Baked Halibut with Wine and Herbs image

Provided by Food Network Kitchen

Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 16

4 sprigs thyme
8 sprigs parsley
2 bay leaves, preferably fresh
8 cloves garlic, smashed
2 (1 pound) halibut steaks, 1 1/4-inch thick, from tail end of fish
Kosher salt and freshly ground black pepper
3/4 cup dry vermouth
4 tablespoons extra-virgin olive oil
2 teaspoons freshly squeezed lemon juice
12 cherry or pear, red and yellow tomatoes, for garnish
Optional serving suggestion: Tapenade, recipe follows
1/2 cup pitted and chopped kalamata olives
1 tablespoon extra-virgin olive oil
1 teaspoon fresh thyme leaves
1 teaspoon finely grated lemon zest
Freshly ground black pepper

Steps:

  • Preheat oven to 450 degrees F.
  • In a medium gratin dish or baking dish, make a bed of herbs with the thyme, parsley and bay leaves, scatter the garlic on top. Reserve 4 parsley sprigs, for garnish. Season both sides of the fish with salt and pepper and lay on top of the herbs. Add in the vermouth, and drizzle 2 tablespoons of the oil over the fish, cover loosely with foil. Bake until the fish is opaque, about 20 to 22 minutes.
  • Carefully, pour the pan juices into a small saucepan and set the fish aside. Keep the garlic and 4 thyme sprigs for garnish. Bring the sauce to a boil, over high heat, reduce by about 1/2, about 5 minutes. Whisk in the remaining 2 tablespoons olive oil and the lemon juice. Season with salt and pepper, to taste. Set aside. De-bone the fish; running a spoon handle along each side of the center bone, then lift the bone out. Peel side off and discard. Divide fish steaks in half crosswise, among 4 serving plates. Pour sauce over fish and serve with a dollop of tapenade, if using, on top and garnish with the thyme sprigs, garlic, and tomatoes.
  • To make the tapenade: Combine the olives, oil, thyme, and lemon zest, stir to combine. Season with pepper and set aside.

BROILED HALIBUT WITH LEMON AND HERBS

Broiled halibut with lemon and herbs image

Here's a simple, flavorful preparation that works well with almost any fish. If you can't find halibut at the market, seek out another flaky white fish like sea bass, flounder, or cod. Try this recipe with lime, orange, or even grapefruit in place of the lemon for a flavorful change of pace. You can use 1 1/2 teaspoons fresh, minced thyme instead of the parsley or basil. Seek out rarer herb varieties too. You can also find them at ethnic markets if not at traditional grocery stores, or you can grow potted heirloom herbs on your patio or deck. Some lovely options that work well with fish: sorrel, chervil, shiso leaf (perilla), Thai basil, burnet, or borage.

GRILLED HALIBUT WITH LEMON-HERB CRUST

Grilled Halibut With Lemon-Herb Crust image

I was looking for recipes to cook halibut seeing as I caught 2 from a deep sea fishing trip off of Vancouver Island. The first one I caught was 46 lb and the second one was 27 lb. I found this recipe from a Hellman's pamphlet. I made a couple of changes to suit our taste. We love doing halibut this way. The topping keeps the fish moist. We had our halibut cut into 1 lb. servings so we bbq it in one piece and then cut it into portions. The recipe says it serves 4 but my husband and I split it ourselves.

Provided by DeeDee

Categories     Halibut

Time 25m

Yield 4 serving(s)

Number Of Ingredients 11

1/2 cup breadcrumbs
2 tablespoons grated parmesan cheese
1 tablespoon lemon zest
salt & pepper
1 tablespoon butter or 1 tablespoon margarine, melted
2 tablespoons mayonnaise
1 tablespoon chopped fresh tarragon
1 chopped green onion
1 chopped plum tomato
1 lb halibut fillet, about 1/2 inch thick, skin left on
2 tablespoons lemon juice

Steps:

  • In a small bowl, combine bread crumbs, parmesan, lemon zest, salt and pepper.
  • Add melted butter and toss with a fork to form a crumbly mixture.
  • In another small bowl, combine mayonnaise, green onion and tomato. (The recipe says to add 1 tablespoons chopped fresh tarragon but I never have it so I omit it).
  • Arrange fish, skin side down, on a platter. Spread each fillet with mayonnaise mixture. Press crumbs mixture onto each fillet.
  • Preheat barbecue on high for 10 minutes. Reduce to medium-high and barbecue fish skin side down until fish flakes easily with a fork and topping is nicely brown - about 10-12 minutes.
  • Drizzle lemon juice over fillets and serve immediately.

BROILED HALIBUT STEAKS WITH CRANBERRY COMPOTE

Broiled Halibut Steaks With Cranberry Compote image

During the summer months when fresh berries and fresh halibut are available, try using blackberries or blueberries in place of the cranberries, adding sugar only if necessary. Boiled or steamed red new potatoes are an ideal accompaniment. From simplyseafood.com.

Provided by lazyme

Categories     Halibut

Time 40m

Yield 4 serving(s)

Number Of Ingredients 11

4 halibut steaks, 1-inch thick (6 to 8 oz each)
1 tablespoon vegetable oil
1 medium onion, finely chopped
1 (12 ounce) bag fresh cranberries
1 ripe but firm pear, peeled, cored, and chopped
3 tablespoons sugar (to taste)
1/4 cup water
1 pinch ground cloves
salt, to taste
fresh ground black pepper, to taste
1/2 cup walnut pieces, coarsely chopped

Steps:

  • Rinse the halibut steaks in cold water and pat dry with paper towels.
  • In a medium saucepan, heat the vegetable oil.
  • Add the onion and cook over moderately-high heat until the onions are soft and very lightly browned, about 5 minutes.
  • Add the cranberries, pear, sugar and water and stir to mix.
  • Heat the berries over moderate heat, cover and cook, stirring occasionally, until soft, about 15 minutes; do not boil or the berries will cook to a puree.
  • Stir in the cloves, salt and pepper and taste the compote for seasoning, adding more sugar if the cranberries are especially tart.
  • Preheat the broiler, set the oven rack about 4 inches from the heat and lightly oil the broiler pan rack.
  • Season each side of the halibut steaks with salt and pepper and set the steaks on the broiler rack.
  • Broil the halibut for 3 to 4 minutes, turn the steaks and broil on the other side until the fish is just opaque through, 4 to 5 minutes longer.
  • Meanwhile, reheat the compote and stir in the walnut pieces.
  • Transfer the halibut steaks to individual dinner plates, spoon the cranberry compote partly over and alongside the halibut and serve immediately.
  • Garnish with pear wedges or chopped walnuts if you like.
