2 tablespoons butter
1/4 cup chopped onion
1/2 teaspoon salt
1-1/2 tablespoons all-purpose flour
1 clove garlic, crushed
1 cup chicken broth or vegetable broth
1-1/3 cups shredded reduced fat cheddar cheese, divided
1 package of Green Giant® Simply Steam™ Broccoli Florets or Green Giant® Steamers Chopped Broccoli 12 oz. Bag cooked according to package directions

Steps:

  • Preheat oven to 400°F. Melt butter in medium saucepot over medium heat. Add onion and salt and cook 3 minutes or until softened. Stir in flour and garlic and cook 2 minutes, stirring constantly. Gradually whisk in broth until smooth. Bring to a boil over medium heat, stirring occasionally. Reduce heat to medium-low and simmer 3 minutes or until thickened. Stir in 1 cup cheese until melted and smooth. Stir broccoli into sauce and cook 1 minute. Turn broccoli mixture into 1-1/2 quart baking dish and top with remaining cheese. Cover and bake 10 minutes. Remove cover and bake 5 minutes or until bubbling and cheese is melted.

This is a great casserole that I threw together one day when a friend requested Broccoli au Gratin for her birthday dinner. This is a great idea for those who aren't big fans of bread crumbs. Also, the eggs can be taken out for a great sauce and using skim milk and fat-free cheese works well, too. It's basically a great recipe that can be easily altered according to taste. Enjoy!

8 cups fresh broccoli
½ cup butter
2 tablespoons all-purpose flour
1 small onion, chopped
1 ¼ cups milk
salt and pepper to taste
4 cups shredded Swiss cheese
2 eggs, beaten

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.
  • Melt butter in a medium saucepan over medium heat and add flour; cook until bubbly. Stir in onion and gradually add milk, stirring well. Bring to a boil and cook for 1 minute. Remove from heat and season with salt and pepper. Stir in cheese and eggs; mix well. Combine mixture with broccoli and transfer to a 9 x 13 inch casserole dish.
  • Bake in preheated oven for 30 minutes.

Super comfort food, but kinda healthy because it has broccoli in it, right? My grandmother passed this chicken and Cheddar recipe down and it is a family favorite. After the first time I made it, I went on a casserole kick and made it twice a week for 3 months straight! I typically serve this over rice, but it is just as great by itself. Last time I didn't make rice, but served it with bread.

3 cups cooked shredded chicken
2 cups cooked chopped broccoli
2 (10.5 ounce) cans condensed cream of chicken soup
½ cup sour cream
1 pinch ground black pepper to taste
2 ½ cups shredded Cheddar cheese
1 ½ cups bread crumbs
¼ cup salted butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine chicken, broccoli, condensed soup, sour cream, and pepper in a bowl. Mix in 1 cup Cheddar cheese. Pour into a 2-quart casserole dish and top with remaining Cheddar cheese.

1 cup finely chopped onion
3/4 cup butter
12 eggs
2 cups heavy whipping cream

Steps:

  • In large skillet, melt butter over medium heat.
  • Saute broccoli and onion for 5 minutes, or until crisp tender.
  • In a bowl, add eggs, cream, and 1 3/4 cups of the cheddar cheese, and mix well.

1 cup skim milk
