Number Of Ingredients 18

2 1/4 cups sifted cake flour
1 1/2 cups sugar
3 teaspoons baking powder
1 teaspoon salt
5 egg yolks
1/2 cup vegetable oil
3/4 cup water
1 lemon, zested
2 teaspoons vanilla
8 egg whites, whipped to stiff peaks
Grapefruit Frosting, recipe follows
24 ounces cream cheese, softened
4 teaspoons lemon juice
2 pounds fresh grapefruit, sectioned
1 cup powdered sugar
12 drops yellow food coloring
1 teaspoon lemon zest
1 teaspoon orange zest

Steps:

  • Preheat oven to 325 degrees. Sift together dry ingredients then add egg yolks, oil, water, zest, and vanilla and mix well. When incorporated, fold in egg whites. Bake for an hour. When cake is cooled, slice in half and frost in between layers, on top and around sides.
  • Beat cream cheese with lemon juice until fluffy. Mash 6 grapefruit sections into small pieces. Add sugar to cheese mixture along with food coloring, fruit zest and blend will. Add remaining grapefruit.

2 oz. bourbon
¾ oz. fresh grapefruit juice
½ oz. honey syrup (1:1, see headnote)
Garnish: Grapefruit twist

Steps:

  • Combine bourbon, grapefruit juice, and honey syrup in a cocktail shaker and fill with ice. Shake until well chilled, about 20 seconds. Strain into a chilled stemmed cocktail glass. Pinch grapefruit twist over top of glass to express oils and add twist to drink.

1/4 teaspoon cream of tartar
12 ounces cream cheese, at room temperature
2 teaspoons lemon juice
1 teaspoon grated fresh lemon rind
3/4 cup sifted powdered sugar
6 -8 drops yellow food coloring
1 (16 ounce) can grapefruit sections, well drained, reserving 2 tablespoons juice from grapefruit sections

Steps:

  • Preheat oven to 350 degrees F.
  • Sift together flour, sugar, baking powder, and salt in large mixing bowl.
  • Make a well in center of dry ingredients.
  • Add water, vegetable oil, eggs, grapefruit juice and lemon rind.
  • Beat until smooth.
  • Beat egg whites with cream of tartar until stiff but not dry.
  • Gently fold egg whites into cake batter.
  • Pour into an ungreased 10 inch cake pan and bake at 350 degrees F for 30 minutes.
  • When cool, slice cake in half horizontally.
  • Frost.
  • Beat cheese until fluffy.
  • Add lemon juice and rind.
  • Gradually add sugar and beat until blended; add food coloring. Add reserved 2 tablespoons of grapefruit juice and blend.
  • Divide frosting in half and add roughly chopped grapefruit sections to one half.
  • Spread this mixture on bottom half of cake.
  • Top with several grapefruit sections.
  • Cover with other cake layer and frost remainder of cake.
  • Garnish with remaining grapefruit sections.

CREAM CHEESE FROSTING:
2 pkt (3-oz) cream cheese, softened
2 tsp Lemon juice
1 tsp Grated lemon peel
3/4 cup Sifted powdered sugar
6 x -(up to)
8 dsh Yellow food color, optional
Reserved grapefruit sections

Steps:

  • Sift together flour, sugar, baking powder, and salt into bowl. Make well in center and add water, oil, egg yolks, grapefruit juice and lemon peel. Beat until very smooth. Beat egg whites with cream of tartar until stiff but not dry. Gradually pour egg yolk mixture over egg whites and fold in gently until just blended. Do not stir. Turn batter into ungreased 9 inch spring form pan and bake at 350 degrees 30 minutes, or until top springs back when touched lightly with finger. Invert onto cake rack and cool thoroughly. Loosen edges of cake carefully and remove from pan. With serrated knife, cut cake crosswise to make two layers. Reserve a few fruit sections for frosting. Fill with part of the Cream Cheese Frosting and grapefruit sections. Spread top and sides of cake with frosting and decorate with additional fruit sections. Cream Cheese Frosting: Beat softened cream cheese until fluffy. Add lemon juice and peel. Gradually blend in sugar and beat until well blended. Stir in food color. Crush enough grapefruit sections to measure 2 teaspoons and blend into frosting.

Grapefruit Cream Cheese Frosting
2 six-ounce packages of cream cheese
2 teaspoons lemon juice
1 teaspoon grated lemon rind
3/4 cup powdered sugar (sifted)
6 to 8 drops yellow food coloring
1 one-pound can grapefruit sections (well-drained), reserving 2 tablespoons of juice OR 3 fresh grapefruits, peeled, sectioned, and drained, reserving 2 tablespoons of juice.

Steps:

  • Grapefruit Cake Preheat oven to 350º F. Sift together flour, sugar, baking powder, and salt into mixing bowl. Make a well (figuratively not literally) in center of dry ingredients. Add water, oil, egg yolks, grapefruit juice, and lemon rind. Beat until smooth. Beat egg whites and cream of tartar separately, until whites are stiff but not dry. Gradually fold egg whites into the cake batter, folding gently with a rubber spatula until just blended. Do not stir the mixture. Pour into an ungreased 10-inch cake pan. Bake at 350º degrees for 25 to 30 minutes, or until cake springs back when lightly touched with a finger. Invert pan on cake rack until cool. Run spatula around edge of cake. Carefully remove from pan. With a serrated knife, gently cut layer in half. Grapefruit Cream Cheese Frosting Let cream cheese soften at room temperature. Beat cheese until fluffy. Add lemon juice and rind. Gradually blend in sugar. Beat until well blended. Add food coloring. Add reserved grapefruit and blend into frosting. Divide the frosting evenly into two bowls. Roughly chop 2/3 of the grapefruit sections and add them to half the frosting. Spread this mixture on the bottom half of cake. Top with several grapefruit sections. Cover with second layer of cake. Frost top and sides. Garnish with remaining grapefruit sections.

  • Start by zesting and then segmenting the grapefruits. Reserve the zest for later in a small bowl covered with a damp piece of paper towel to keep it from drying out. Cut off the top of bottom of a grapefruit and stand it up on one of the cut edges on a cutting board. Use your knife to carefully cut off all of the rind moving from top to bottom in strips, keeping with the natural curve of the fruit. Carefully cut in between each membrane to remove grapefruit segments (supremes).
  • Put removed segments in a strainer set over a bowl to collect juices. When all segments are removed, and only a juicy mass of membrane is left, squeeze the remaining juice from the membranes into the same bowl over which the grapefruit is draining. This fresh juice will be strained and used in the cake and frosting later. Repeat with the remaining grapefruit.
  • To make the cake, sift together flour, sugar, baking powder, and salt into mixing bowl. Make a well in center of dry ingredients.
