BREAKSTONE'S CREAMY VEGETARIAN BURRITOS
Vegetarian burritos are filled with refried beans, veggie meat substitute and cheese, the baked and topped with more cheese.

Steps:
- Heat oven to 350 degrees F. Mix crumbles, salsa and 1/2 cup sour cream.
- Spread beans down centers of tortillas; top with crumbles mixture and 1 cup cheese. Fold bottom and top of each tortilla about 1 inch over filling; roll up, starting at 1 side. Place, seam-sides down, in greased 13x9-inch dish; cover with foil.
- Bake 25 minutes; sprinkle with remaining cheese. Bake, uncovered, 5 minutes or until cheese is melted. Serve topped with remaining sour cream.

- Heat oil in a large sauté pan over medium. Add bell peppers, white part of the green onions, salt, and pepper and sauté until crisp-tender, about 4 minutes
- Add the corn, zucchini, cumin, chipotle chili powder, and garlic. Continue to sauté until the vegetables are tender, about 5 minutes.
- Add the black beans and cherry tomatoes cook until the tomatoes soften, the beans are heated through, and most of the moisture has evaporated. Stir in green tops of green onions, reserving some to sprinkle on top, and feta cheese.
- Fill and roll burritos. Serve topped with cilantro, additional feta cheese, green onion tops, and cherry tomatoes, as desired. Enjoy immediately.

- To prepare the eggs: Crack the eggs into a medium bowl and whisk them with a fork until the mixture is pale yellow. Stir in the beans and season with the salt and hot sauce.
- To cook the eggs: Melt the butter in a medium-sized skillet (either well-seasoned cast iron or nonstick) over medium heat. Pour in the egg mixture and cook, stirring often, until the eggs are just set, about 2 to 4 minutes. Stir in the cheese and transfer the mixture to a bowl. Then stir in the cilantro and green onion (if you’re serving the burritos right away, reserve a small amount of each for garnish).
- To make sure the tortillas are nice and pliable, quickly run each tortilla under running water (trust me). Warm the tortillas briefly in the microwave (about 10 to 20 seconds) or in a skillet.
- Working with one tortilla at a time, spread about 1/3 cup hash browns on a tortilla about one-third from the edge. Drizzle 1 tablespoon salsa on top of the hash browns. Top with about 1/3 cup scrambled eggs. (You can eyeball the amounts of hash browns and scrambled eggs; just try to divide them evenly between the tortillas.)
