with salt and pepper. (The stuffing can be made up to three days in advance and stored covered in the refrigerator.)
- Brush both sides of mushroom caps lightly with olive oil and place top-side down on an oiled sheet pan. Stuff mushrooms with about 1/2 cup lentil cashew stuffing, then press one tomato slice on top of the stuffing. (The mushrooms can be stuffed and assembled on a baking tray the day before you plan to bake and serve them.)
- Bake for approximately 30 minutes, or until the stuffing is browned and the mushroom begins releasing juices. Garnish with extra fresh thyme leaves.

Instead of stuffing peppers - I like to stuff mushrooms as a main meal. You can use this stuffing in pepper or zucchini as well.

- Preheat oven to 400.
- In a medium sauce pan over medium heat, sautee onion, carrot and garlic in olive oil for 5 minutes.
- Add brown rice and pine nuts and saute for another 5 minutes.
- Add broth, raisins and cumin. Cover and simmer for 30-40 minutes.
- Stuff mixture evenly into portabello caps.
- Bake for 20 minutes at 400.

- If you don't have any cooked rice leftovers, start by cooking about 1 cup of rice, following the package directions. Drain and set aside.
- Add olive oil, chopped onions and garlic to a large non-stick skillet and cook for about 1 minute over medium heat. Add sausage and cook for 10 minutes, breaking it into small chunks again if needed. Turn off the heat and drain fat if any.
