These Beef Enchiladas are filled with seasoned ground beef, black beans, corn and cheese, wrapped in soft tortillas and smothered with enchilada sauce and melty cheese. This easy enchilada recipe is a crowd-pleaser, perfect for making ahead for an easy dinner.

2 teaspoons olive oil
1 cup finely chopped yellow onion
1 pound ground beef
3 cloves garlic (minced)
1 ½ teaspoons chili powder
1 ½ teaspoons ground cumin
½ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon black pepper
19 ounces red enchilada sauce (about 2 ½ cups, divided)
15 ounce can black beans (rinsed and drained)
1 cup frozen corn or canned corn (drained)
¼ cup chopped fresh cilantro
12 ounces shredded cheddar, Monterey jack, Colby jack or Mexican cheese blend cheese (about 3 cups, divided)
10 medium-large flour tortillas (8-inch, soft taco size)
Optional, for serving: sour cream, sliced avocado, chopped red or green onion, chopped cilantro, etc.

Steps:

  • Preheat oven to 350° F.
  • Heat the olive oil in a large skillet over medium high heat. Add the onion and cook until softened, 2-4 minutes. Add the ground beef and cook, crumbling, until until the beef is browned. If there is a lot of excess grease from the beef, drain it off.
  • Add the garlic, chili powder, cumin, dried oregano, salt and pepper and cook, stirring, for 30 seconds. Remove the pan from the heat.
  • Stir in ½ cup of the enchilada sauce, the black beans, corn and cilantro.
  • Spread ½ cup of the enchilada sauce in the bottom of a greased 13x9-inch baking dish and ⅓ cup of sauce in the bottom of a greased 8x8-inch baking dish.
  • To assemble each enchilada, take one of the tortillas and put ½ cup of the meat filling down the middle of the tortilla, slightly to the side of the center. Sprinkle ¼ cup shredded cheese over the meat filling. Roll up the tortilla as tightly as you can and place it, seam side down, in one of the prepared baking dishes. Repeat with remaining tortillas and enchilada filling.
  • Spread the remaining sauce over the tops of the enchiladas. Sprinkle on the remaining cheese.
  • Bake for 25-30 minutes, or until hot and bubbly. Serve with toppings as desired.

2 pounds ground beef
1 tablespoon black pepper
1 teaspoon chili powder
1 teaspoon garlic powder
1/2 bunch fresh cilantro
1 cup all-purpose flour
1 cup vegetable oil
1/4 cup beef bouillon
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon black pepper
1/2 teaspoon salt
Nonstick cooking spray, for the griddle
18 corn tortillas
2 cups shredded Cheddar
1 diced onion, optional

Steps:

  • For the filling: In large pot, cook ground beef, black pepper, chili powder, garlic powder and cilantro over medium heat until beef is browned all the way through.
  • For the gravy: In a large pot on low heat, add flour and vegetable oil. Cook, stirring often, for 30 minutes, to make a dark brown roux for the gravy. Add 1/4 cup water, the beef bouillon, chili powder, garlic powder, black pepper and salt. Continue to cook until you have the consistency for the gravy, another 5 minutes.
  • For the enchiladas: Heat a griddle or grill on medium heat. Spray cooking spray or put oil on griddle. Place tortillas on griddle until pliable for folding, about 15 seconds.
  • Place tortillas on a flat surface. Add meat to a tortilla and roll up, keeping the seam side down. Place on a microwave/oven-safe plate. Repeat until all tortillas are used.
  • Spoon gravy over enchiladas until covered. Top with Cheddar and place in microwave or oven until cheese melts. Top with onions, if using.

20 -24 corn tortillas or 20 -24 flour tortillas
1/2 cup flour
1/2 cup butter (1 stick)
2 teaspoons garlic
2 teaspoons onion powder
2 teaspoons oregano
6 tablespoons chili powder
1 teaspoon basil
4 teaspoons cumin
2 teaspoons cayenne pepper
salt and pepper
15 ounces tomato sauce
4 cups chicken broth
2 lbs ground beef
1 jalapeno, diced
1 white onion, diced
32 ounces shredded Mexican blend cheese

Steps:

  • For the meat:.
  • Start browning ground beef. When it's about halfway cooked, add the onion and jalapeño and salt and pepper to taste. Drain and set aside.
  • For the sauce:.
  • Melt the butter in a large skillet or saucepan. Add the flour and stir till combined and just starting to brown. Add garlic powder through chicken broth and cook over medium to medium low heat until sauce is warm and thickened.
  • To assemble the enchiladas:.
  • Grease a 10x13 casserole dish. Take each tortilla and lightly dip in the sauce. Then fill with meat and top with a spoonful of cheese. Roll and place seam side down in the pan. When pan is full, top with remaining sauce and cheese. .
  • Bake uncovered at 375 for 30 minutes.
