BRIE AND BASIL CROQUETTES
I love brie cheese (especially baby brie). This recipe is a lot of work and you'll need to allow time for overnight chilling and then an additional hour of chilling, but it's quite delicious and perfect for holiday company. Preparation time excludes chill time.

Steps:
- Melt butter in heavy saucepan over medium heat.
- Add 1/4 cup flour and stir until light golden, about 2 minutes.
- Remove from heat.
- Gradually whisk in milk.
- Return pan to heat.
- Simmer gently until very thick but still pourable, about 4 minutes.
- Add cheese and basil and stir until cheese melts, about 2 minutes.
- Remove from heat.
- Season with salt and pepper.
- Stir in 1 egg.
- Pour into 10" diameter pie plate.
- Press plastic wrap onto surface of cheese mixture to prevent skin from forming.
- Chill overnight.
- With floured hands, form cheese mixture into walnut-size balls.
- Dust cheese balls with flour.
- Chill until firm, about 1 hour.
- Press each cheese ball into 3/4" thick round.
- Place remaining egg in small bowl and beat to blend.
- Place crumbs in medium bowl.
- Dip cheese rounds into egg, then into crumbs, coating thoroughly.
- Heat oil in heavy large skillet over medium-high heat.
- Working in batches, fry cheese rounds just until brown, about 1 minute per side.
- Do not overcook.
- Drain on paper towels and serve warm.
CAPELLINI WITH TOMATOES AND BASIL
Steps:
- Bring a large pot of water to a boil and add 2 tablespoons of salt and a splash of oil to the pot.
- Meanwhile, heat the 1/2 cup of olive oil in a large (12-inch) saute pan. Add the garlic to the oil and cook over medium heat for 30 seconds. Add the tomatoes, basil, parsley, thyme, 2 teaspoons salt, the pepper, and red pepper flakes. Reduce the heat to medium-low and cook for 5 to 7 minutes, tossing occasionally, until the tomatoes begin to soften but don't break up.
- While the tomatoes are cooking, add the capellini to the pot of boiling water and cook for 2 minutes, or according to the directions on the package. Drain the pasta, reserving some of the pasta water.
- Place the pasta in a large serving bowl, add the tomatoes and Parmesan and toss well. Add some of the pasta water if the pasta seems too dry. Serve large bowls of pasta with extra basil sprinkled on top and a big bowl of extra Parmesan on the side.
CREAMY NO-COOK TOMATO SAUCE WITH BASIL AND BRIE
This four-ingredient no-cook sauce will impress your guests and can be made in the time it takes to cook your pasta. The bright tang from in-season tomatoes along with the creamy, melted Brie marries perfectly for a fantastic summer spaghetti.

- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions.
- Meanwhile, grate the tomatoes on the largest holes of a box grater into a large bowl, discarding any big pieces of excess tomato skin. Whisk in the oil, basil and 2 teaspoons salt. Stir in the Brie.
- Drain the pasta, reserving 1/4 cup of the pasta water. Add the pasta to the tomato mixture and toss to combine. Add the pasta water, a little at a time, to moisten the pasta and help the Brie partially melt, if needed.
- Top with more basil before serving.
COURGETTE, BACON & BRIE GRATIN

- Heat 2 tablespoons of the oil in a large heavy saucepan, tip in the courgettes and fry for 10-12 minutes until tinged golden. Remove with a slotted spoon and set aside.
- Heat the remaining oil in the pan and add the bacon, onion and garlic. Cook over a low heat for about 6-8 minutes or until softened and lightly golden. Tip in the rice and stir until the grains start to pop.
- Pour in the wine and stand back while it sizzles and absorbs into the rice. Stir well, then pour in about one third of the hot stock and increase the heat to moderate. Cook, stirring frequently, until the stock is absorbed. Repeat with the remaining stock, in two batches. This should take about 20 minutes, and the rice should be tender.
- Preheat the grill on its highest setting. Remove the rice from the heat, gently fold in the courgettes and season to taste. Tip everything into a big flameproof dish. Slice the brie and lay on top of the rice. Put the dish under the hot grill for 3-4 minutes until the brie is bubbling.

- Melt btter Add 1/4 c flour and make a roux. Remove from heat and wisk in flour. Return pan to heat and simmer gradually until thickened, but still pourable. Add cheese and basil, stirring until cheese melts. Remove from heat and season with salt and pepper. Add 1 egg. Pour into 10-in pie plate and cover with plastic. Chill overnight. With floured hands, form mixture into walnut sized balls. Dust with flour and chill until firm. Press into flat rounds, 3/4 in thick. Beat egg into bowl. Dip rounds into egg followed by breadcrumbs. Brown in olive oil, taking care not to overcook. Drain on paper towels and serve warm.
BASIL BRIE IN PASTRY

- Heat oven to 400°. Grease cookie sheet. Mix Parmesan cheese and basil. Cut Brie cheese round horizontally into 2 layers. Sprinkle basil mixture evenly over cut surface of bottom layer. Reassemble cheese round.
- Roll pastry into rectangle, 15x9 inches, on lightly floured surface. Cut out 2 circles, one 8 1/2 inches and the other 6 inches. Place cheese round on center of large circle. Bring pastry up and over cheese, pressing to make smooth and even. Brush top edge of pastry lightly with water. Place 6-inch circle on top, pressing gently around edge to seal. Cut decorations from remaining pastry if desired; moisten pastry with water to attach.
- Bake about 25 minutes or until golden brown. Cool on cookie sheet on wire rack 30 minutes before serving. Serve with crackers.
