Broccoli and Cheese image

A quick and easy side dish recipe that even your kids will devour!

Number Of Ingredients 6

4 cups broccoli florets ((about 1 head))
Salt and pepper, to taste
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
6 ounces American cheese (such as Velveeta), cut into small cubes or grated

Steps:

  • Place broccoli florets in a large microwave-safe dish. Add a splash of water. Cover and microwave on HIGH for 6-8 minutes, or just until crisp-tender. Drain; season with salt and pepper.
  • Meanwhile, melt butter in a saucepan over medium heat. Whisk in flour; cook for 1 minute. Gradually whisk in milk; cook, whisking constantly, until sauce thickens and bubbles. Reduce heat to low. Add cheese; cook, stirring until cheese melts and sauce is smooth.
  • Place steamed broccoli in a serving bowl and top with cheese sauce.

My boy Bryce loves broccoli with cheese sauce so much that there've been times I've actually feared he would turn into broccoli with cheese sauce.

Number Of Ingredients 11

2 heads Broccoli Cut Into Florets
2 c. Whole Milk
1 tbsp. Butter
1 clove Garlic (optional)
1/2 tsp. Seasoned Salt
1/2 tsp. Black Pepper, More To Taste
1/4 tsp. Salt
1/4 tsp. Chili Powder (more To Taste)
12 oz. weight Velveeta Cut Into Cubes
4 oz. weight Sharp Cheddar Cheese, Grated
4 oz. weight Monterey Jack Cheese, Grated

Steps:

  • Steam the broccoli florets for 3 to 4 minutes, or until slightly tender but not overly soft. To make the sauce, heat the butter and milk over medium-low heat until hot. Stir in the garlic (if using), seasoned salt, black pepper, salt, and chili powder. Add the Velveeta and stir it until it's melted and creamy. Stir in the cheddar and Monterey jack until melted. Taste and adjust seasonings. Serve ramekins of cheese sauce with warm broccoli florets.

Cauliflower and broccoli never had it so good! --- the amounts stated makes a huge amount if desired the ingredients may be reduced by half --- for cheese sauce with a kick add in some Tabasco or cayenne pepper, of coarse this cheese sauce may be used with just about anything!

Number Of Ingredients 8

2 tablespoons butter or 2 tablespoons margarine
2 tablespoons flour
2 cups half-and-half cream or 2 cups 18% table cream
3 cups cubed Velveeta cheese (cubed about 1 inch)
1/4 teaspoon salt (or to taste)
black pepper (or to taste) (optional)
1 teaspoon sugar
paprika, for topping

Steps:

  • Melt the butter in a small saucepan; remove from heat.
  • Blend in the flour until smooth using a wire whisk.
  • Return to heat; gradually whisk in the half and half cream; bring to a light boil, keep whisking until the mixture is smooth.
  • Add in the cubed Velveeta, and contine to mix with a spoon until cheese is melted.
  • Remove from heat.
  • Add in the sugar, salt and pepper; mix until combined.
  • Pour over the veggies JUST prior to serving.
  • Sprinkle with paprika.
  • Note: this recipe may be cut in half if desired.

6 tablespoons margarine

1/2 cup water
8 ounces velveeta cheese spread in a glass jars
2 (10 ounce) boxes frozen chopped spinach, drained and thawed
3 eggs, beaten well
10 saltine crackers, to crumble on top (as many as you like)
3 tablespoons butter

Steps:

  • Saute onion in margarine.
  • add flour and water and bring to a low boil.
  • add cheese.
  • combine sause with broccoli.
  • add eggs and stir to combine.
  • place in greased casserole dish and cover with crushed crackers.
  • dot with butter.
  • bake at 325 for 30+ min and check center.
