CHEDDAR BROCCOLI FRITTATA

6 eggs
1 can (10 3/4 ounces) Campbell's® Condensed Broccoli Cheese Soup (Regular or 98% Fat Free)
1/4 cup milk
1/8 teaspoon ground black pepper
1 tablespoon butter
2 cups sliced mushrooms (about 6 ounces)
1 large onion, chopped (about 1 cup)
1 small zucchini, sliced (about 1 cup)
1/4 cup shredded Cheddar cheese
1 green onion, chopped (about 2 tablespoons)

Steps:

  • Heat the butter in a 12-inch ovenproof nonstick skillet over medium heat. Add the mushrooms, onion and zucchini and cook until tender. Stir in the egg mixture. Reduce the heat to low. Cook for 5 minutes or until the eggs are set but still moist.
  • Heat the broiler. Sprinkle the cheese over the egg mixture. Broil the frittata with the top 4 inches from the heat for 2 minutes or until the top is golden brown. Sprinkle with the green onion.
  • Serving Suggestion: Serve with whole-grain rolls and a fresh fruit salad. For dessert serve lemon sorbet and meringue cookies.

This simple baked egg dish is the perfect way to use up leftover cooked veggies like broccoli. Cheddar is nice, but you can use whatever shredded cheese you have on hand.

1/4 cup milk
Kosher salt and freshly ground black pepper
2 cups chopped cooked broccoli
1 cup shredded Cheddar
1/4 teaspoon cayenne
1 tablespoon extra-virgin olive oil
Snipped fresh chives, for serving
Lettuce or arugula leaves and tomato wedges, for serving, optional

Steps:

  • Preheat the oven to 400 degrees F.
  • Whisk together the eggs, milk, 3/4 teaspoon salt and a few grinds of pepper in a large bowl. Stir in the broccoli, Cheddar and cayenne.
  • Heat the oil in a medium ovenproof nonstick skillet over medium-high heat. Add the egg mixture and cook until the edges start to set, about 2 minutes. Transfer to the oven and bake until the center is set, 15 to 20 minutes. Let rest for 5 minutes before sliding carefully onto a cutting board. Cut into wedges and transfer to serving plates. Sprinkle with chives. Serve with lettuce leaves and tomato wedges if using.

2 teaspoons olive oil
1 small red onion, cut in half and sliced into half-moons
2 cups frozen chopped broccoli, thawed
1/4 teaspoon salt
fresh ground black pepper, to taste
2 ounces extra-sharp cheddar cheese, shredded (1/2 cup)

Steps:

  • Preheat the broiler.
  • Combine the whole eggs, egg whites, and water in a medium bowl and whisk well.
  • In a medium ovenproof nonstick skillet, heat the oil over medium heat. Add the onion and cook, stirring until it begins to soften, about 3 minutes. Add the broccoli and cook for another 2 minutes. Season with salt and pepper. Pour the egg mixture over the vegetables in the skillet, covering them evenly. Reduce the heat to medium-low, cover, and let cook until the egg mixture has set around the edges of the pan but is still somewhat liquid in the middle, about 8 minutes. Sprinkle with the cheese.
  • Place the skillet under the broiler about 2 inches from the heat until the surface is set and golden brown, 1 to 2 minutes. Be careful not to overcook or the egg mixture will become tough.
  • Cut the frittata into 8 wedges and serve.

Also, thawed, diced hash brown potatoes speed up the cook time and the prep time, too. If you want more color on top of the frittata, shorten the baking time by a couple of minutes, and use the broiler to achieve the color you want. For breakfast or brunch, fresh fruit or baby tomatoes make a great side.

¼ cup heavy cream
1 teaspoon smoked paprika
salt and freshly ground black pepper to taste
2 tablespoons unsalted butter
½ cup chopped onion
1 ½ cups chopped fresh broccoli
1 cup frozen diced hash brown potatoes, thawed
1 cup shredded Cheddar cheese
4 slices bacon, cooked and crumbled

Steps:

  • Position a rack in the center of the oven and preheat the oven to 400 degrees F (200 degrees C).
  • Whisk eggs, cream, smoked paprika, salt, and pepper together in a bowl. Set aside.
  • Melt butter in a 12-inch nonstick, oven-proof skillet over medium-high heat until bubbly. Add chopped onion and cook until softened, 1 to 2 minutes. Add chopped broccoli and cook, stirring occasionally, about 2 minutes. Add potatoes and cook, stirring occasionally, about 2 minutes. Lightly season vegetables with additional salt and pepper.

Steps:

  • Whisk together the eggs, egg whites and broccoli.

  • You will need an 8 or 9" non-stick ovenproof pan. Mix all the ingredients EXCEPT the BUTTER together for the Frittata in a bowl.
  • Heat the butter in your pan over medium high heat. When it has melted, coat the interior of the pan with the butter. When the butter is bubbling, add in the Frittata mixture. Cook until the edges start to bubble and then move to the oven.
  • Cook in the oven for 15 minutes. The eggs should be set. Turn the oven to broil and cook for another 3-4 minutes or until the top is golden brown. Remove from the oven and carefully invert the pan onto a plate. Cut and enjoy hot, lukewarm or cold!
