BREAKFAST EGG SAUSAGE BACON CHEDDAR CASSEROLE

Steps:
- In a bowl, beat the eggs.
- Add the half and half, salt, pepper and ground mustard and whisk well.
- Spread the butter over the bottom and sides of a 13 x 9 inch non-metal baking dish.
- Spread half of the bread on the bottom of the pan.
- Top with half of the sausage, bacon, cheese and green onions.
- Repeat with the remaining bread, sausage, bacon and green onions.
- Pour the egg mixture over top.
- Gently press the bread down into the egg mixture.
- Top with green onions and cheese.
- Cover with plastic wrap and refrigerate for at least 8 hours, overnight is best.
- Remove from the refrigerator 30 minutes before baking.
- Preheat the oven to 350F with the rack in the middle
- Uncover the dish and bake for 35-40 minutes, or until the casserole is set in the center. *Test with a wooden skewer. It should come out almost clean.
- Let stand 5-10 minutes before cutting into serving pieces.
- Serve with warm maple syrup.

- Beat eggs, mustard, onion powder, and black pepper together in a bowl; pour over croutons mixture. Cover dish with plastic wrap and refrigerate, 8 hours to overnight.
- Preheat oven to 350 degrees F (175 degrees C). Remove plastic wrap from dish.
- Bake in the preheated oven until a knife inserted near the center comes out clean, about 45 minutes. Let casserole stand for 5 minutes before serving.

- Heat oven to 375 degrees.
- Coat a 9x13 pan with Pam.
- Melt butter and mix with the potatoes and onion, then line bottom of prepared pan.
- Brown the sausage over medium-high heat, adding mushrooms about half way through.
- Meanwhile, mix cheddar cheese and cottage cheese.
- Layer 1/2 the cheese mixture, then sausage mixture and bacon bits, then the remaining cheese mixture over potatoes in the pan.
- Pour egg beaters evenly over entire pan.
- Bake for about an hour, or until a knife inserted in the center comes out clean.

- Bake at 425°F oven for 5 minutes.

I think this recipe is based on one from a Jimmy Dean ad. If you want you can make it ahead the night before and just put it in the oven for an hour right before you want to serve it. Eggs, Italian sausage, bread, milk, cheddar cheese - yum!

- 1 Heat a skillet on medium high. Break up the sausage into chunks and cook, working in batches if need be, until browned all around. Make sure the chunks of sausage have some space around them or your meat will steam and not brown. Remove the cooked sausage from the pan and let sit on some paper towels on a plate to soak up the excess fat. Crumble into smaller pieces.
- 2 Place bread in a well buttered 9x13 inch baking pan. Sprinkle with cheese. Combine the eggs, milk, dry mustard, onion powder and pepper. Pour evenly over the bread and cheese. Sprinkle sausage and optional ingredients over the top.
- 3 At this stage you can cover and chill overnight, if you want to prepare ahead. If not, let sit for 10 minutes before putting in the oven. Preheat oven to 325 degrees F. Bake uncovered for about one hour. Tent with foil if top begins to brown too quickly.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Meanwhile, heat oil in another skillet over medium heat. Add spinach and saute until just wilted, about 2 minutes. Remove from heat.
