Steps:
- Place all ingredients in a heavy bottomed saucepan (preferably enamel coated, but not absolutely necessary). Cook in medium heat until the butter melts, reduce heat to low and cook, stirring, until the mixture starts to pull out of the bottom of the pan. It should take between 10 and 17 minutes. If the mixture starts to boil too furiously, reduce the heat or remove the pan from the burner for a minute or so, always stirring. Allow it to cool until you can handle it. It is OK to put it in the refrigerator to speed up the process. Place the chocolate sprinkles in a shallow dish. Have a small dish with cold water to dip your fingers and moisten the palm of your hands. Using a teaspoon, grab portions of the cool chocolate mixture and roll into balls. Immediately roll them in chocolate sprinkles and place in a small paper cup. Makes 24 brigadeiros. Scale up the recipe for large gatherings. ENJOY!

TRIO OF BRIGADEIROS
A brigadeiro is a traditional Brazilian sweet that is made with cocoa powder and sweetened condensed milk, then covered in sprinkles. These treats are quite sweet, almost like a chocolate caramel, but the cocoa powder and toasted coconut will temper some of the sweetness.

- Spray a shallow dish with cooking spray and set aside. Melt the butter in a saucepan over medium-low heat. When the butter has melted, whisk in the condensed milk, cocoa powder and salt until well combined. Cook over a medium-low heat, stirring constantly with a wooden spoon or heatproof spatula, until the mixture becomes thick and starts to pull away from the bottom and sides of the pan, 7 to 15 minutes.
- Pour the mixture onto the prepared dish and spread it out so it cools quickly. DO NOT touch the mixture with your hands at this point-it is VERY hot. If you are having trouble spreading, use a rubber spatula or spoon. (It doesn't need to look perfect.) Refrigerate until cool enough to comfortably handle, about 1 hour to 70 minutes. (The colder the mixture, the easier the next steps will be.)
- Place the coconut, sprinkles and cocoa powder in separate shallow bowls. Take a tablespoon of the candy mixture and form into a ball. Place the ball on a sheet pan. Continue forming the balls and placing on the sheet pan until all of the mixture is used; you should have 24 to 28 small balls. Once all the balls are prepared, roll each in one of the desired coatings, pressing the flaked coconut and sprinkles coatings so they stick. Place each coated ball in a little paper cup. Serve immediately or refrigerate until ready to eat.

- Cook the mixture until it thickens enough to show the pan bottom during stirring (it will be firm enough to stay together and not spread) Pour into a greased dish and let cool to room temperature (or chill a few minutes in the fridge) Grease your hands with butter and take small amounts of candy and form into 1 1/2 inch balls.

- In a heavy saucepan mix chocolate with condensed milk and add the margarine. Cook in low heat stirring constantly until you can see the bottom of the pan. Continue to stir for another two minutes. Pour onto a plate and let cool completely before you form the little balls (I usually leave it in the cupboard until next day). Butter your hands slightly to form the little balls. Roll the balls in chocolate powder or jimmies and put them in small paper cups.
- A little cultural note: Have you noticed how many Brazilian recipes are made with condensed milk? It came to Brazil from Switzerland over a hundred years ago. It's made by Nestlé and because the label featured the picture of a milkmaid, the cans became known as the "maid milk' and that's what condensed milk is called to this day (Leite Moça).

- Combine milk, butter, heavy cream, and corn syrup in medium sauce pan and bring to gentle boil over medium heat.
- As soon as mixture begins to bubble, add chocolate and coca powder, whisking vigorously.
- Reduce heat to low, cook for 8-10 minutes until a dense, fudgy batter, whisking continuously. It will begin to pull away from the sides of the pan and develop little bubble holes.
- Slide out mixture into a bowl and let cool to room temperature; then cover bowl and refrigerate for at least 4 hours.
- Scoop mixture by the teaspoonful, shape into balls and roll in your choice of sprinkles, nuts or coconut. (optional! place in small cupcake holders for more sophisticated look)
- Store in airtight plastic container for up to 2 days at room temperature, or up to one month in the refrigerator.

- In a 3-qt heavy-duty saucepan, combine the condensed milk, cream, 6 tbs ground pistachios, corn syrup and butter and bring to a boil over medium heat. Reduce the heat to medium-low and continue to cook, stirring constantly with a whisk, until the mixture thickens and starts to form a dense batter. This will take about 12 minutes. When the mixture is properly cooked, the whisk will leave trails in the batter that briefly expose the bottom of the pan, and the mixture will slide to the side in a blob when the pan is tilted, leaving a thick residue on the bottom of the pan.
- Slide the mixture into a bowl, but do not scrape the pan -- you don't want to use the residue that's stuck to the pan, or your candies will be gritty and off-textured. Allow the mixture to cool to room temp, then chill for about 3 to 4 hours, or until mixture is very firm.
- Put the remaining ground pistachios (you should have 1/4 cup left) in a bowl. Using a small cookie scoop, portion out the mixture and roll by hand into balls that are approximately 1" in diameter. Drop each rolled ball into the pistachios and toss to coat. Remove the coated candies from the pistachios, allowing the excess nuts to sift through your fingers, and place the candies in tiny paper candy cups. If you find that the nuts are not sticking well to the outside of the candies, you can roll them around a bit more in your hands before coating (this warms them up a bit so they soften).
- These can be stored tightly covered at room temperature If you choose to refrigerate them for storage, allow them to come to room temp before serving for best flavor.

- In a 2-quart saucepan, mix together the sweetened condensed milk, the cocoa powder and teh butter.
- Cook over medium low heat for 7-8 ninutes, stirring constantly, or until the candy forms a ball and pulls away from the sides of the pan.
- Cool to room temperature.
- With buttered hands, shape the candy into 1-inch balls. Roll each in the sprinkles to cover and place each one in a paper or foil candy cup.
- Place in a container, cover, and refrigerate to chill before serving. Refrigerate any leftover candies.
