Here's a perfect dish for a potluck or holiday buffet. It goes well with fish, poultry, pork or beef. Cheddar cheese can be substituted for Swiss. Often, I double the recipe to serve a crowd. -Jeanette Volker, Walton, Nebraska

4 tablespoons butter, divided
2 tablespoons all-purpose flour
1 teaspoon salt
1/8 teaspoon ground nutmeg
1/8 teaspoon pepper
2 cups 2% milk
1 package (8 ounces) cream cheese, cubed
2 cups shredded Swiss cheese
6 cups frozen shredded hash brown potatoes (about 20 ounces), thawed
1 package (16 ounces) frozen chopped broccoli, thawed
1/2 cup dry bread crumbs

Steps:

  • Preheat oven to 350°. In a large saucepan, melt 2 tablespoons butter. Stir in flour, salt, nutmeg and pepper until smooth; gradually add milk. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from heat. Add cheeses; stir until melted. Stir in potatoes., Spoon half of potato mixture into a greased 2-qt. baking dish. Top with broccoli and remaining potato mixture. Bake, covered, 35 minutes., Melt remaining butter; toss with bread crumbs. Sprinkle over casserole. Bake, covered, until heated through and topping is golden, 15-20 minutes.

1 package (30 ounces) frozen shredded hash brown potatoes
2 cups frozen broccoli florets
1-1/4 cups shredded sharp cheddar cheese, divided
2 green onions, chopped
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 cup whole milk
1 can (10-3/4 ounces) condensed cream of broccoli soup, undiluted
1/2 teaspoon salt
1/2 teaspoon Dijon mustard

Steps:

  • In a greased 4- or 5-qt. slow cooker, combine the hash browns, broccoli, 3/4 cup cheese and onions., In a small saucepan, melt butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 1 minute or until thickened. Stir in the soup, salt and mustard. Pour over potato mixture; stir to combine., Cover and cook on low for 4-5 hours or until potatoes are tender. Sprinkle with remaining cheese. Cover and cook 30 minutes longer or until cheese is melted.

For a change up to your normal breakfast schedule, try these baked broccoli hash browns! Crispy and perfect served with eggs and a splash of hot sauce or ketchup. Make them in advance! They reheat perfectly!

Number Of Ingredients 6

2 large heads of broccoli, about 12 ounces
2 medium yukon potatoes, about 1 pound
1 large egg
1 teaspoon paprika
1/2 teaspoon kosher salt
2 tablespoons olive oil

Steps:

  • Preheat oven to 375 degrees F.
  • Wash broccoli stalks well and trim off the bottom 1/2-inch of stem. Roughly chop the stems and florets. Wash potatoes and chop into 2-inch cubes.
  • Run the potatoes and broccoli pieces through a food processor with the grater attachment.
  • Transfer grated broccoli and potatoes to a large bowl and mix with eggs, spices, and olive oil.
  • Divide mixture into 8-10 even mounds and space them out on baking sheets lined with parchment papers. Use your hands to shape them into rectangles. Try to make sure they are an even thickness, but they don't have to be perfect.
  • Bake broccoli hash browns for 15 minutes at 375 degrees F. Then carefully flip with a sturdy spatula and bake for another 10 minutes (or longer if you want them really crispy).
  • Serve hash browns while warm with eggs and other classic breakfast sides.
  • These hash browns keep really well in the fridge for up to five days after they are baked. For best results, reheat them in a skillet with a little oil over medium high heat until crispy.

1 (10 ounce) bag chopped broccoli, thawed and drained well
2 (10 3/4 ounce) cans cheddar cheese soup
salt
pepper
1 small onion, chopped
1/4 cup butter
1 1/2 cups sour cream
2 cups sharp cheddar cheese, shredded
1 cup crushed Ritz cracker
1/4 cup melted butter

Steps:

  • Saute onions in 1/2 stick butter. Mix onions with broccoli, hash browns and soups, Salt and pepper to taste. Pour into a greased 9 x 13 pan. Top potatoes with the following, in order: sour cream, sharp cheddar cheese and Ritz cracker crumbs. Bake for 1 hour and 15 mins at 300 degrees.

2 cups cooked chopped broccoli
8 ounces fat-free ham, diced
1 cup shredded low-fat cheddar cheese
2 tablespoons butter, melted

1 (32 ounce) package frozen cubed hash brown potatoes, thawed
1 (16 ounce) carton light sour cream
1 (10 1/2 ounce) can reduced-fat cream of mushroom soup
cooking spray
1/2 teaspoon paprika

6 large eggs
1 cup whole milk or 1 cup half-and-half cream
1/4 teaspoon fresh ground black pepper
3/4 teaspoon ground nutmeg
1 cup grated sharp cheddar cheese
1/3 cup grated parmigiano-reggiano cheese
3 tablespoons olive oil
4 green onions, tops-too, chopped
1 (1 lb) bag frozen hash browns or 8 frozen hash brown patties, thawed
1 (10 ounce) box frozen broccoli, thawed and chopped

Steps:

  • Put oven rack in middle position and preheat oven to 375°F.
  • Whisk together eggs, milk, pepper, and nutmeg until combined; whisk in Cheddar and 3 tablespoons Parmesan.
  • Heat oil in a well-seasoned 10" cast-iron skillet over moderately high heat until hot but not smoking, then sauté green onions, stirring occasionally, until lightly browned, about 2 minutes.
  • Add hash browns and remaining and cook, stirring occasionally, 3 minutes.
