3 lbs beef round steak (top round, bottom round or sirloin tip, 1" thick)
1/3 cup all-purpose flour
3 tablespoons shortening
1 (1 1/2 ounce) envelope dry onion soup mix
1/2 cup water
1 (10 1/2 ounce) can condensed cream of mushroom soup

Steps:

  • Sprinkle one side of meat with half the flour; pound in with meat mallet.
  • Turn meat and pound in remaining flour.
  • Cut meat into 6 to 8 serving pieces.
  • Melt shortening in large skillet; brown meat in shortening over medium heat, about 15 minutes.
  • Sprinkle onion soup mix over meat.
  • Mix water and mushroom soup; pour over meat.
  • Cover tightly; simmer 1-1/2 to 2 hours or until tender.
  • Place meat on warm platter.
  • Heat remaining gravy mixture to boiling, stirring constantly; pour over meat.

I found this recipe online years ago and it was an instant hit with my family. It is especially comforting on a cold winter day.

2 lbs cube steaks
salt and pepper, to taste
1 cup all-purpose flour
1/2 cup vegetable oil
1 cup diced onion
3 cups beef stock or 3 cups bouillon
1 tablespoon Worcestershire sauce

Steps:

  • Cut each steak into the desired serving size, if necessary. Salt and pepper each steak lightly and dredge in flour. Shake off excess. Set aside.
  • If you don't have a skillet with ovenproof handles, you can use a Pyrex dish or an earthenware pan with a cover for the oven. Heat a heavy 12-inch skillet (cast iron, if you have one) with a tight-fitting lid over medium heat. Add the vegetable oil. Brown the cube steaks on both sides and set aside.
  • Pour off all of the oil except 1/3 cup. Add 1/3 cup of flour to the oil and stir. Allow the mixture ot brown over medium-low heat and stir frequently to prevent it from burning. When the mixture is about the color of peanut butter, add the onion. Stir and allow the onion to cook for about 1 minute.
  • Slowly add the beef stock, stirring constantly. Add the Wercestershire sauce and simmer for 5-10 minutes.
  • Return the cube steaks to the pan, cover, and bake in a 275 degree oven for one hour.
  • Serve with mashed potatoes and your favorite vegetable.

2 lbs round steaks, 1/2 inch thick,cut in serving pieces
1/4 cup flour
1 teaspoon dry mustard
1 teaspoon salt
1/8 teaspoon pepper
1/4 cup vegetable oil or 1/4 cup canola oil
1/2 cup water
1 tablespoon Worcestershire sauce

Steps:

  • Combine flour, mustard, salt and pepper.
  • Trim fat from meat.
  • Make cuts in edges of meat to keep it from curling.
  • Dredge with flour mixture to coat, shaking off excess.
  • Reserve remaining flour.
  • Heat oil in skillet.
  • Brown meat in oil on both sides, over medium-high heat.
  • Reduce heat to a simmer.
  • Drain off fat.
  • Combine water and Worcestershire sauce.
  • Add to meat in skillet.
  • Cover tightly and simmer for 1 hour or until tender, turning meat occasionally.
  • Remove meat to a platter to keep warm.
  • Sprinkle reserved flour mixture into the skillet, a little at a time, stirring constantly over medium heat.
  • Use a fork, mashing out any lumps.
  • Gradually add 1/2 to 1 cup water, stirring constantly, until thickened.
  • Drizzle some gravy over the meat and serve remainder on the side.

This recipe is sure to be a hit. It came from a lady I knew when I was in high school. It is my favorite dish to make. Just be careful while it's cooking, it's really easy to burn. My microwave time is different than in the recipe, it only takes mine to cook it in 30 to 35 minutes.

1 1/2 lbs round steaks (1/2 inch thick)
3 tablespoons flour
2 tablespoons oil
1 medium onion, sliced
2 cups water
1 (5/8 ounce) envelope brown gravy mix
1 tablespoon brown sugar
1 tablespoon vinegar
salt and pepper
1 teaspoon Worcestershire sauce

Steps:

  • Cut steak into serving sizes, pound and coat with flour, brown in oil.
  • Put meat in microwave safe dish; place onion slices on top.
  • Mix remaining ingredients and pour over steak, cover.
  • Microwave on high for 10 minutes, then on low for 45 to 55 minutes. Rearrange meat once. (Good with boiled potatoes, potato cakes, noodles or rice).

3 pounds thick sirloin or round steak
Salt
Cayenne pepper
Black pepper
3 tablespoons vegetable oil
2 medium onions, chopped
1 bell pepper, chopped
1/2 cup water, divided
2 tablespoons cornstarch
Serving suggestion: Steamed rice

Steps:

  • Sprinkle both sides of the steak with the salt, cayenne, and black pepper. Rub seasoning into meat. In a large skillet, heat oil over high heat until hot. Add steak and cook on high until browned, turning steak every 3 to 4 minutes. (Lower heat if necessary.) The steak should be well browned on both sides. Remove steak and add onions and bell peppers to pan. Cook until wilted. Place steak on top of onions and bell peppers and add 1/4 cup of water. Lower heat to medium, cover and simmer for 1 1/2 hours, turning steak every 20 minutes. (Note: when lifting lid of pot, let the water from the lid drain into the pot.) When steak is tender, remove steak and place on a platter. Mix cornstarch with 1/4 cup of water and add to the pot. Stir to make a gravy. Serve gravy over hot rice with steak.

2 tablespoons canola oil
1 medium onion, chopped
1 1/2 pounds 80 percent lean ground beef
1 cup fresh bread crumbs
1 tablespoon grill seasoning
1 tablespoon Worcestershire sauce
1 large egg
1/2 (8-ounce) package sliced baby portobello mushrooms
Kosher salt and freshly ground black pepper
1/4 cup all-purpose flour
2 (14-ounce) cans beef broth

Steps:

  • Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the onion and saute until soft, about 6 minutes. Put 1/2 of the onion in a large bowl and the remainder in another bowl. In the large bowl add the beef, bread crumbs, grill seasoning, Worcestershire sauce and the egg. Mix to combine everything well and form the mixture into 5 oval patties. Heat the remaining tablespoon of oil in the same skillet over medium-high heat. Cook the patties until they are well browned, about 4 to 5 minutes per side. Remove the steaks and pour off all but 2 tablespoons the fat. (The patties will not be cooked through and will finish cooking in the gravy.)
  • Put the pan back on the heat, add the mushrooms, and cook for 5 minutes. Add the remaining onions, sprinkle in the flour, and cook for 2 minutes. Add the beef broth and bring it to a boil. Return the patties to the pan, reduce the heat to a simmer and cook until the sauce has thickened and the steaks are cooked through, about 10 minutes. 2 pounds beef bottom round, trimmed of excess fat
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup vegetable oil or bacon drippings
2 cups chicken broth
1 teaspoon dried thyme

Steps:

  • Preheat the oven to 300 degrees F.
  • Cut the meat with the grain into 1/2-inch thick slices and season on both sides with salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour. Tenderize the meat, using a needling device, until each slice is 1/4-inch thick. Dredge in the flour again and set aside.
  • Add enough of the vegetable oil or bacon fat to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
  • Remove the last steaks from the pot and add the chicken broth and thyme and whisk until the liquid just comes to a boil. Return the steaks to the pot and make sure they are all submerged in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.

1 (1 1/2 ounce) package onion soup mix
1/4 cup water
1 (10 1/2 ounce) can condensed cream of mushroom soup

Steps:

  • Cut steak into 5 or 6 serving pieces. Place in a slow cooker.
  • Add dry onion soup mix, water and condensed mushroom soup. Cover and cook on low 6-8 hours or on high about 4-5 hours.
  • If making the pork chops, brown in oil and then put some of the sauce on the bottom of a 9x13 pan, then layer pork chops and add more sauce. Then bake for an hour and a half at 350.

1 lb ground sirloin
1 (1 1/2 ounce) package onion soup mix
1 tablespoon seasoning salt
1 (7/8 ounce) package brown gravy mix
1 cup water

Steps:

  • Preheat a skillet over medium heat.
  • In a medium bowl, mix ground sirloin, onion soup mix, and seasoning salt until well mixed. Divide and flatten into three patties approximately 1/2" thick.
  • Brown patties on skillet, turning once or twice only, until done through.
  • Meanwhile, in a small sauce pan, mix brown gravy mix with water. Using a whisk, mix until slightly bubbling. Lower heat and allow to thicken.
  • Serve patties with gravy.

This is a great way to use that London Broil you just couldn't figure out what you wanted to do with. I'm am about to make it for dinner tonight. It is alittle time consuming but minimal ingredients are needed and it is delicious! As the meat cooks, it will become tender. I got this out of one of my favorite cookbooks called "Delicious Heritage" by Nippy Carville.

1 (3 -4 lb) thick round steaks
1/4-1/2 cup oil
salt and pepper (to taste)
water

Steps:

  • Season steak.
  • In heavy pot, pour a small amount of oil.
  • Begin browning steak over medium heat.
  • As steak is browning, SLOWLY add small amount of water.
  • Cover the pot.
  • As gravy accumulates, drain from pot and reserve.
  • Continue to add oil and water at 15 minute intervals. (I do it more often).
  • To use less oil, skim off top of gravy and use this to aid in the browning process for 1 1/2 to 2 hours.
  • Serve over rice.
  • My own touch tonight when I made it- I added a couple of beef cubes, and a tablespoon of cornstarch mixed in a little water and added it to the gravy. I sliced the beef thin and put it back in the pan with the gravy and simmered for about 10-15 minutes.
