Steps:

  • Preheat oven to 450 degrees. On two rimmed baking sheets, toss broccoli with oil and season with salt and pepper. Arrange in a single layer and roast until broccoli is tender and browned in spots, 15 to 18 minutes. Toss broccoli with lemon zest and juice; sprinkle with almonds.

Steps:

  • Place broccoli florets in a large skillet over medium heat. Stir 2 teaspoons lemon juice into water in a small bowl and pour the mixture into the skillet. Cover and steam until broccoli is bright green and tender, 10 to 15 minutes.

  • Preheat oven to 500 degrees.

8 ounces broccolini, ends trimmed (about 1 bunch)
1 tablespoon extra-virgin olive oil
1 medium clove garlic, crushed
Zest and juice of 1/2 lemon
Pinch of flaky sea salt

Steps:

  • Heat a medium sauté pan or wok over medium heat.
  • Rinse the broccolini under cold water and add to the heated pan or wok (you want to hear a nice sizzle). Put the lid on and allow to cook and steam for a couple of minutes, tossing once or twice so it doesn't burn.
  • Take off the lid and drizzle over 1 tablespoon olive oil, place the lid back on and cook the broccolini for a couple of minutes, shaking the pan from time to time to make sure it doesn't burn, until it is bright green and crisp-tender.
  • Stir the crushed garlic, lemon zest and a pinch of sea salt into the broccolini, then cover and cook for a further minute.
  • Remove the lid, stir in the lemon juice and transfer to a serving plate.

1/2 stick unsalted butter (4 tablespoons or 2 ounces), brought to room temperature
1/3 cup sliced almonds, toasted
1/2 teaspoon finely minced lemon zest
1 teaspoon freshly squeezed lemon juice
1/2 teaspoon salt, plus additional for salting the cooking water
6 cups broccoli florets (about 1 head of broccoli)

Steps:

  • Toast the almonds. They may be toasted in the oven or on the stovetop. To toast in the oven, spread the nuts in a single layer on a baking sheet. Place in a 350F oven and toast for about 10 minutes, shaking the pan occasionally, until they are light golden brown. To toast on the stovetop, place the nuts in a dry saute pan large enough to accommodate them in a single layer. Place over medium heat and cook, stirring frequently, until they begin to color. Remove from the heat, then immediately remove from the hot pan to stop the browning process.
  • Mix together the butter, almonds, lemon zest, lemon juice, and 1/2 teaspoon of the salt in a medium mixing bowl; set aside until needed
  • Cut the broccoli into uniform pieces; trim off any tough ends.
  • Blanch the broccoli in boiling, salted water until crisp tender, about 2 minutes. The broccoli can also be cooked in the microwave. Place the florets in a large glass bowl or microwave-safe dish. Add 1/4 cup water and cover the bowl, either with plastic wrap or a tight fitting lid. Microwave on high for 5 minutes. Remove the bowl from the microwave and carefully remove the lid use extreme caution to avoid the steam.
  • Drain the broccoli and place in a mixing bowl.
  • Add the lemon almond butter and toss, melting the butter and thoroughly coating the broccoli.
  • Taste and correct the seasoning as needed with additional lemon juice and salt.

1 cut and blanched head of broccoli
100 g butter
1/2 teaspoon virgin olive oil
1 lemon, juice of
50 g roasted sliced almonds
flaked sea salt

Steps:

  • Whilst broccoli is still hot from blanching,heat the butter and extra virgin olive oil in a pan until a light brown colour.(Using olive oil inhibits the burning of butter).
  • Add roasted almond flakes and toss.
  • Place blanched broccoli in pan.
  • Pour over with juice of the lemon, and use seasonings to taste.
  • Serve.

A great basic recipe for a fast side dish - who doesn't like to dress up their veggies? I use regular olive oil as I haven't found the "O Olive Oil" called for in the recipe yet - but posted it as written. Also like to sprinkle with a little (light) bit of freshly shredded/grated Parmesan cheese for a nice twist. 1 teaspoon garlic, minced
1 tablespoon lemon olive oil (Suggested brand- O Olive Oil)
