Steps:
- HEAT oven to 400 degrees F. Unfold puff pastry on a lightly floured surface. Roll gently to seal any cracks in pastry. Spoon preserves onto center of pastry. Place cheese on top of preserves. Sprinkle evenly with nuts. Fold pastry up over the cheese to cover. Trim excess pastry and press to seal seams. Reserve pastry scraps.
- WHISK egg and water in small bowl. Brush seams with egg mixture. Place seam-side down on baking sheet. Cut pastry scraps into decorative shapes and arrange on top, if desired. Brush with egg mixture.
- BAKE 25 minutes or until golden brown. Let stand 20 minutes before cutting. Serve with crackers and sliced fruit.

- Heat oven to 400°F. Line cookie sheet with cooking parchment paper.
- In 8-inch skillet, melt butter over medium-high heat. Add rhubarb, onion and sugar; cook until rhubarb and onion are softened, juices evaporate and mixture thickens. Stir in preserves, thyme, ginger and cinnamon.
- Spoon rhubarb mixture on top of Brie cheese.
- Unroll crescent dough onto cookie sheet; press perforations to seal. Place rhubarb-topped cheese in center of dough. Gather edges of dough up and around cheese; pinch edges and top to seal.
- With pastry brush, spread beaten egg over dough.
- Bake 17 to 20 minutes or until dough is golden brown. Serve immediately.

- In a small saucepan, heat sugar and water until sugar is dissolved. Add berries. Bring to a boil. Reduce heat; simmer, uncovered, for 3 minutes. Combine cornstarch and cold water until smooth; gradually stir into the pan. Bring to a boil. Cook and stir for 2 minutes or until thickened. - Preheat oven to 350°.
- Make cherry compote: In a small saucepan over high heat, combine cherries with sugar, lemon juice, and water. Bring to a boil, stirring to dissolve sugar, then immediately reduce heat to low. Add cornstarch and simmer until cherries are tender and sauce is thickened, stirring occasionally, 7 to 8 minutes. Remove from heat.
- Place Brie into a baking dish and top with cherry compote. Bake until cheese is warm and melty, about 15 minutes.

BLUE BRIE (BAKED BRIE WITH BLUEBERRIES)
I like having a baked brie at parties, always nice to find a new way to do it. This came via a demo table at my local grocery store a few years back. Dried blueberries can be quite expensive, I wonder if you could just dry your own in the oven. They should be easy enough to find in the bulk section and they do 'make' the dish so you can't leave them out. Nice for a special occassion (when calories don't count!). Serve with a selection of crackers or sliced baguette.

- Preheat the oven to 375 degrees.
- Combine the brown sugar, pecans and blueberries in a bowl. Sprinkle the mixture with just enough water to moisten.
- Cut the top off the brie and score lightly in a criss-cross pattern. Place the brie in an oven safe shallow dish or bowl.
- Place the blueberry mixture over the top of the brie. Bake uncovered for about 30 minutes until the cheese is bubbly and heated through (test in teh middle as you would a cake, it 'should' come out gooey.
- Serve right out of the oven, lifting the brie onto a serving platter and surrounding it with crackers or bread.
