4 ounces ground beef
1 ounce colby jack cheese
3 eggs

Steps:

  • Brown beef in pan, separating into small pieces as it cooks.
  • Beat eggs in small bowl.
  • Grate cheese over ground beef and let it begin to melt in the pan.
  • Add eggs to pan, allowing them to surround the beef and cheese. When the bottom has become done enough, fold omelette and allow the eggs to cook to desired firmness.

4 chicken breasts, boned and split (I always used skinned and I have even used boneless thighs)
3/4 cup almond flour (seasoned with salt, pepper, and fresh garlic pressed)
1/4 cup butter
2 lemons (to taste)
3 ounces capers
1/4 cup parsley

Steps:

  • Pound chicken breasts lightly, dredge in seasoned flour and brown in butter.
  • Pour juice of 2 lemons over chicken.
  • Reduce heat, cover and cook 8-10 minutes (or until cooked through).
  • Add capers and parsley; stir and baste chicken with pan juices.

1/4 cup honey
1 tablespoon vinegar
1 tablespoon dry white wine
1 1/2 cups almond flour or 1 1/2 cups crushed almonds
1 tablespoon olive oil
6 chicken breasts (boneless, skinless, 4-6oz each)

Steps:

  • Preheat oven to 375°F.
  • In shallow bowl, whisk together honey, vinegar and wine. Pour almond flour into separated bowl. Set bowls aside.
  • Spread oil over foil-lined baking pan large enough to hold all chicken pieces in one layer.
  • Roll chicken pieces in honey mixture, then in almond flour; place in pan.
  • Bake for 30 minutes, or until cooked thoroughly.

2 eggs
3 tablespoons water
1/2 teaspoon minced chives
1/4 teaspoon hot pepper sauce
1/8 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon dill weed
1 tablespoon butter
1/4 cup shredded cheddar cheese
1/4 cup salsa
Sour cream and additional salsa, optional

Steps:

  • In a bowl, beat the eggs, water, chives, hot pepper sauce, salt, pepper and dill until blended. In an 8-in. skillet, melt butter over medium-low heat; add the egg mixture., As eggs set, lift the edges, letting uncooked portion flow underneath. Top with cheese and salsa. Fold omelet in half. Cover and cook for 1-2 minutes or until the cheese is melted. Serve with sour cream and additional salsa if desired.
