The perfect weeknight dinner! This Spicy Maple Glazed Salmon is sprinkled with a homemade rub then brushed with maple syrup and popped under the broiler until it's a sweet and spicy masterpiece!

¼ - ½ teaspoon cayenne pepper
½ teaspoon EACH: onion powder AND garlic powder
2 teaspoons smoked paprika
1 teaspoon kosher salt
1 tablespoon melted butter
3-4 tablespoons maple syrup
1 ¼ pounds salmon (cut into 3-4 pieces)

Steps:

  • PREP: Position a rack in the upper third of the oven and preheat the oven too 450ºF. Line a baking sheet with foil and spray with cooking spray (or brush with a little oil) and set aside. In a small bowl, combine the cayenne, onion powder, paprika, salt, and garlic powder.
  • SALMON: Place the salmon on the prepared baking sheet, brush with melted butter, and sprinkle with the prepared seasoning. Bake the salmon for 8-10 minutes depending on the thickness of the salmon. Generally, you need to bake it about 4-5 minutes for every 1/2 inch of thickness. Remove from the oven, brush with the maple syrup and place back in the oven. Switch to the broiler setting and broil for 30 seconds to 1 minute or until bubbly and brown. Serve immediately with the salad.

Spicy Glazed Maple Salmon for two makes the perfect weeknight dinner. All you need is 20 minutes to make this healthy meal. Serve with sweet potato fries and veggies, or a lovely kale and brussels sprouts salad!

2 - 6 oz wild salmon filets (12 oz total)
1 tablespoon pure maple syrup
1 tablespoon reduced sodium soy sauce
1 teaspoon dijon mustard
1 teaspoon chili powder
1/4 teaspoon cayenne pepper
1 garlic clove, minced

Steps:

  • Preheat oven to 350 degrees F. Line a small baking sheet with parchment paper to prevent the glaze from burning. Place salmon filets 2 inches apart on parchment paper.
  • In a small bowl, whisk together maple syrup, soy sauce, dijon mustard, chili powder, cayenne pepper and garlic. Pour or generously brush the glaze over the salmon, reserving 1 tablespoon for glazing once salmon is done. Bake for 15-20 minutes or until salmon is done and flakes with a fork. For every inch of salmon filet thickness, you'll need to bake for 15 minutes. Usually 18 minutes is perfect for me.
  • Once salmon is done baking, remove from oven and pour remaining glaze on top. Enjoy! Serves 2.

6 tablespoons Grade B maple syrup (or Grade A maple syrup flavored with 3 drops maple extract, or to taste)
1/2 cup water
2 tablespoons minced peeled fresh gingerroot
2 garlic cloves, minced
1 teaspoon dried hot red pepper flakes, or to taste
1/4 teaspoon salt
four 1-inch-thick pieces salmon fillet (about 6 ounces each)

Steps:

  • In a small heavy saucepan combine maple syrup, water, gingerroot, garlic, red pepper flakes, and salt and simmer until reduced to about 1/2 cup.
  • Cool basting sauce.
  • Preheat broiler.
  • Arrange salmon, skin sides down, on oiled rack of broiler pan and season with salt. Broil salmon about 4 inches from heat 4 minutes. Brush salmon with sauce and broil until just cooked through, about 6 minutes more.

Rachael Ray's recipe for Chipotle Cashew Chicken inspired me to create this dish. Her recipe calls for chipotle peppers in adobo sauce. Having none on hand, I combined some smoky and hot spices to improvise. The maple glaze gives the salmon just the right balance of sweet and spicy. It is an easy, quick recipe that could be served any night of the week or is elegant enough to be served at a dinner party. I oven-roasted mine, but it would also be excellent grilled.

4 salmon fillets, skinless
1/2 teaspoon garlic powder
1/4 teaspoon cumin
1/4 teaspoon chili powder
1/8 teaspoon cayenne pepper (or to taste)
1/4 teaspoon ginger, dried
1/8 teaspoon black pepper, freshly ground
1/4 teaspoon salt
2 tablespoons olive oil
1/2 cup maple syrup, real
2 tablespoons soy sauce
2 tablespoons lemon juice

Steps:

  • Preheat oven to 400 degrees.
  • Combine maple syrup, soy sauce and lemon juice in a small saucepan over medium-high heat. Bring to a boil; boil for 3-5 minutes or until slightly thickened. Set aside.
  • Combine garlic powder, cumin, chili powder, cayenne pepper, ginger, salt and black pepper in a small bowl. Gently pat seasoning onto both sides of salmon.
  • Roast salmon on a baking sheet coated with olive oil for 10 minutes. Drizzle a little glaze over each salmon filet and return to oven to roast for an additional 2 minutes (or until fish flakes easily when forked).
  • Serve with remaining warm maple glaze drizzled atop salmon.

2 tablespoons dijon-style mustard
2 teaspoons lemon juice
4 (6 ounce) salmon fillets
3/4 cup mayonnaise
1 cucumber, peeled, seeded and diced
1/4 cup red onion, diced
1 teaspoon dill weed
1 garlic clove, minced
1/4 teaspoon crushed red pepper flakes

Steps:

  • In small bowl, mix mustard and lemon juice. Spread salmons with half of mixture, cover and put in fridge.
  • Meanwhile, combine remaining ingredients with reserved mustard mixture and blend well. Cover and set aside.
  • Preheat broiler. Coat broiler pan with non stick spray. Arrange salmon on pan. Broil about 5" from heat for 7 minutes.
  • Turn fillets and broil another 7 minutes or til fish flakes with fork. Serve with prepared sauce.
