BROILED MOCHI WITH NORI SEAWEED

Broiled Mochi with Nori Seaweed image

Mochi is a sweet, short-grained, very glutinous rice with a high starch content. Mochi is commonly used to make rice cakes, for which it is pounded in large tubs until it becomes extremely sticky. It is then formed into balls or squares, which can be found in Japanese markets. Mochi is also used in confections and rice dishes. It can be bought in most any Japanese grocery store. This is a delicious way to eat it!

BROILED SWEET SOY-SESAME MOCHI

Broiled Sweet Soy-Sesame Mochi image

This is an original recipe i've come up with - I love Asian cooking, and this is probably one of my personal best.

Provided by Iron Chef Ghetto

Categories     Short Grain Rice

Time 10m

Yield 2-4 serving(s)

Number Of Ingredients 5

1 lb mochi rice cake
1/2 cup san-j tamari (Soy Sauce) or 1/2 cup other brand tamari (Soy Sauce)
1/2 cup white sugar
2 tablespoons unseasoned rice vinegar (to taste)
sesame oil

Steps:

  • Turn your oven to the highest broil setting.
  • Oil a small cookie sheet, or something similar, with the sesame oil.
  • Place the mochi on the oiled pan, and proceed to dribble the sesame oil onto that as well, and distribute it around until it's evenly coated. Set aside.
  • Mix the rest of the ingredients, and bring to a boil, adding water in small (1oz) amounts to keep the resulting sauce in liquid form. While you are waiting for this to come to a boil, place the sesame oil-coated mochi under the broiler.
  • When the mochi starts to become crisp, glaze it slightly with the sauce, flipping it, until the sauce in the pan becomes caramelized.
  • At the very end, remove your broiled mochi, and plate it by setting it down on the plate, and then adding enough sauce to cover (and surround it slightly).
  • Make sure to work quickly! Not a step but just advice. The glaze will become a thick and sweet shell on the mochi, but if you do not hurry, it will become a lump of caramelized sugary stuff in the pan!

  • Make the tamari (soy sauce) glaze: add tamari (soy sauce) to a small pan and add brown sugar and cook over low medium heat until it is a nice and thick glaze about 5 minutes. Set aside
  • Make the Sakura sauce glaze: In a pan add the pre-mixed Sakura white bean paste (found in Asian food markets or Japanese goods stores) and thin out with a little water and heat through just so it is easy to spread. Some other alternative garnishes that work well are white and black sesame seeds or additional Tamari brown sugar glaze on the side.
  • Place the Kirimochi (切り餅) blocks on a pre-greased baking sheet. Slather the tamari brown sugar glaze on each Kirimochi (切り餅) and bake for about 10 minutes or until firm on the outside and chewy on the inside. Don't cook too long or it will end up in a pool of mochi (completely melted). The goal is you want the edges to be crispy but the inside to be tender. If you do not have an oven, you can also pan fry or grill instead.
