SOUTHWESTERN FIESTA CHICKEN
I am so in love with this Southwestern Fiesta Chicken! It's so good, quick and easy. It's perfect for throwing together on a weeknight, and it's a million times better than anything you'll get at a restaurant!

Steps:
- Add the rice, water, salt, lime juice, and cilantro to a medium pot. Stir well. Bring to a boil, then cover, reduce heat to low, and simmer for 14 minutes. Set aside and keep covered.
- Meanwhile, cut the chicken into bite-sized pieces. Season with half of taco seasoning. In a very large skillet or dutch oven, heat the olive oil over medium-high heat. Add the chicken in a single layer and cook for 5 minutes, until golden brown, flipping once halfway through. Remove to a plate and set aside.
- In the same skillet, increase the heat to high, and add the onions, bell peppers, corn, and remaining taco seasoning. Cook, stirring occasionally, until veggies are slightly blackened. Decrease heat to low, add garlic, and stir until combined and fragrant, about 30 seconds.
- Add the drained black beans and tomatoes, rice, and chicken. Stir all to combine. Garnish with extra chopped cilantro and top with diced avocado. Serve and enjoy!! :)

Steps:
- Cook pasta as directed on package.
- Meanwhile, heat oil in large skillet on medium-high heat. Add chicken. Cook and stir 6 min. Add peppers, dressing and chili powder; cook 3 min. or until chicken is done, stirring frequently. Stir in salsa and sour cream.
- Drain pasta. Toss with chicken mixture. Sprinkle with cheese.

- Season both sides of the chicken with salt and pepper. Set a 12-inch skillet over medium-high heat and add the oil. When it starts to shimmer, add the chicken and cook on one side until golden brown, about 4 minutes. Transfer the chicken to a plate, leaving the fat in the pan.
- Add the rice, onion and 1/2 teaspoon salt to the pan. Cook, stirring frequently, until the rice is toasted and the onions begin to soften, about 3 minutes. Add the garlic, oregano, chili powder and cayenne, cooking just until fragrant, about 15 seconds.
- Mix in the tomatoes, green pepper and chicken broth. Bring the mixture to a boil, scraping up any browned bits from the bottom of the pan. Add the chicken back to the pan, browned side up, along with any accumulated juices. Cover the pan and reduce the heat to low. Cook until the chicken is cooked through, about 12 minutes, depending on size of the breasts.
- Transfer the chicken to a cutting board and gently give the rice a quick stir then replace the cover and continue cooking until the rice is tender and the liquid is absorbed, about 12 minutes. Meanwhile, cut the chicken into 1/2-inch slices.
- Turn off the heat under the pan then arrange the sliced chicken on top. Sprinkle with the cheese and green onions then cover the pan again and let stand for a few minutes until the cheese has melted.
FIESTA GRILLED CHICKEN
Tequila and lime seasoned chicken breast topped with Tex-Mex bean salad. Quite tasty. This is great for a summer BBQ. I serve this with grilled corn-on-the-cob.

- Combine all ingredients for Texas Bean Salsa. Cover, and refrigerate 6 hours or overnight.
- About 45 minutes before serving, place chicken breasts in baking dish. Squeeze lime juice over chicken. Drizzle with tequilla or apple juice. Sprinkle with paprika, salt and black pepper. Cover and marinate 10-60 minutes. Remove from marinade and grill or broil 10-12 minutes, until cooked, turning once.
- Lay a lettuce leaf on each plate. Place a chicken breast on top of the lettuce leaf, and top each chicken breast with 1/6 of the Texas Bean Salsa. Garnish with additional cilantro leaves and/or lime wedges if desired.
FIESTA CHICKEN BAKE
This is a recipe from Campell's that is extremely easy and tasty. We make it at least twice a month! You can make it as spicy as you like depending on the salsa you use. I have also tried it with pork as well!

FIESTA CHICKEN WITH BARLEY AND BROWN RICE (CROCK POT)
I came up with this when I couldn't decide between chicken cacciatore or something more Tex-Mex. I also wanted a "real" meal without having to work too hard at it. We really enjoyed this. Other cuts of chicken can be used, although I recommend staying away from boneless skinless breasts because I think they tend to dry out in a slow cooker. Since every one's crock pots heat differently and grains can be tricky to cook in a CP, you may have to fool a little bit with the timing on the rice and barley. You could also make that separately and just add it in at serving time. Cooked the way I did it, it almost had a risotto-like texture to it.

Steps:
- Sprinkle chicken with pepper and lightly brown in a large nonstick skillet, 5 minutes on each side.
- Place onion, chipotle pepper, and garlic in the crock pot, followed by the chicken.
- Pour tomato juice over the chicken.
- Sprinkle chicken with cumin, chili powder, and more black pepper.
- Pour canned tomatoes & green chilis over chicken.
- Cover and cook on low for 4-5 hours.
- Remove chicken, and stir uncooked rice and barley into the slow cooker (check the dryness at this time, too, and add some water or other liquid in if you need to).
- Place chicken back on top and continue to cook on low for 1 1/2 - 2 1/2 more hours until grains are tender but not overdone.
- Serve with cheese and sour cream, if desired.
FIESTA BAKED CHICKEN
This recipe is from the Great American Home Baking series and is fairly quick, very easy and quite tasty. I actually never use the onion or olives, but I'll give the full recipe.

- Preheat oven to 350°F Lightly spray a 13 X 9 inch baking dish with nonstick spray.
- Combine salt, cumin, oregano, chili powder, cayenne pepper and garlic powder in a small bowl. Mix well.
- Coat chicken breasts (can be flattened for faster cooking if desired, but will need to alter cooking time) with spice mixture, pressing spices in with fingers.
- Place seasoned chicken in baking dish.
- Remove the seeds from the bell pepper. Cut the bell pepper and onion into 2-3 inch strips.
- Arrange the vegetable strips and olives around chicken. Spoon salsa evenly over veggies.
- Bake until chicken is cooked through and juices run clear; ~20-25 minutes.
- Serve with tortillas and rice.
