½ cup butter
1 onion, chopped
1 (16 ounce) package frozen chopped broccoli
4 (14.5 ounce) cans chicken broth
1 (1 pound) loaf processed cheese food, cubed
2 cups milk
1 tablespoon garlic powder
⅔ cup cornstarch
1 cup water

Steps:

  • In a stockpot, melt butter over medium heat. Cook onion in butter until softened. Stir in broccoli, and cover with chicken broth. Simmer until broccoli is tender, 10 to 15 minutes.
  • Reduce heat, and stir in cheese cubes until melted. Mix in milk and garlic powder.
  • In a small bowl, stir cornstarch into water until dissolved. Stir into soup; cook, stirring frequently, until thick.

1 onion (finely chopped)
1 kg (2lbs) broccoli (stems finely chopped, florets )
3 garlic cloves (minced )
2 tsp oregano
2 tsp thyme
1 tsp paprika
2 tbsp flour
3 cups milk
3 cups chicken / vegetable stock
salt and pepper (to taste )
1-2 tsp lemon juice
½ cup Parmesan cheese (grated )
1½ cups cheddar cheese (grated )

Steps:

  • Saute the onions and broccoli stems until soft and fragrant.
  • Add the garlic, oregano, thyme and paprika and cook for a minute.
  • Add the flour and cook for a minute. Pour in the milk and stock and allow to simmer for 5 minutes.
  • Add the broccoli florets and cook for another 10 minutes until the broccoli is cooked.
  • Season with salt, pepper and lemon juice. Remove the soup from the heat, stir in the cheddar cheese. Adjust the seasoning if necessary and serve.

1/2 cup butter
1 medium onion, chopped
1/2 cup flour
2 cups milk

Steps:

  • Cook broccoli until tender& drain.
  • Cook onions in butter until tender& transparent.
  • Stir in flour& cook 5 minutes, stirring constantly.
  • Add milk slowly, stirring constantly.
  • Stir in grated cheese until smooth.
  • Slowly blend broth into sauce.
  • Add Velveeta cheese and stir until melted.
  • Puree 1/2 cup of the broccoli with a fork (or in the food processor).
  • Cut the rest of the broccoli into pieces.
  • Add all broccoli to the soup.
  • Simmer 15 minutes.
  • You can add more Velveeta for a cheesier flavor.

Steps:

  • Preheat the oven to 375 degrees F.
  • Remove 2 cups of the broccoli florets, cut in half, drizzle with olive oil and sprinkle with salt and pepper. Place on a baking sheet cut-side down and bake until the florets begin to crisp and turn slightly brown.
  • Meanwhile, melt the butter in a pot over medium heat. Add the onions and cook until softened, 3 to 4 minutes. Sprinkle the flour on top. Steps:

  • In a medium pot, melt the 3 tablespoons butter over medium-high heat. Add the onions, salt, pepper, and nutmeg and cook, stirring, until soft, 3 minutes. Add the garlic and thyme cook, stirring, until fragrant, for 20 seconds. Add the flour and cook, stirring until the mixture is well blended and smells fragrant, 2 minutes. Slowly add the chicken stock, whisking constantly, and bring to a boil. Reduce the heat and simmer until thickened, about 5 minutes. Add the broccoli and cook, stirring, until tender, for 10 minutes.
  • Remove the pot from the heat and puree with a hand-held immersion blender. (Alternatively, in batches, puree in a blender or food processor and return to the pot.)
  • Add the cream and bring to bare simmer to heat through. Add the cheese and cook over low heat, stirring, until melted. Add the remaining 2 tablespoons cold butter, stirring to blend.
  • Remove from the heat and ladle the soup into bowls. Sprinkle croutons over the top of the soup and serve immediately.
  • Preheat the oven to 400 degrees F.
  • Place the bread in a medium bowl and toss with oil and Essence. Spread evenly on a small baking sheet and bake, stirring twice, until light golden brown on top, about 6 minutes. Remove from the oven and cool slightly before serving.

1 large carrot, diced

1 large russet potato (about 8 ounces)

Steps:

  • Melt the butter in a large saucepan or Dutch oven over medium-high heat. Add the onion, carrot and garlic and cook, stirring occasionally, until just tender, about 5 minutes. Whisk in the flour and cook until golden, 3 to 4 minutes, then gradually whisk in the half-and-half until smooth. Add the chicken broth, broccoli, bay leaves, nutmeg, 1/2 teaspoon salt and few grinds of black pepper Bring to a boil, then reduce to medium-low and simmer, uncovered and stirring occasionally, until the broth has thickened and the broccoli is very tender, about 15 minutes.

  • Reserve 2 cups of the soup in a liquid measuring cup and discard the bay leaves. Let the remaining hot soup cool for 5 minutes or so, then transfer it to a blender, filling no more than halfway. Add the mashed potato. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters, and pulse until very smooth.

Steps:

1 tbsp olive oil
4 medium potatoes, peeled and cubed
1 head of broccoli, stalks trimmed and cut into florets
1l chicken stock
250ml single cream
175g mature cheddar cheese, grated
sea salt and cracked black pepper

Steps:

  • warm the olive oil in a large soup pot and add the onions. Cook until soft and golden in colour. Add the potatoes and continue to stir for a few minutes.
  • Add the chicken stock and bring to the boil. Add the broccoli florets and reduce to simmer.
  • Continue to simmer for around 20 minutes or until the potatoes and broccoli are soft.
  • Blend until smooth and then stir in the cream. Continue to simmer on a low heat and gradually add the cheddar stirring continuously for around 10 minutes. Season and serve.

1 tablespoon olive oil
4 cloves garlic, minced, divided
1 cup chopped onions

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking pan with a silicone mat.

1 head broccoli, chopped
1 head broccoli, finely chopped
½ cup shredded carrots
6 tablespoons salted butter, cubed
1 medium onion, thinly sliced
6 tablespoons all-purpose flour, or as needed
2 cups milk
½ (8 ounce) package processed cheese food (such as Velveeta®), cubed

Steps:

  • Bring chicken broth to a simmer in a large pot. Add both heads of broccoli and carrots to the simmering stock; simmer for 5 minutes.
  • Meanwhile, melt butter in a large skillet over medium heat. Add onion and saute until softened, about 5 minutes. Stir in flour, 1 tablespoon at a time. Here's what you need: shredded cheddar cheese, shredded parmesan cheese, cornstarch, cayenne pepper, garlic, milk, chicken stock, broccoli, baguette

3 ½ cups shredded cheddar cheese
1 cup shredded parmesan cheese
1 tablespoon cornstarch
¼ teaspoon cayenne pepper
½ clove garlic
3 cups milk
1 cup chicken stock
1 cup broccoli, finely chopped
1 baguette

Steps:

  • Over medium heat, combine cheese with cornstarch and cayenne pepper.
  • Once melted, slowly add garlic, milk, and chicken stock.
  • Add finely chopped broccoli and allow to simmer about 5 minutes while making cheese toasts.
  • Cover slices of baguette bread with shredded cheddar and broil for 3 minutes.
  • Enjoy!

This soup is thicker than soup and thinner than steamed broccoli spears with cheese sauce, but definitely something that you could eat the whole pot of easily. Don't put this on your plate, it goes in a bowl for maximum comfort. Don't need crackers; for something fancy, serve in a bread bowl or with a lovely piece of crusty bread. YUM! I've never frozen this; it usually doesn't last past a second meal.

1/4 cup butter or 1/4 cup margarine
1/4 cup flour
3 cups chicken broth
1/2 teaspoon salt
2 cups milk (or 3 c. milk, no half & half)
1 cup half-and-half cream
1 cup bagged shredded cheddar cheese
1/4 lb processed cheese, cut into smaller cubes (I use Walmart brand Velveeta)
1 (16 ounce) bag frozen broccoli, chopped into bite-sized pieces (thawing not necessary)

Steps:

  • In a large stockpot, melt the butter. When melted, stir in the flour and cook for 2 minutes.
  • Add the broth, milk & cream, and salt. Bring to a boil and reduce heat. Simmer for 10 minutes.
  • Stir in the cheese and broccoli. Simmer for 10 minutes. Serve.
  • Note: If this is not thick enough for you, make some thickening from cornstarch and water; increase heat to just under boiling and stir in rapidly to prevent lumps.

2 tablespoons butter
1 onion, chopped
2 tablespoons all-purpose flour
1 1/2 cups chicken stock
1 (750 g) package frozen chopped broccoli or 3 cups fresh broccoli
1/4 teaspoon pepper
1 1/2 cups milk
1 1/2 cups grated cheddar cheese
1/4 teaspoon Tabasco sauce
2 tablespoons fresh parsley or 2 tablespoons chives
1 red pepper, chopped (optional)

Steps:

  • Melt butter. Cook onion until soft but not brown.
  • Stir in flour and cook 3 minutes.
  • Whisk in stock and broccoli.
  • Bring to boil.
  • Reduce heat and simmer 5 to 10 minutes.
  • Puree mixture (in food processor or blender).
  • Return to heat, add pepper, milk, cheese, and Tabasco sauce.
  • Heat thoroughly but do not boil.
  • Taste and adjust seasoning if necessary.
  • If you are using fresh broccoli, trim off tough stems, chop and cook 15 minutes before putting in blender.

Ok I admite this is one of those recipes when you just do not know what to make.The only way the kids eat Broccoli is if it has cheese on it and this does the trick for me. I have also been known to add Bacon with it. Just before I put it in to the serving dishes. Moat of the time I double this recipe.

1 onions, chopped or 4 tablespoons minced onions
1/4 cup butter or 1/4 cup margarine
1 can cream of mushroom soup
1 can cream of celery soup
1 can cream of chicken soup
1 (12 ounce) can evaporated milk
1 lb Velveeta cheese
1 (16 ounce) bag frozen chopped broccoli

Steps:

  • Saute onion in butter (I mixed the minced onion with the melted 1/2 stick of butter).
  • Place all ingredients in crockpot, mix a bit, and cook on low until hot.
  • Thaw the broccoli and drain--cooking time is just enough to get everything hot, about 2 to 4 hours (depending on cooker).
