This quick syrup can be made in ten minutes, keeps for up to 30 days, and is fabulous on everything from pancakes to ice cream.

1 half cup butter
2 cups Brown Sugar
1 cup Water
1 Tablespoon, plus one teaspoon Bulleit Rye or Other Favorite Bourbon (May use more or less to taste)

Steps:

  • Combine two cups of brown sugar and one cup water in a small saucepan.
  • Heat until just boiling, and then reduce heat to medium low and let simmer for five minutes. Stir continuously to keep the sugar from burning.
  • About two minutes into the simmering, add a tablespoon of Bourbon.
  • After the mixture has been simmering for five minutes, remove from heat. Add the half stick of butter and stir to combine. I add another teaspoon of Bourbon at this stage for a more complex flavor, but it's optional.
  • Pour into a glass mason jar for cooling. I use a canning funnel for this part to avoid splashing and burning. If you don't have one, be careful, because the liquid is hot!
  • Serve immediately. The leftover syrup can be kept refrigerated for up to 30 days. Take care when reheating, so as not to burn the butter. Reheat slowly, and str frequently to recombine the butter with the syrup.

Nonstick spray
1 stick (8 tablespoons) unsalted butter
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt
1/2 teaspoon freshly grated nutmeg
2/3 cup pure cane granulated sugar
2 large eggs
3/4 cup buttermilk
2 teaspoons pure vanilla extract
1/2 cup grade B maple syrup
2 tablespoons bourbon
1 cup confectioners' sugar
3/4 cup finely chopped toasted pecans

Steps:

  • For the doughnuts: Preheat the oven to 375 degrees F. Spray a 12-cup doughnut pan with nonstick spray.
  • Put the butter in a small saucepan over medium heat. Cook, swirling occasionally, until golden brown, about 6 minutes. Transfer the brown butter to a measuring cup and set aside.
  • Combine the flour, baking powder, baking soda, salt and nutmeg in a medium bowl. In a large bowl, whisk together the sugar and eggs until smooth; then whisk in the buttermilk and vanilla until combined. Add the flour mixture and half of the brown butter (1/4 cup) to the egg mixture; mix until just combined -- DO NOT OVERMIX.
  • Transfer the batter to a pastry bag and fill the doughnut pan about three-quarters full. Bake the doughnuts until light golden brown and just baked through, about 8 minutes; (They will be darker on the bottom, where the batter cooks against the pan, than on the top.) Set the pan on a baking rack and let cool for 10 minutes. Remove the doughnuts from the pan and place them directly on the baking rack. Set the rack over some parchment or foil before glazing.
  • For the glaze: Bring the maple syrup and the remaining half of the brown butter (1/4 cup) to a simmer in a small saucepan over medium heat. Add the bourbon, cook for 1 minute, and then remove from the heat and whisk in the confectioners' sugar until smooth and slightly thick. Transfer the glaze to a shallow medium bowl and leave to thicken slightly. Drizzle the glaze over the doughnuts, sprinkle the pecans on top, and serve.

1 1/2 cups granulated sugar
3/4 cup packed light brown sugar
1 1/2 cups cooked and mashed sweet potato, about 6 small (add a tablespoon or two of water while mashing to make it smooth)
3 large eggs, room temperature
3/4 cup water, room temperature
3 teaspoons real vanilla extract
3 cups all-purpose flour
3 teaspoons cinnamon
2 1/4 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons sea salt
3/4 teaspoon allspice
3/4 teaspoon nutmeg
1/2 teaspoon ginger
1/2 teaspoon clove
bourbon simple syrup
2/3 cup granulated sugar
1/2 cup water
5 tablespoons Bourbon
frosting
1 cup unsalted cold butter
1/2 cup softened butter
2 -3 tablespoons cream
5 cups confectioners' sugar
1/4 teaspoon nutmeg

Steps:

  • Preheat your oven to 350 degrees F, make sure a rack is in the center of the oven and grease 2 9" round cake pans and line with parchment round.
  • Place the 18 tablespoons butter, granulated sugar and brown sugar in an electric stand mixer fitted with the paddle attachment and mix on medium until creamy and well blended, about 4 minutes. Add the eggs one at a time mixing well between each. Add in the sweet potato and mix for 1 minute more. Add the water and vanilla and mix on low for 1 minute.
  • In a medium bowl whisk together the flour, cinnamon, baking powder, baking soda, sea salt, allspice, nutmeg, ginger and cloves. Add to the sweet potato mixture and mix on low until just combined. Pour the batter into the prepared pans, smoothing the top and gently tapping on the counter several times to release any trapped bubbles.
  • Bake in the center of the oven for 40-45 minutes or until a cake tester comes out clean. Let cool for 15 minutes in the pan, remove from the pan and finish cooling on a cooling rack. While the cake is baking combine the sugar and water in a small saucepan over medium-low heat stirring until the sugar has melted. Whisk in the bourbon, cool slightly. Once the cake has cooled, place plastic wrap in the pan and place the cake back in the pan. Pour the bourbon syrup over the cakes. Cakes can be refrigerated overnight before frosting.
  • To prepare the buttercream, place the 2 sicks butter in a medium saucepan and melt over medium heat. Once melted, crank up the heat to medium high. Stand by, stirring and watching. Small golden bits will start to settle on the bottom of the pan and it will start to smell delicious and nutty. Once this happens, take it off the heat and pour into a small, heat-safe bowl to cool completely.
  • In an electric stand mixer fitted with the paddle attachment add the cooled brown butter, softened butter and mix on low until combined. Add in the powdered sugar and mix on low adding cream as needed until fully blended and smooth. Frost the cake leaving the sides naked or lightly frosted. Dust with nutmeg.

2 cloves garlic, minced
⅛ teaspoon crushed red pepper, or more to taste
3 tablespoons bourbon barrel-aged maple syrup
2 tablespoons lemon juice

Steps:

  • Melt butter in a stainless steel skillet over medium heat. Cook, stirring occasionally, until butter turns a golden brown color, 5 to 7 minutes. Butter will foam and then settle down.
  • Add garlic and saute until fragrant, 30 to 60 seconds. Stir in crushed red pepper. Reduce heat to medium-low. Stir in maple syrup and lemon juice until combined.
