3 -5 garlic cloves, minced
2 onions, finely chopped
1 tablespoon olive oil
1/4 cup dry white wine or 1/4 cup water
1/8 teaspoon red pepper flakes
8 cups broccoli, chopped
5 cups water
1/4 teaspoon salt
1/2 lb pasta, short chunky (like small shells)
1 cup parmesan cheese, grated

Steps:

  • Bring a covered pot of water to a boil for cooking the pasta.
  • Meanwhile, combine the garlic, onions, and oil in a soup pot and sauté on medium heat for 8-10 minutes, stirring regularly, until the onions start to caramelize.
  • Add the wine or water and stir well.
  • Cook until the liquid evaporates, 4 to 5 minutes.
  • Add the red pepper flakes, broccoli, water, and salt.
  • Cover and cook for 7 to 9 minutes, or until the broccoli is tender.
  • When the pasta water boils, add the pasta and cook al dente, 8 to 10 minutes,
  • Drain, and set aside.
  • When the broccoli is tender, puree about 1/3 of the soup mixture in a blender until smooth and return it to the soup pot.
  • Stir in the cooked pasta.
  • Add a little water if you prefer a thinner soup.
  • Top with grated cheese and serve.

1 large bunch broccoli, cut into about 4 cups florets and 1 cup thinly sliced stems from close to the base
Kosher salt
Ice
1 pound spaghetti
1/2 cup extra-virgin olive oil
2 teaspoon red pepper flakes
6 cloves garlic, minced
Juice of 1/2 lemon
1 cup freshly grated Parmigiano-Reggiano

Steps:

  • Add the broccoli florets to a large pot of boiling, salted water and cook until al dente, 3 to 4 minutes. Prepare a bowl of ice water. Remove the florets from the pot, reserving the cooking water. Stop the cooking process by shocking them in the ice water. Remove the florets and pat dry.
  • Add the spaghetti in the same pot of water. Cook until al dente, about 8 minutes.
  • Meanwhile, add the oil, sliced broccoli stems, red pepper flakes and garlic to a large skillet over medium-low heat and sprinkle with salt. Cook until the garlic is lightly toasted and fragrant, about 8 minutes. Add the florets, toss to coat and warm through.
  • Drain the pasta in a colander set in the sink, and add the pasta to the skillet. Increase the heat to medium-high. Toss the ingredients and adjust the seasoning if needed. Transfer the pasta to a large serving bowl. Squeeze the lemon juice over the top and sprinkle with the Parmigiano-Reggiano. Serve.

This is a simple dish my grandmother made for me when I was a child. Now I make it for my daughter, Xea, and she loves it. As the broccoli takes on a toasty brown color, it develops a delicious nutty flavor that even picky kids will like.

Number Of Ingredients 7

1 cup olive oil, or more if needed
2 large heads broccoli, cut in 1-inch florets (about 6 cups)
1 tablespoon kosher salt, plus more for salting the pasta water
8 garlic cloves, roughly chopped
1 pound penne rigate (Penne rigate is my favorite because the ridges give it more texture.)
1/2 cup shredded or grated Parmigiano-Reggiano cheese
2 tablespoons chopped Italian flat-leaf parsley, for garnish

Steps:

  • Heat the water for your pasta while you prepare the broccoli.
  • In a shallow, 10-inch saute pot, heat the 1 cup olive oil over medium-high heat (see Cook's Note). Add the broccoli to the oil and season it with salt. Saute the broccoli for about 4 minutes, or until it takes on a toasty color. The broccoli will absorb a lot of the oil, so if you find your pot getting dry, just add a little more oil to it. Throw in the garlic and cook for about another minute, until it's slightly brown. Don't burn the garlic! Take the broccoli off the heat and set it aside.
  • Prepare the penne according to the package directions. Drain the pasta and toss it in the pot with the broccoli, garlic, and olive oil. If the mixture seems dry, add a little more oil.
  • Toss in the Parmigiano-Reggiano cheese, stir, and garnish with the parsley.

5 tablespoons butter, divided
1 onion, chopped
1 stalk celery, chopped
3 cups chicken broth
8 cups broccoli florets
3 tablespoons all-purpose flour
2 cups milk
ground black pepper to taste

Steps:

  • Melt 2 tablespoons butter in medium sized stock pot, and saute onion and celery until tender. Add broccoli and broth, cover and simmer for 10 minutes.
  • Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot.
  • In small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk. Stir until thick and bubbly, and add to soup. Season with pepper and serve.

~ My Creamy Broccoli/ Cheese/ Pasta Soup ~ image

A little restaurant we frequented when growing up made a soup very similar to this one. I made my own version of it and I think I've got it pretty darn close to theirs. We always liked how they added the pasta to it. It's the only place we ever had it served that way. My kids love it, and I hope you do too. Enjoy!

2 Tbsp butter, unsalted
1 large onion, chopped
1 large or 3 small stalks, celery, chopped
2 clove garlic, minced
1 - 1 1/2 lb fresh broccoli - cleaned and pulled apart into pieces
1 - 32 oz chicken stock
2 - 2 1/2 c shredded, cheddar or any melting cheese - add more or less if you like
2 c milk
4 1/2 Tbsp each - butter & flour
1 c heavy cream
3 - 4 oz broken spaghetti - or other small pasta - prepared according to directions, drain, rinse and set aside
1/2 tsp pepper
1 tsp salt or to taste

Steps:

  • 1. In a large dutch oven, melt 2 tablespoons butter, then add onion, garlic and celery. Saute over med heat until tender crisp. Pour in chicken stock and broccoli and bring to a boil, then turn down heat and simmer for 10 - 15 minutes or until broccoli is tender. Carefully pour mixture into a blender, food processor or use a hand held blender to rough puree. I don't make mine completely smooth as we like a little texture. Pour back into pot, and keep the mixture warming over low heat. In a medium saucepan, melt the 4 1/2 tablespoons of butter and add the flour, whisk and cook over medium heat for a minute or two. Whisk in the cream and milk. Cook and stir until thickened. Pour the milk mixture into the warm broccoli mixture and stir well. Add desired amount of cheese and stir until melted. Add the cooked pasta, salt and pepper. Continue cooking until all is heated through. Taste and see if you want more seasoning or cheese. If so add it. Serve in bowls with shredded cheese, croutons, etc etc. I added some cubed ham I had left from Easter. Delicious!

1 tbsp olive or rapeseed oil
320g carrots, finely diced
165g celery, finely diced
2 onions, finely chopped (320g)
2 large garlic cloves, finely grated
1⁄2 tsp dried oregano
2 tsp vegetable bouillon powder
400g can chopped tomatoes
2 tbsp tomato purée
100g wholemeal spaghetti
400g can cannellini beans
460g wild salmon fillets, skinned and cut into chunks
185g broccoli, cut into florets, stalks chopped
15g fresh basil, plus a few leaves
1 tbsp lemon juice, plus finely grated zest of 1⁄2 (optional)
1 tbsp olive or rapeseed oil

Steps:

  • Heat the oil in a large deep-sided frying pan and fry the carrots, celery and onions over a medium heat for 8-10 mins until softened. Tip in the garlic, oregano and bouillon, then pour in 1 litre boiling water and the chopped tomatoes. Stir in the tomato purée, then cover and simmer for 10 mins.
  • Break in the spaghetti (snap it into about three lengths), tip in the beans along with the water from the can, and simmer for 10 mins more.
  • Stir in the chunks of salmon, then reduce the heat to low, cover and simmer for 5 mins.
  • Meanwhile, for the pesto, cook the broccoli in boiling water for 5 mins, then cool quickly in a bowl of cold water. Drain well, then return to the bowl and use a hand blender to blitz it with the basil, lemon juice and olive oil to make a thick pesto.
  • Ladle half the spaghetti mixture into two bowls and top with half the pesto. Scatter with some of the lemon zest, if you like, and a few basil leaves before serving. Cover and chill the remaining portions to serve another day. Will keep chilled for up to three days, or frozen for up to a month. Defrost thoroughly before reheating until piping hot.
