CHEESY CAULIFLOWER BROCCOLI TOTS
Steps:
- Preheat oven to 400ºF/200ºC.
- Bring a pot of well salted water to the boil, add the cauliflower and broccoli and cook for 10 minutes - or until tender.
- Use a slotted spoon to scoop the florets into a food processor and blitz until fine. You can leave it chunkier if you desire.
- Use a clean tea towel or cheese cloth to squeeze the extra moisture from the cauliflower and broccoli.
- Transfer the cauliflower and broccoli to a mixing bowl, and add the cheese, salt and pepper. Take a small bite and add more salt and pepper if necessary.
- Lastly, stir in the egg and then form into tots.
- Place the tots on a prepared baking sheet and slide into the oven for approximately 25 minutes. Until they start to brown.

- Preheat oven to 400-degrees Fahrenheit
- In a food processor, pulse the cooked and cooled vegetables along with the salt and pepper until creamy, but still slightly chunky.
- Remove the vegetables to a bowl and mix with ¼ cup Parmesan cheese, egg and flour.
- Place the panko bread crumbs into a shallow dish.
- Use two tablespoons or a small ice cream scoop to drop large dollops of the vegetable mix into the dish of panko crumbs.
- Gently roll the vegetable tots in the panko crumbs until thoroughly coated. Once coated re-roll the tots into uniform balls.
- Place the coated tots on a baking sheet that has been liberally sprayed with olive oil spray. Lightly spray the tots with a coating of olive oil spray.
- Bake the broccoli cauliflower tots in a preheated 400-degree Fahrenheit oven for 15 minutes.
- Remove the baking sheet and turn the tots over. Return the vegetable tots to the oven for an additional 15 minutes or until browned and crispy.
- Serve hot with your favorite dipping sauce or dressing.

Steps:
- Heat the butter and 2 tablespoons of the oil in a large skillet over medium-high heat.
- Add the broccoli and cauliflower in a single layer, sprinkle with 1/2 teaspoon salt and cook, undisturbed, until the undersides are browned in spots, 3 to 4 minutes. Continue to cook, stirring every 1 to 2 minutes, until browned all over and crispy and tender, about 5 minutes more.
- Reduce the heat to medium and push the vegetables to one side of the skillet. Add the garlic and remaining 1 tablespoon oil to the empty side and cook, stirring, about 30 seconds. Mix the garlic into the vegetables and add a large splash (about 3 tablespoons) of water. Squeeze in half a lemon, if using. Cook, stirring, until the juices have evaporated.

- Preheat oven to 400°F (200°C).
- On a cutting board, grate the zucchini, sweet potato, carrot, and broccoli with a coarse cheese grater.
- Transfer the grated vegetables to a medium bowl and season with ½ teaspoon of salt. Mix until well incorporated.
- Let the vegetables sit for 20 minutes until the salt has drawn out some of the moisture.
- Transfer the grated veggies into a kitchen towel and twist to strain as much liquid as you can.
- Place the grated veggies back into a bowl and mix with the Parmesan, panko, pepper, remaining salt, onion powder, garlic powder, olive oil, and egg. Mix until well combined.
- Form the mixture into 20-25 even-sized tots and transfer to a parchment paper-lined baking sheet.
- Bake for 20-30 minutes or until tots are golden brown, flipping each halfway through.
- Serve with your choice of dipping sauce.
