1 egg
1 tablespoon water
1 (17.3 ounce) package frozen puff pastry (such as Pepperidge Farm®), thawed
½ cup apricot preserves
¾ cup dried cranberries
½ cup sliced almonds
1 (7 inch) wheel Brie cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Whisk egg and water together to make egg wash.
  • Roll out puff pastry gently to a 14-inch square. Trim corners with a knife or pizza cutter to make a circle. Spread apricot preserves over the pastry, leaving a 1-inch margin around the edge. Sprinkle cranberries and almonds over the pastry, and place Brie cheese in the center.
  • Brush the edges of the pastry with some of the egg wash. Fold top and bottom of pastry over the dough; trim 2 inches off each edge. Fold remaining pastry on top to cover the Brie cheese completely. Press the seams with your fingers to seal. Remove any excess apricot preserves that leaks out.
  • Transfer wrapped cheese, seam-side down, to baking sheet. Brush top with egg wash.
  • Bake in the preheated oven until top is golden brown, about 20 minutes. Let stand before serving, about 30 minutes.

This pastry-wrapped soft cheese, topped with cranberries, apricots and almonds, is great for the holidays but it's so good, you'll want to serve it year-round.

1 egg
1 tablespoon water
2 tablespoons all-purpose flour
1/2 of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets(1 sheet), thawed
1/2 cup apricot preserves or seedless raspberry jam
1/3 cup sweetened dried cranberries
1/4 cup toasted sliced almonds
1 (13- to 16-ounce) Brie cheese round
1 package (13 ounces) Pepperidge Farm® Cracker Favorites

Steps:

  • Heat the oven to 400°F. Beat the egg and water in a small bowl with a fork.
  • Sprinkle the flour on the work surface. Unfold the pastry sheet on the work surface. Roll the pastry sheet into a 14-inch square. Spread the preserves on the pastry in a circle about 1/2-inch larger than the cheese. Sprinkle with the cranberries and almonds. Place the cheese in the center of the pastry. Fold the pastry up over the cheese to cover. Trim the excess pastry and press to seal. Brush the seam with the egg mixture. Place seam-side down onto a baking sheet. Decorate with the pastry scraps, if desired. Brush with the egg mixture.
  • Bake for 20 minutes or until the pastry is golden brown. Let stand for 45 minutes. Serve with the crackers.
  • Flavor Variation: For Brie en Croute Provençal, omit the preserves, cranberries and almonds. Stir 1/4 cup diced jarred sun-dried tomatoes, 2 tablespoons olive tapenade and 2 tablespoons toasted pine nuts in a small bowl. Spoon the mixture in the center of the pastry sheet. Top with the cheese and proceed as directed above.
  • How to Thaw? Thaw time may vary. Pastry should unfold easily but still be cold after thawing. At room temperature, thaw unwrapped pastry for no more than 40 minutes. In the microwave, wrap pastry in paper towel and microwave on HIGH for 15 seconds, then turn it over and microwave for another 15 seconds. If it doesn’t unfold easily, microwave for another 5 seconds on each side.

Savory BakedBrie in Puff Pastry is an easy Mediterranean cheese appetizer stuffed with olives, roasted red peppers and artichokes en croute and baked until golden.

8 ounces puff pastry dough (thawed approximately 12 in x 12 inch sheet)
4 tbsp olives (mixture of pitted kalamata and Spanish green sliced (drained well and patted dry))
2 tbsp roasted red peppers (chopped (drained well and patted dry))
2 tbsp artichokes hearts (chopped (drained well and patted dry))
1 tsp Olive oil
1 tsp Sicilian Spice Mix (or mixture of dried Italian spices (basil, oregano, thyme) mix and garlic powder)
8 oz brie cheese (wheel)
1 egg (beaten)

Steps:

  • Preheat oven to 400 F or 204 C.
  • Take the puff pastry out of the freezer and out of the external and internal packaging to thaw for about 10 to 30 minutes. Do not leave out longer than 40 minutes at room temperature or it becomes extremely difficult to work with. Alternatively, you can microwave your pre-made frozen puff pastry sheets. Wrap with a towel and microwave for 15 seconds each side to soften. Add an extra 5 seconds as needed to be able to open the puff pastry dough without it cracking.
  • Roughly chop your olives (we used kalamata and Spanish green olives), roasted red peppers and artichokes. Drain well and dab with toweling to remove extra moisture. Feel free to add fresh herbs, sun dried tomatoes in oil or anything you desire. (Alternatively, you can put them in the food processor and let them do a quick one second blend to roughly chop.) Add a dash of Sicilian Spice Mix or a mixture of dried Italian herbs (like basil, oregano, thyme and garlic powder) and olive oil and mix. Set aside
  • Cut your brie wheel in half horizontally so you have 2 disks.
  • Roll out your puff pastry slightly so it is about 1/8 inch (3 mm) thick. We used one entire sheet of a puff pastry and it was about 12 inches x 12 inches (30 cm x 30 cm) in size. You can trim if you wish. Your goal is to make your puff pastry just big enough to fit around the puff pastry and tie at the top. Set aside.
  • Add your Mediterranean salsa to one half of the brie wheel with cheese side up and rind side down. Place the other half of the brie cheese wheel on top of Mediterranean salsa with the cheese side down and the rind side up. (If you do not like rind, please shave off first BEFORE starting this procedure. Then, just add the toppings right on top of the brie wheel instead of cutting in half. )
  • Place your puff pasty dough on a lined or greased baking sheet. Lay the Mediterranean stuffed wheel of brie on top of the puff pastry in the middle.
  • Brush egg wash along the edges of the puff pastry dough to help seal.
  • Take two edges of the puff pastry and close and squeeze. Take the other 2 edges of the puff pasty together and squeeze. Twist the ends to seal well at the top. It does not need to be perfect. As a matter of fact, it is even more artistic if it's a little messy. (Watch the video for a great visual on how to do this)
  • Brush the with egg and bake in over for about 20 minutes until the crust in flaky and golden brown. Remove from oven and let rest for about 15 minutes before serving.
  • Serve Holiday Mediterranean En Croute with crackers and a glass of bubbly and enjoy.
  • If desired, use a fork and gently carve designs in the pastry dough, being careful to not fully penetrate the dough. However, this step is completely optional.
  • Brush egg wash all over the exterior of the Savory Baked Brie in Puff Pastry.
  • Bake at 400degrees F (204 degrees C) Bake 20-30 minutes or until golden brown. If the decorative top of the pastry dough starts to brown faster than the rest of the brie en croute, put a little aluminum foil over the little section while the rest of the pastry dough gets deliciously golden brown. Sometimes your brie can slightly leak out of the sides, if this happens do not worry. Ours did not but we made sure that our puff pastry was at least 1/8 thick all around.
  • Let rest for at least 15 minutes but best to wait 45 minutes if you can hold out.
  • Serve with crackers, toasted crostini, fresh seasonal fruits, cured meats, nuts or whatever you desire. Enjoy!

4 ounces brie round, chilled
1/2 small roasted red pepper, peeled, seeded and coarsely chopped
2 tablespoons black olives, ripe and coarsely chopped
1/4 lb frozen puff pastry, thawed (1/2 sheet)
1 egg yolk, large mixed with
1 tablespoon water

Steps:

  • Slice brie in half, horizontally.
  • Scatter the pepper and olives over the bottom half of brie and cover with top half.
  • set aside.
  • Roll pastry into a 12" circle.
  • Trim the edges.
  • Place brie in the center of pastry and lift the pastry edges to cover completely.
  • Gather the pastry in the center and tie with kitchen string.
  • Arrange the pastry edges attractively on top of brie.
  • Wrap in plastic wrap and refrigerate until needed.
  • About 45 minutes before serving, remove plastic from brie, place on a lightly greased baking sheet and allow pastry to come to room temperature.
  • Brush with beaten egg.
  • Preheat oven to 400 degrees.
  • Bake 30- 35 minutes.
  • Remove and cool on wire rack for 10 minutes before you serve.
  • To serve slice into small wedges with fruit slices, baugettes or nice crackers.

Brie en croûte is an easy and delicious cheese and puff pastry appetizer. It's gorgeous as a cheese board centerpiece, and is a perfect game day appetizer!

1 sheet puff pastry
8 ounce wheel Brie
1 tablespoon orange marmalade (or other fruit jam)
1/8 cup dried cranberries, currants, raisins, or chopped dates (or a mix)
2 tablespoons chopped pecans or walnuts (or both)
1 egg, beaten
To serve: grapes, apple slices, crackers, sliced baguette

Steps:

  • Preheat oven to 425°F.
  • Line a baking sheet with parchment paper. Roll out puff pastry onto the paper. Cut off about 1/3 of the puff pastry (reserve).Note: This recipe was written for refrigerated puff pastry. If using frozen puff pastry, thaw before using, rolled out to 1/4" thickness, and work on a floured surface instead of parchment paper.
  • Place the wheel of Brie in the middle of the larger piece of puff.
  • Spread orange marmalade on top of the Brie.
  • Add dried fruit and nuts.
  • Fold the puff around the Brie until it is entirely wrapped, smoothing any seams with your finger.
  • Brush the puff with the beaten egg.
  • Optionally, cut use a cookie cutter to cut decorative shapes out of the reserved, unused piece of puff. Add the shapes to top of the wrapped Brie, and brush with more beaten egg.Tip: If you don't have a cookie cutter, you can use the lid from a spice jar to cut circles.

1/2 pound mushrooms
2 tablespoons unsalted butter
1 tablespoon dry Sherry
1/2 teaspoon freshly grated nutmeg
a 17 1/4-ounce package frozen puff pastry sheets, thawed according to package directions
a chilled 14- to 17-ounce wheel Brie
1 large egg
Accompaniment: French bread slices or crackers

Steps:

  • Mince enough onion to measure 1/2 cup and finely chop mushrooms. In a 9- to 10-inch heavy skillet cook onion in butter over moderate heat, stirring, until softened. Add mushrooms, Sherry, nutmeg, and salt and pepper to taste and sauté over moderately high heat, stirring, until liquid mushrooms give off is evaporated. Cool mushroom mixture.
  • On a lightly floured surface roll out 1 sheet of pastry into a 13-inch square and, using Brie as a guide, cut out 1 round the size of the Brie. Cut out a mushroom shape from scraps for decoration.

  • Without stretching pastry, wrap it snugly up over Brie and trim excess to leave a 1-inch border of pastry on top of Brie. In a small bowl lightly beat egg and brush onto border. Lightly brush mushroom with some egg, being careful not to let egg drip over edge of mushroom (which would prevent it from rising). Brie may be made up to this point 1 day ahead and chilled, loosely covered.
  • Preheat oven to 425°F.
  • Bake Brie in middle of oven until pastry is puffed and golden, about 20 minutes. Let Brie stand in pan on a rack 15 minutes and transfer with a spatula to a serving plate.

One of the most common mistakes people make when serving cheese is not letting it come to room temperature first, so that all the flavors can be fully realized. This beautiful baked stuffed brie takes that principle to the next level.

1 small wheel of brie (about 6 to 8 inches), chilled
¼ cup dried cranberries
¼ cup chopped walnuts
1 sheet frozen puff pastry, thawed, plus extra for (optional) design
1 egg, beaten with
1 teaspoon water

Steps:

  • Score the side of a wheel of brie all the way around with a sharp paring knife. Cut directly on the "equator" through the rind. Using a long piece of string or dental floss, wrap the string around the brie on the newly made cut. Loop one end of the string over the other (a half knot). Then pulling the ends of the string in opposite directions, cut the brie in half.
  • Press the dried cranberries on one cut side of the brie, and the walnuts on the other. Quickly put the 2 sides back together with the cranberries on top of the walnuts. Press together and stuff back in any cranberries or walnuts that fell out.
  • Roll out a thawed sheet of puff pastry on a floured surface to about 1/8-inch thickness. Place brie in center of pastry. Gently pull up edges to ensure you have enough dough to entirely wrap the brie. You can trim off the corners if there is too much dough. Brush the dough with the egg wash. Fold one edge of the dough over the brie and then the opposite side. Fold over the remaining edges and complexly encase the brie. You can trim off excess pieces of dough, if necessary. Flip the brie over so the seam is at the bottom; gently press in the sides to snug the dough against the brie. Brush the top and sides of the wrapped brie with egg wash.
  • If you choose to decorate the brie with cut-out shapes of additional puff pastry, use very cold (almost still frozen) dough to ensure sharp lines. Lightly brush the decorative pieces with egg wash. Place the brie in the freezer for one hour (this is a crucial step; see note below).
  • Preheat oven to 425 degrees F (220 degrees C). Line a rimmed baking sheet with parchment paper.
  • Place the brie on the prepared baking sheet. Bake on the center rack in preheated oven until it is browned and leaking cheese, about 20 minutes. (Only rarely does the brie not leak through, but 20 to 25 minutes is about how long it takes to melt the cheese and brown the pastry.)

When Sex & the City was on HBO, I hosted a girls' get-together every Sunday night, complete with cosmopolitans and champagne. This baked brie got the most compliments and there were never leftovers. Note that this can be made in advance and put in the oven when your guests arrive - the house will smell good! The recipe is originally from Gourmet magazine.

2 tablespoons unsalted butter
1/2 lb mushroom, finely chopped

14 ounces brie round, chilled (Note this is a larger size, up to 17 oz, which is not available in all grocery stores)

1 beaten egg
1 small (8 oz) wheel brie cheese
1 tablespoon unsalted butter
1/2 cup chopped walnuts
1 sheet (package comes with 2 sheets) frozen puff pastry
1/8 teaspoon ground cinnamon
for serving crackers

Steps:

  • Preheat oven to 375 °F.
  • Defrost 1 sheet of puff pastry for approximately 15 to 20 minutes and unfold (place remaining sheet in freezer for later use). Melt butter in a saucepan over medium heat. Sauté walnuts in butter until golden brown, approximately 5 minutes. Add the cinnamon and stir until walnuts are well coated. Place walnuts on top of Brie and sprinkle brown sugar on top of nuts.
  • Lay the puff pastry out on a flat surface. Place the brie in the center of the pastry. Gather up the edges of the brie, pressing around the brie and gather at the top. Gently squeeze together the excess dough and tie together with a piece of kitchen twine. Brush the beaten egg over top and side of Brie. Place Brie on a cookie sheet and bake for 20 minutes until pastry is golden brown.
