GARLIC OIL SAUTEED PASTA WITH BROCCOLI



Garlic Oil Sauteed Pasta with Broccoli image

1/3 cup extra-virgin olive oil
2 cloves garlic, smashed
1/4 teaspoon red pepper flakes
1/4 head broccoli, sliced into very thin florets, stalk peeled and cut into matchsticks
Kosher salt and freshly ground black pepper
2 tablespoons red wine vinegar
Few tablespoons water or pasta cooking water, if needed
2 cups penne pasta, cooked al dente
Parmesan cheese, for garnish

Steps:

  • In a large saute pan, heat the olive oil, garlic, and pepper flakes over medium heat until fragrant. Once the garlic has turned golden in color, remove it from the pan. You are left with garlic-infused oil in the pan. Add the broccoli to the pan.
  • Cook's Note: Be sure the broccoli is completely dry before tossing it into the pan.
  • Toss the broccoli to coat with the oil. Season with salt and pepper and saute over medium heat until the broccoli barely loses some of its crunch, about 5 minutes. Turn the heat up to high and deglaze the pan with the red wine vinegar. Add a few tablespoons of water, if needed.
  • Cook's Note: Use pasta water if the pasta was made fresh.
  • Add in the pasta and toss to coat with the oil. Top with Parmesan cheese for serving.

grated romano cheese or parmesan cheese

Steps:

  • Cut florets and parts of broccoli stems into bite-size pieces.
  • In a large skillet, saute broccoli with garlic, oil, butter, salt, pepper, and cayenne over medium heat for about 10 minutes or until just tender, stirring frequently.
  • Place hot pasta in a serving dish; top with broccoli mixture.
  • Sprinkle with cheese.

10 ounces elbow macaroni
2 1/2 cups broccoli florets, cut into 1-inch pieces
1 boneless, skinless chicken breast, cut into1-inch pieces (about 8 ounces)
2 tablespoons unsalted butter
2 cups milk
2 tablespoons all-purpose flour
1 teaspoon dry mustard
1 teaspoon Worcestershire sauce
1 cup shredded sharp Cheddar
1/4 cup grated Pecorino-Romano
1/4 cup grated Parmesan

Steps:

  • Bring a large pot of salted water to a boil. Add the macaroni and broccoli and cook for 5 minutes; the pasta will only be about halfway cooked. Reserve 1 cup of the cooking water, then drain the pasta and broccoli and return them to the pot.
  • Meanwhile, sprinkle the chicken with salt and pepper. Heat 1 tablespoon of the butter in a large skillet over medium-high heat. Add the chicken and cook, stirring occasionally, until browned and cooked through, 5 to 7 minutes; set aside.
  • Put the pot with the pasta and broccoli over low heat. Stir in the milk, flour, mustard, Worcestershire, 1 teaspoon salt and the remaining 1 tablespoon butter. Bring to a simmer and cook, stirring, until the sauce thickens and the pasta is al dente, 3 to 5 minutes. Turn off the heat, add the Cheddar, Pecorino-Romano, Parmesan, cooked chicken and 1/4 cup of the reserved cooking water and stir until the cheese melts. Gradually add the remaining cooking water as needed until the pasta is creamy and saucy. Serve hot.

Steps:

  • Melt butter; stir in flour salt and pepper.
  • Add milk gradually, stirring constantly.
  • Cook until thickened, stirring often.
  • Remove from heat and stir in cheese and mayonnaise.
  • Cook macaroni in boiling, salted water according to package directions.
  • Cook just until tender; do not overcook.
  • Drain, rinse, and drain again.
  • Place a layer of macaroni, then a layer of chopped cooked broccoli in greased 1-1/2 quart casserole.
  • Pour some of the sauce over broccoli.
  • Repeat layers, ending with sauce.
  • Bake at 350 degrees for about 20 minutes, or until thoroughly heated.

Bring to boil, stirring constantly; cook and stir 3 to 5 min. or until thickened. Add 1 cup cheddar and Parmesan; cook and stir 2 to 3 min. or until cheddar is melted.

1 pound orecchiette
1 large head of broccoli
6 cloves garlic
1/3 cup olive oil
1/4 cup extra virgin olive oil
1/2 cup pecorino cheese
1/2 tsp chili flakes
2 cups pasta water

Steps:

  • Bring a large pot of salted (2 Tbsp kosher salt per gallon) water to boil. Remove and discard lower stems from broccoli and break into bite size florets. Add florets to boiling water and cook for 8 minutes until tender. When finished, set cooked broccoli aside making sure to not drain boiling water.
  • Cook pasta in boiling water to al dente. While pasta cooks, in a large pan saute 6 cloves of chopped garlic in a 1/3 cup of olive oil over medium-low heat until golden. After golden (about 2-3 minutes) add 1/2 tsp of crushed red pepper flakes to oil.
  • Add the precooked broccoli to the pan and continue to saute for 2-3 more minutes to further soften broccoli. Before draining pasta reserve at least 2 cups of pasta water.
  • Add 1 cup of pasta water to the pan to make the broccoli sauce and cook for 1 minute. Add the pasta into the pan along with a 1/2 cup of grated pecorino. Stir to thoroughly combine and continue to cook for 1 more minute.
  • Taste test the pasta and adjust salt and pepper if necessary. Also, add more pasta water if required to achieve a loose consistency. Remove pan from heat and drizzle the 1/4 cup of extra virgin olive onto the pasta. Serve with more pecorino cheese, crushed red pepper, and extra virgin olive oil. Enjoy!

Two large heads of broccoli
1 c of shredded cheddar cheese
⅓ c of shredded parmesan cheese
Two minced garlic cloves
2 tbsp of freshly squeezed lemon juice
2 tsp of fresh lemon zest
1 tsp of mixed herbs
½ tsp of red pepper flakes
1 tsp of sugar
Salt and pepper to taste
Olive oil
Extra parmesan cheese to serve

Steps:

  • First, you must bring a large pot of lightly salted water to the boil, then start to cook the pasta in the pot as per the instructions on the packet (remember, fresh pasta always takes far less time to cook than dried pasta!).
  • Use a sharp knife to chop your broccoli heads into much smaller pieces.
  • Next, mix the sauce for your broccoli noodles together in a mixing bowl, or shake them together in a jar.
  • Two in the recipe minutes before the pasta has cooked, add the chopped heads of broccoli to the pot and allow to cook.
  • Once cooked, remove 1 c of pasta water from the pot and add this to the sauce. Mix thoroughly.
  • Drain the broccoli and pasta, then mix together with the broccoli pasta sauce before finally stirring through the shredded cheddar cheese.
  • Season your creamy broccoli pasta with salt, pepper, and added red pepper flakes to taste.
  • Serve your broccoli cheese pasta fresh and hot with added parmesan!

This salad was a big hit at a church function I attended. The lady who brought it told me basically what she had done, and I quickly bought the ingredients and fixed the salad myself the next day so I could jot it down and share with you all. Cook time is for cooking the pasta - also allow cooling time for the pasta (at least 30 minutes). Once assembled, the salad neds to chill as well - at least 1 hour before serving.

1 cup olive oil, or more if needed
2 large heads broccoli, cut in 1-inch florets (about 6 cups)
1 tablespoon kosher salt, plus more for salting the pasta water

1 pound penne rigate (Penne rigate is my favorite because the ridges give it more texture.)
1/2 cup shredded or grated Parmigiano-Reggiano cheese
2 tablespoons chopped Italian flat-leaf parsley, for garnish

Steps:

  • Heat the water for your pasta while you prepare the broccoli.
  • In a shallow, 10-inch saute pot, heat the 1 cup olive oil over medium-high heat (see Cook's Note). Add the broccoli to the oil and season it with salt. Saute the broccoli for about 4 minutes, or until it takes on a toasty color. The broccoli will absorb a lot of the oil, so if you find your pot getting dry, just add a little more oil to it. Throw in the garlic and cook for about another minute, until it's slightly brown. Don't burn the garlic! Take the broccoli off the heat and set it aside.

Steps:

  • Heat the oven to 200°C, gas 6. Cook the macaroni in a large pan of salted water for 5 mins. Cut the broccoli into small florets add to the pan and cook for a further 3 mins until the macaroni and broccoli are just tender. Drain, and turn into the ovenproof dish.
  • To make the sauce: melt the butter in a pan, stir in the flour and cook, stirring over a medium heat for 1 min. Remove from the heat and gradually add the milk, stirring well after each addition. Return to the heat and bring to the boil, and cook, stirring, until the sauce thickens.
  • Remove from the heat, add the mustard if using and season with salt and pepper. Add three quarters of the cheese, stir until the cheese has melted.
  • Add the sweetcorn and pour into the dish, fork the sauce through the pasta and broccoli. Scatter the remaining cheese on top, then bake in the oven for 20 mins until the dish is bubbling and the top is golden.

1 bunch broccoli (about 1 pound), trimmed and cut into large florets
4 tablespoons (1/2 stick) unsalted butter
Kosher salt and freshly ground pepper
12 ounces spaghetti
2 cloves garlic, minced
2 tablespoons olive oil
1/2 cup grated Parmesan cheese

Steps:

  • Set up a steamer basket in a 3-quart saucepan. Add enough water to come up to the bottom of the basket. Bring the water to a boil. Add the broccoli florets to the basket, cover and cook until the broccoli is soft and nearly falling apart but still holds its shape, about 15 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Transfer the broccoli to a large bowl. Add 2 tablespoons butter and gently toss; season with salt and pepper, then mash.
  • Cook the spaghetti according to label directions, then reserve 1 cup cooking water and drain.
  • In a large skillet, cook the garlic in the remaining 2 tablespoons butter and the olive oil for 30 seconds. Add the mashed broccoli, the Parmesan and half of the reserved cooking water. Cook, stirring, until saucy. Season with salt and pepper. Toss with the spaghetti, adding more cooking water as needed.

2 bunch broccoli
1 lb(s) (500 g) pasta shells, or other dried pasta shapes
2 Tbsp (25 mL) salt
1 Tbsp (15 mL) olive oil
2 clove garlic, minced
¼ tsp (1 mL) hot pepper flakes
½ cup (125 mL) ricotta or Parmesan cheese

Steps:

  • Bring a large pot of water to a boil. Add salt. Meanwhile, separate broccoli florets from the stalks (or peel the broccoli stems and cut into small cubes.) Add the broccoli to the boiling water and cook until tender but still bright green, about 5 minutes. Remove broccoli with slotted spoon.
  • Add pasta and cook to desired doneness, 8-12 minutes(check package guidelines). Drain reserving 1 cup (250 mL) of the pasta water.
  • In a small skillet, heat olive oil over medium heat and add garlic and hot pepper flakes. Saute until garlic is fragrant, about 1 minute. Add drained broccoli. Mix in ricotta cheese and pasta, until sauce is creamy. If sauce is too dry, add as much pasta water as desired to get a creamy consistency.

1 teaspoon dry mustard

2 1/2 cups milk
3 cups (12 ounces) shredded sharp Cheddar cheese
Salt (to taste)

Steps:

  • Gather the ingredients.
  • Cook macaroni in a saucepan of boiling salted water, following package directions, adding chopped broccoli about 1 minute before macaroni is done. Drain in a colander.
  • In the same saucepan over medium heat, melt the butter. Stir in the mustard powder, pepper, and flour and continue cooking, stirring, for 2 minutes.
  • Gradually whisk the milk into the flour mixture. Cook, stirring, until sauce is thickened and bubbling.
  • Add cheese and continue stirring until cheese has melted. Taste and add salt, as needed.
  • Add drained macaroni and broccoli and stir to combine thoroughly.
  • Transfer to a serving dish or individual bowls.

4 tablespoons salted butter, plus more for the baking dish
1 pound elbow macaroni
1 stalk celery, finely diced
1/2 head broccoli, stalks largely removed, broken into very small florets
1/2 medium onion, finely diced
2 tablespoons all-purpose flour
1 teaspoon dry mustard
2 cups whole milk
1 cup chicken or vegetable broth
1/4 cup half-and-half
2 1/2 cups grated sharp Cheddar
1 cup cubed processed cheese, such as Velveeta
1 cup grated Parmesan
Kosher salt and freshly ground black pepper
1/2 cup breadcrumbs

Steps:

  • Preheat the oven to 350 degrees F. Butter a baking dish.
  • Bring a pot of water to a boil. Cook the macaroni according to the package instructions until still firm. Drain and set aside.
  • Meanwhile, melt the butter in a pot over medium heat. Add the celery, broccoli and onion and cook, stirring, until the vegetables soften, 4 to 5 minutes. Use a wooden spoon to mash some of the broccoli. Sprinkle on the flour and dry mustard and stir to coat the vegetables. Pour in the milk, broth and half-and-half and cook, stirring, to allow it to warm up.
  • Add the Cheddar, processed cheese, 1/2 cup of the Parmesan and some salt and pepper and stir to melt the cheese. Add the macaroni and stir. Taste and check for seasoning. Pour into the prepared baking dish. Combine the breadcrumbs and remaining 1/2 cup Parmesan in a small bowl and sprinkle over the dish. Bake until bubbly, about 25 minutes.
