4 cups fresh broccoli florets (1 medium bunch)
3/4 cup golden raisins
1 small red onion, chopped
1/2 cup Miracle Whip
1 tablespoon white vinegar
2 teaspoons sugar
3 bacon strips, cooked and crumbled

Steps:

  • In a large bowl, combine the broccoli, raisins and onion. In a small bowl, combine the Miracle Whip, vinegar and sugar. Pour over broccoli mixture; toss to coat. Sprinkle with bacon. Refrigerate for at least 2 hours before serving.

Broccoli Craisin Salad image

A simple, healthy, delicious make-ahead side dish with broccoli, dried cranberries, sunflower seeds, scallions and dressing. Vegetarian or vegan.

3 lbs broccoli ((about 4 heads))
1/2 cup sunflower seeds
1/2 cup craisins
8 scallions chopped into small rings ((green part only))
1/2 cup mayonnaise ((use a vegan mayonnaise to make recipe vegan))
1 1/2 tbsp white balsamic vinegar ((gluten free note below))
1 tbsp sugar ((you may substitute any preferred sweetener, less or more to taste))

Steps:

  • Remove stems from the broccoli heads and chop them into smaller bite-size florets. Pour 1/2 cup of water into a medium pot and bring to a boil. Add broccoli pieces to the pot and cover. Steam the broccoli for 4-5 minutes until bright green and tender-crisp.
  • Remove broccoli pieces from the pot with a slotted spoon and place them on two layers of paper towel, allow them to drain and cool completely.
  • Toast the sunflower seeds in a skillet over medium heat until lightly browned.
  • Place the broccoli florets, craisins, scallions, and toasted sunflower seeds in a large mixing bowl.
  • In a small mixing bowl, whisk together the mayonnaise, vinegar, and sugar. Add sugar (or preferred sweetener) last, adding a teaspoon at a time until the dressing is sweet enough for your taste.
  • Pour dressing over the broccoli mixture. Toss to coat the broccoli evenly with the dressing and thoroughly mix all ingredients.
  • Refrigerate for at least 2 hours to allow flavors to marinate. Flavors improve with time. Serve chilled.

1/2 cup red onion, chopped
1 cup sharp cheddar cheese, shredded
1 cup cooked bacon, crumbled
1 cup sunflower seeds
3/4 cup dried sweetened cranberries
1 cup salad dressing or 1 cup mayonnaise
1/4 cup sugar
2 tablespoons red wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Combine all salad ingredients in a large mixing bowl and mix well.
  • Combine dressing ingredients in a small mixing bowl.
  • Mix until thoroughly combined using a fork or wire whisk.
  • Add dressing to salad and mix well.
  • Refrigerate 1 hour.

Not Your Average Broccoli and Raisin Salad image

You know the one I am referring to... the broccoli salad with eight slices of bacon... it's not that one. If you don't want to stray too far from tradition, add a couple slices of chopped crisply cooked bacon or tempeh bacon. This version is not as syrupy sweet either. I've substituted broccolini and broccoflower in this recipe, too. From All-American Vegetarian cookbook.

1 lb broccoli
2 medium carrots, peeled and grated
1 small red onion, finely diced
1/2 cup raisins
1/3 cup roasted sunflower seeds or 1/3 cup slivered almonds, toasted
5 tablespoons freshly squeezed orange juice
1/2 teaspoon orange zest, finely minced
5 tablespoons tofu mayonnaise or 5 tablespoons sour cream
1 teaspoon raspberry vinegar (optional)
2 teaspoons sugar, to taste
1/4 teaspoon salt
white pepper

Steps:

  • Toast the sunflower seeds. Let cool.
  • Trim bottom 2 inches off the end of the broccoli stalks.
  • In large pot of boiling water, lighlty blanch the broccoli for about 3-4 minutes. Immediately rinse with cold water and drain. Set aside.
  • In small non-reactive bowl combine all the dressing ingredients except for the vinegar and blend well with hand-held immersion blender. Taste and adjust dressing. If too sweet start by adding 1/4 teaspoon but up to 1 teaspoon of the raspberry vinegar. Season with salt and pepper.
  • Once cool enough to handle, dice the broccoli stems and chop up the florets into bite-size pieces. Place the cut up broccoli into a large salad bowl with the carrots, onion, raisins, and sunflower seeds.
  • Keep salad refrigerated until time to serve. Serve chilled.

1/4 cup PLANTERS Sunflower Kernels, toasted

I found some recipes that were close, but I couldn't find the *exact* recipe that I usually make (ever since I hounded it out of a co-worker after a potluck years ago, even before I had any desire or ability to cook much at all). This salad is always good with almost anything, except maybe pancakes... nah, even then I bet the bacon would make it would be good ;) The whole Craisins thing make this a natural for the holidays that involve some form of cranberries. That said, it's great in the summer, too.

5 cups broccoli florets, cut into 1/2 inch pieces
1/2 cup chopped red onion
1 cup shredded sharp cheddar cheese
8 slices bacon, cooked and crumbled, see note
1 cup sunflower seeds
1 cup craisins dried sweetened cranberries
1 cup mayonnaise
1/4 cup sugar
2 tablespoons red wine vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
