HEARTY EGG ROLLS
This recipe is my brother-in-law's creation. The kids love them! Beef and potatoes make for a hearty filling to these deep-fried family favorites. Dip them in your favorite Asian-style sauces!

Steps:
- Place potatoes in a medium saucepan with enough water to cover. Bring to a boil. Cook until tender, about 15 minutes. Remove from heat and drain.
- Place ground beef in a large saucepan over medium high heat. Cook until evenly brown; drain.
- Place potatoes, eggs, cabbage, soy sauce, salt and pepper into the saucepan with the ground beef. Over medium heat, cook and stir until eggs are cooked and cabbage is tender, about 10 minutes. Transfer the mixture to a medium bowl.
- Heat oil in a large, heavy saucepan to 375 degrees F (190 degrees C).
- Place approximately 1 tablespoon of the ground beef and potato mixture in the center of each egg roll wrapper. Roll wrappers around the mixture and fold edges inward to seal.
- Fry egg rolls in the hot oil until golden brown. Drain on paper towels.

Steps:
- Spray a baking sheet with cooking spray.
- Dissolve one tablespoon of the cornstarch into 1/4 cup water and set aside.
- Lightly spray a wok or large saute pan with cooking spray (or use olive oil) and heat over low heat.
- Combine cabbage, carrots, mushrooms, celery and ginger in the pan.
- Cook for five to seven minute or until vegetables begin to wilt, stirring constantly to keep from burning.
- Stir in cornstarch mixture and soy sauce.
- Cook until the sauce thickens.
- Add green onions at very end to keep them crisp.
- Dissolve the remaining tablespoon of cornstarch in 1/4 cup water.
- Brush onto egg-roll wrappers and fill with vegetables.
- Bake in a 350-degree oven for 15 minutes or until brown.
- Enjoy!

- Add all filling ingredients into a mixing bowl and toss to combine.
- Fill a small bowl with water.
- Lay a wrapper on a flat surface with a corner facing you. Place 2 tbsp of filling mixture near the center of the wrapper. Shape into a log.
- Run a thin layer of water around the edge of the wrapper. Fold the bottom corner over the filling, then fold the left and right corners over and roll up.
- Repeat with remaining filling and wrappers.
- Heat the oil in a large wok and fry the rolls in batches until golden brown. Remove with a slotted spoon and place on paper towels to soak up any excess oil.
- Repeat until all rolls have been cooked.
- Serve hot with your favorite Asian dipping sauce.

- EGGROLL DIRECTIONS:.
- Heat 1 Tbsp oil in skillet and add chicken. Season with cajun seasoning and salt and pepper to taste. Cook until no longer pink in the center or 3-5 minutes per side. Transfer chicken to cutting board and let rest for 1-2 minutes.
- Add remaining Tbsp of oil to the pan and the rest of the eggroll ingredients (except the eggroll wraps and vegetable oil). Dice chicken and add to pan. Let cook for about 5 minutes or until all vegetables are heated through and the cheese has melted.
- Measure half a cup of the mixture and place in the center of each eggroll wrap. Fold in sides and bottom. In a bowl, combine flour and water to make a paste. Use your finger to rub some of the paste on the top fold of the eggroll and finish rolling. The flour/water paste will seal the eggroll shut.
- Fry 2 or 3 at a time depending on the size of your fryer. Fry until golden brown.
- AVOCADO DIPPING SAUCE DIRECTIONS:.
- Mash the avocados with a fork and add all other ingredients. Stir well to combine. Top with garnish (optional).
- *TIP - The dipping sauce is better the longer it sits. If you have time, make it the day before and chill in the refrigerator. To keep the avocados from browning, add the avocado pits to the sauce while you're storing it.

- Combine all the filling ingredients in a large bowl, and combine all the sauce ingredients in a small bowl. Heat wok over high heat, add peanut oil and swirl to coat wok. Add shrimp and vegetable mixture to wok and stir fry for 1 minute. Add garlic, ginger, and salt, and stir fry for another minute. Pour the reserved sauce over the vegetables, toss well to mix, and stir fry about 30 seconds. Remove from the heat, transfer to a bowl, and set aside to cool. (At this point, the filling can be covered and refrigerated for up to 1 day).
- Drain filling of any excess liquid. Place the egg roll skins, one at a time so they don't dry out, on a flat surface. Arrange wrapper like a diamond with a corner facing you. Place about 1/4 cup of filling in the lower part of the diamond, leaving about 1 inch of wrapper on either side. Fold the bottom corner over the filling, roll up half way, then fold the sides over. Coat the top corner of the wrapper with egg, then seal and press to fully enclose. Arrange egg rolls on a baking sheet dusted with cornstarch, covered with a dry towel, until all the egg rolls are stuffed. (Do not refrigerate or the wrappers will crack.) Heat the peanut oil to deep-fry temperature (325 degrees F) in a wok or deep skillet. Fry the rolls until golden brown all over, about 2 minutes per side. Drain on paper towels and serve warm with Plum Sauce and Hot Mustard.
