2 large plaice fillets, cut in half lengthways (500-600g total)
3 tablespoons sesame seeds, toasted
1 teaspoon cumin
1 teaspoon turmeric
1 teaspoon paprika
1 teaspoon shichimi-togarashi, or
1/2 teaspoon cayenne pepper
salt & freshly ground black pepper, to taste
1 tablespoon vegetable oil

Steps:

  • Mix the dry spices, salt and pepper on a plate. Lightly coat the fish fillets in the dry spice mixture.
  • Leave to sit for 5-10 minutes so the spices sink inches.
  • Heat a frying pan with oil and fry the fish for 1-1/2 minutes on each side.

4 white fleshed fish steaks (or a large fish, split, head removed), about 2 to 2 1/2 pounds, 1 1/2 inches thick
2 tablespoons coriander seed
4 cardomom seeds, peeled
1 small onion, coarsely chopped
1 clove garlic, coarsely chopped
1/2 teaspoon paprika
1/2 teaspoon aniseed
1 long green chili, seeded and coarsely chopped
1 cup lowfat yogurt
2 tablespoons fresh mint leaves
Freshly ground pepper to taste
Juice of 1 lemon
1 tablespoon safflower oil

Steps:

  • Wipe the fish steaks dry with paper towels.
  • Combine the remaining ingredients in the jar of a blender and puree until smooth. Coat the fish steaks with the mixture and leave for an hour.
  • Preheat broiler. Broil fish about 6 to 7 minutes on each side, basting with the marinade.

Indian spiced fish in creamy, yoghurt sauce image

Depending on how many chilies you use, this is a mildly spiced and lovely aromatic dish. I use small plaice fillets, rolled up and secured with a wooden skewer (remove them before serving) for this fish dish, but it is just as nice with other white fish. Serve with plain white rice, green peas and a cucumber salad.

1 lb white fish fillet, cut up in chunks
3 -4 tablespoons butter
4 medium onions, finely chopped
2 -3 green chilies, seeds removed and finely chopped
2 teaspoons fresh grated ginger
1 cup yoghurt
1/2 cup cream
1/2 teaspoon turmeric powder
1/2 teaspoon fenugreek seeds, ground (If you have whole seeds dry roast them for a few minutes in a frying pan and then grind them.)
1/2 teaspoon ground cardamom
chopped fresh coriander

Steps:

  • Heat the butter and fry the onions until limp, add the green chilies and the ginger, fry for a few minutes Mix yoghurt, cream, turmeric, fenugreek and the cardamom, add this to the frying pan and simmer for 10 to 15 minutes.
  • Add the fish to the sauce, simmer for another 10 minutes or until the fish is done Transfer to a serving dish and sprinkle the coriander over it.

You can use any good-quality white fish in this dish, but trout and flounder are great choices. You can also do most of the preparation ahead of time, by taking the marinated fish outside (use an ice chest for the fish if you are going somewhere like a park) and grill it. Fish cooks quickly on the grill so you should have a spicy meal in minutes.

4 lbs filleted red snapper
1 1/2 cups freshly squeezed lime juice
1 tablespoon curry powder
1 tablespoon ground cumin
1 tablespoon paprika
1 tablespoon allspice
1 tablespoon powdered ginger
1 tablespoon salt
1 tablespoon fresh ground black pepper
1 1/2 tablespoons cayenne pepper
virgin olive oil or cooking spray

Steps:

  • Soak the fish in lime juice for 30 minutes in a glass pan or non-corrosive dish.
  • Remove the fish, reserving the juice.
  • Combine the curry powder, cumin, paprika, allspice, ginger, salt, black pepper, and cayenne pepper in a small bowl and stir until well blended.
  • Place each fish fillet on an individual sheet of aluminum foil.
  • Coat each fillet with the spice mixture.
  • Sprinkle a tablespoon of the lime juice over each piece of fish.
  • Wrap each fillet tightly in the foil.
  • Remove the rack from the grill and lightly oil it with vegetable oil where the fish will placed.
  • Make a fire in the grill and heat the coals until they become somewhat white with ash.
  • Place the fish packets on the grill and cook for 5 minutes.
  • Turn the fish packets and cook for another 3 minutes.
  • Open a packet to see if the fish is done. The flesh should be opaque and the skin should pull away from the flesh; flakiness is usually a sign of overcooking.

2 teaspoons finely grated ginger
3 cloves garlic, crushed
1 teaspoon garam masala
1/2 teaspoon ground cumin
1/4 teaspoon ground turmeric
1/2 teaspoon mustard powder
1/4 to 1/2 teaspoon cayenne pepper
2 tablespoons lemon juice
Coarse salt and freshly ground pepper
5 tablespoons unsalted butter, melted
4 fish fillets or steaks (6 ounces each) such as swordfish, halibut, haddock, tuna, or salmon

Steps:

  • In a small bowl, combine ginger, garlic, garam masala, cumin, turmeric, mustard powder, cayenne pepper, lemon juice, 3/4 teaspoon salt, and a pinch of black pepper. Stir in about 1 tablespoon warm water to form a very thick paste.
  • Brush a baking sheet or broiler pan with 1 tablespoon butter; place fish on top. Cover fish on both sides with marinade; set aside for at least 15 minutes but no more than 30 minutes.
  • Preheat broiler. Drizzle 2 tablespoons butter over fish; broil until nicely browned, 5 to 6 minutes. Turn over steaks, and drizzle with remaining 2 tablespoons butter; broil until browned and cooked through. Serve immediately.
