BROILED BEEF RIBS WITH CHIPOTLE/HONEY SAUCE
These Beef ribs are the bomb. They are so juicy, tender and have a sweet & spicy honey and chipotle kick. Get the napkins ready; you cannot eat just one. I put them under the broiler, and broil 5 minutes on each side. Fast and easy dinner. Serve with a rice or potato salad; and you are out of the kitchen. Enjoy

- 1. Season your ribs liberly on all sides and set aside for a while
- 2. Next in the blender add everything for the sauce except the olive oil. Blend all the other ingredients to a smooth sauce. If somewhat pasty add a little water and blend again. Next in a saute pan heat the oil; when shimmering add the contents of the blender and with a wooden spoon saute and cook your sauce for about five minutes. Taste to see if seasoning is ok. Now baste your ribs with this sauce best to use a pastry brush and baste all over.
- 3. After putting chipotle sauce all over the ribs put under the broiler for about 5 minutes on each side. Ribs should be deep golden brown outside and medium rare inside. If you like your meat medium well then leave an additional 2 minutes in the broiler. Enjoy
- 4. I use the left over chipotle sauce to sauce the ribs up after broiling. I serve with a rice dish and a salad. P.S. You can adjust your sauce with more honey if you like a sweeter sauce. Enjoy
BBQ BEEF RIBS

- Prepare the grill for indirect heat using hickory and charcoal and heat to 250 degrees F.
- Place the ribs on a clean cutting board and pull off the membrane, the thin fatty skin that lines the underside of the ribs. Trim the ribs of excess fat and meat.
- For the rub: Whisk together 2 tablespoons salt, brown sugar, paprika, chile powder, cumin and pepper. Rub the beef ribs with the seasoning and place on a sheet tray, cover with plastic wrap, and if time, let marinate in the refrigerator for 8 hours or overnight.
- For the glaze: Add the maple syrup, apple juice, brown sugar, vinegar, mustard, chile powder, cayenne, salt and pepper to a medium saucepan and bring to a simmer. Cook until syrupy, about 8 minutes, stirring with a wooden spoon on occasion.
- Remove the ribs from the refrigerator. Place the ribs meatier-side-down on the grill away from the coals. Cook the beef 3 hours, adding more coals as needed. Turn and cook until the ribs "bend" and the meat easily separates from the bone using a fork, about 45 minutes more. Brush on the glaze to the ribs and cook for another 5 minutes. Remove and slice into individual ribs.
HONEY CHIPOTLE RIBS

- In a medium bowl, combine the ketchup, honey, sauce from the chipotles, chipotle chiles, garlic, olive oil, Dijon mustard, apple cider vinegar, Worcestershire, Maggi, black pepper and oregano. Mix well.
- Line a large roasting pan with parchment paper or aluminum foil. Pour some sauce on the bottom of the pan, put in the ribs and pour the remaining sauce on top. Cover with foil, sealing the entire top of the pan, and marinate for 30 minutes up to 24 hours. If marinating more than 30 minutes, keep the ribs refrigerated.
- When ready to cook the meat, remove it from the refrigerator. Preheat the oven to 350°F. Slip the pan with the ribs into the oven and roast for 1 1/2 hours. Take the ribs from the oven and carefully remove the aluminum foil, taking care not to be burned by the steam. Spoon the thickened sauce from the bottom of the pan on top of the ribs and place them back in the oven to roast another 20 to 30 minutes, or until they are beautifully browned and sticky. Remove from the oven, let rest, then slice into 2- to 3-bone pieces and pile on a platter.
- Alternatively, after you remove the foil, you can finish off the ribs on the grill at medium heat, for about 15 minutes.

SLOW-COOKER CHIPOTLE RIBS

- Season the ribs all over with salt and pepper, then brush with the vegetable oil. Combine the brown sugar, chile powder, cumin and oregano in a small bowl. Sprinkle the spice mixture all over the ribs and rub into the meat. Transfer the ribs to a 6- to 8-quart slow cooker. Cover and cook on low, 7 1/2 hours.
- Preheat the broiler and line a baking sheet with foil. Whisk the barbecue sauce with the agave in a bowl. SPICE RUBBED RIBS WITH CHIPOTLE-HONEY GLAZE

- Combine all spices in a small bowl.
- Brush both sides of the racks with oil and liberally rub with the spice mixture. Wrap in plastic and refrigerate for at least 12 hours. Remove the ribs from the refrigerator 45 minutes before smoking to allow them to come to room temperature.
- Stuff several sheets of newspaper in the bottom of a charcoal chimney. Fill the chimney to the top with charcoal briquettes. Remove top rack from the barbecue. Put the chimney on the lower barbecue rack. Light the newspaper and let the charcoal burn until the ash is gray, about 20 minutes.
- Open bottom barbecue vent. Turn out the hot charcoal onto 1 half of bottom rack. Using a metal spatula, spread charcoal to cover approximately 1/3 of rack and scatter half of the soaked wood chips over the charcoal. Put a loaf pan with water onto the coals.
- Put the top rack on the barbecue. Put the ribs, rub side down, on the grill over indirect heat. Coals should be off to 1 side. Slowly cook the ribs until tender, adding more charcoal if needed, about 1 1/2 hours.
- Chipotle Honey Glaze:
- Whisk all of the ingredients together in a small bowl.
- Begin brushing the glaze on the ribs during the last 30 minutes of cooking.
- Put the ribs on a baking sheet; brush with a little more of the glaze and let stand 10 minutes. Transfer the ribs to a cutting board and cut between the bones to separate the ribs. Arrange the ribs on a serving platter and serve.

- Combine first 7 ingredients in large deep saucepan. Bring to boil. Reduce heat to low and simmer until very thick, stirring occasionally, about 1 hour. Cool sauce. (Can be made 1 week ahead. Cover and refrigerate.)
- Place ribs in heavy large pot. Add celery, onion, carrots, bay leaves, peppercorns and 1 tablespoon salt. Add enough water to cover ribs and bring to boil. - 1. Cut ribs into quarter racks and trim all silver fat off.
- 2. Combine in large pan. Water, salt, pepper, garlic, and sliced onion.
- 3. Bring water to a boil.
- 4. Rinse ribs and add to boiling water.
