THE BEST TURKEY MEATLOAF
A slightly lighter version of the all-American classic, this satisfying meatloaf uses chicken broth and soaked panko to stay moist, and a mix of fresh herbs for flavor. It's the best turkey meatloaf you'll find!

- Preheat the oven to 425 degrees F. Line a baking sheet with foil.
- Heat the olive oil in a large skillet over medium heat. Add the onions, thyme, sage, 1 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring often, until the onions are softened, about 10 minutes. Add the garlic and cook 1 minute more. Add the tomato paste and cook for 1 minute, stirring to incorporate. Stir in the Worcestershire. Remove from the heat and allow to cool.
- Add the panko to a large mixing bowl and pour over the chicken broth so the breadcrumbs soak up the liquid. Add the turkey, eggs, 2 teaspoons salt, 1/2 teaspoon pepper and the cooled onion mixture and mix well with your hands until well combined. Form the mixture into a 10-by-5-inch loaf on the foil-lined baking sheet. Coat the top and sides with the ketchup.
- Put the meatloaf in the oven and reduce the oven temperature to 350 degrees F. Bake until a thermometer inserted in the center of the loaf reads 165 degrees F, 45 minutes to 1 hour. Let cool slightly before slicing and serving.

- Preheat oven to 350.
- Mix meat, pepper, egg, basil, half the bread crumbs, and 3/4 of the green onion together.
- Set aside Bring a pot of water to boil.
- Drop broccoli florets in and cook 3 to 4 minutes until crisp-tender.
- Drain thoroughly.
- Mix broccoli, cheese, salt, remaining bread crumbs, and remaining onions.
- Press half the meat mixture into 8x4 loaf pan forming an indentation in the center, leaving 1" thick sides up the side of the pan Fill hollow with broccoli mixture.
- Top with the remaining meat mixture and seal well around the edges, completely enclosing the broccoli mixture Mix melted butter with ketchup and brush over the top of the meat loaf.
- Bake approximately one hour or until the sides pull away from the pan a little Serve hot.

- Using a box grater, grate the onion into a large bowl. Add turkey, broccoli cole slaw, oats, garlic powder, salt, egg substitute, and 1/4 cup ketchup. Stir until thoroughly mixed.

- Preheat the oven to 350 degrees F.
- In a small bowl, stir together the oats and milk. Thinly slice 1/4 of the onion and set aside. Finely chop the remaining onion. In a large bowl, combine the turkey, oat mixture, chopped onion, bell pepper, eggs, Worcestershire sauce, ketchup, salt and a few grinds of pepper. Mix just until well combined.
- Transfer the mixture to a 9-by-13-inch baking dish and shape into a loaf about 5 inches wide and 2 1/2 inches high. Pour the tomato sauce over the meatloaf and sprinkle with the sliced onions. Bake for about 1 hour or until an instant-read thermometer registers 160 degrees.F.
- Remove from the oven and let rest for 10 to 15 minutes before slicing.

- Preheat the oven to 400 degrees F.
- Combine the bread and milk in a large bowl and soak for 10 minutes. Add the turkey, eggs, cheese, pancetta, onion, garlic, ketchup, parsley, oregano, breadcrumbs, salt and pepper. Mix well with your hands. Shape into an 8-inch-by-5-inch loaf and transfer to a rimmed baking sheet. Bake for 15 minutes. Reduce the heat to 325 degrees F and drizzle more ketchup all over the top of the loaf. Bake until a meat thermometer inserted into the center of the loaf reads 165 degrees F, about 45 minutes. Let the meat loaf rest for 10 minutes, then transfer to a platter and serve.
TURKEY MEATLOAF, TURKISH STYLE

- Heat oven to 375 degrees. Heat 2 tablespoons oil in a large skillet, add 2 tablespoons panko and sauté until panko is golden. Remove and reserve.
- Place walnuts, mint, parsley and basil in a food processor. Pulse until all are finely chopped. Remove and reserve. Without washing processor, turn on and drop garlic in through feed tube and process until minced. Stop, place onion and green pepper in processor and pulse until finely chopped.
- Add remaining oil to skillet and sauté garlic, onion and green pepper mixture over medium heat until soft but not brown. Remove from heat and stir in walnut mixture. Mix remaining panko with 1/2 cup water to soften and add. Place turkey in a large bowl, add contents of skillet and mix until well blended. Season with salt (at least 1 teaspoon) and pepper. Pack into a 9-by-5-by-3-inch loaf pan. Spread sautéed panko on top and bake 1 hour 20 minutes.
- Serve hot or at room temperature, with yogurt on the side, or chill and serve cold, in pita with yogurt and cucumbers.

TURKEY MEATLOAF
This is a recipe that helps explain the Twitter-era term "humblebrag." I made it for the celebrated writer and filmmaker Nora Ephron after a different recipe resulted in a disaster and I had to discard the result with only a few hours before my dinner with -- did I mention? -- Nora Ephron. It derives from a meatball dish once cooked by the chef Mark Ladner at the restaurant Lupa in Manhattan, and published as a recipe in Details magazine in the early years of the century. I scaled it up over the years, increasing some spices here and there, lessening others, until I had what I thought to be a pretty terrific meatloaf. But don't take my word for it. "This is remarkable," Ms. Ephron told me. I'm bragging about it still.

- Preheat the oven to 450 degrees. Combine 2/3 of the garlic, the rosemary, pepper flakes, bread crumbs, salt and pepper. Add the milk and mix. Add the turkey and sausage and mix once more to combine; don't overmix. Transfer onto a board and shape into a fine meatloaf, about 9 inches long and 4 inches wide.
- Place in a baking pan with high sides (a 9 x12 pan with 2-inch sides works well), drizzle with about 2 tablespoons of olive oil and bake for 25 minutes, turning halfway through to brown evenly. Remove from the oven and reduce the heat to 325 degrees.
- Meanwhile, in a medium saucepan over medium heat, fry the bacon in the remaining 2 tablespoons of oil until it starts to curl and its fat is rendered. Add the onions and remaining garlic, cooking until the onions are translucent, about 4 minutes. Add the tomatoes and wine and bring to a boil.
- Pour the sauce over the meatloaf, cover tightly with foil and bake until a meat thermometer inserted at the center reads 150 degrees, 20 to 30 minutes.
- Transfer the meatloaf to a platter and let stand, tented with foil, for 10 to 20 minutes; its internal temperature will rise to 160 to 165. Cut into thick slices, spoon tomato sauce over the top and scatter with torn mint leaves.

ROLLED BROCCOLI MEATLOAF

- Preheat oven to 350°F.
- Cook, steam broccoli, crumble up and set aside to cool.
- In a large mixing bowl combine ground beef, egg, soup mix and A1 sauce.
- On a large flat surface (bread board etc.) place the foil.
- Spread meatloaf mixture into a rectangle, about 1/2 inch thick.
- You want it as thin as possible because you are going to roll it like a jelly roll sprinkle broccoli then cheese over surface of meat.
- Roll up, starting at the small end of the loaf roll.
- It helps to roll with the foil under, it kinda holds it together as you roll.
- Pinch/close the small ends of the loaf.
- Bake about 1 hour.
- I like to pour more A1 over the top and right before pulling it out of the oven sprinkle a little more cheese on top.

- 1. Pre-heat the oven to 350 degrees. 2. In medium skillet cook the onions until translucent, then allow to cool. 3. Using your hands, in a large mixing bowl, combine the Ground Turkey, Onion, Egg, Ketchup, Mustard, Cracker Crumbs and a few good turns from the Pepper mill. 4. Place the Meatloaf seam side down in a large loaf pan that has been sprayed with cooking spray 6. Now we are going to roll the Meatloaf and seal the edges. Using the foil to assist you, start at one of the short ends and lift the foil while rolling. Don't roll it too tight or your filling will fall out.
