This crackly brittle-like cookie recipe comes from Julie Bransfield of Brandon, Vermont.

Ingredients

3/4 cup unsalted butter, room temperature
1 cup sugar
1/2 teaspoon salt
1/2 teaspoon vanilla extract
2 cups flour
1 cup semisweet chocolate chips (6 ounces)

Steps:

Preheat oven to 350 degrees. Line a 10-by-15-inch rimmed baking sheet with parchment paper; set aside. With an electric mixer, cream butter and sugar until light and fluffy. Beat in salt and vanilla. Reduce speed to low; mix in flour (dough will be crumbly). Stir in chocolate chips.
Press mixture evenly onto prepared sheet. Bake until golden, about 20 minutes. Cool in pan 5 minutes, then transfer to a wire rack to cool completely. To serve, break into pieces with your hands or cut into bars with a serrated knife.

Whisk flour, salt, and baking soda in a medium bowl. Whisk brown sugar, oil, granulated sugar, and melted butter in a large bowl until combined. Add eggs, egg yolks, and vanilla; whisk until smooth. Stir in flour mixture just until combined. Stir in oats and mix-ins.
Press dough into prepared dish. Cut into quarters (cutting all the way through to parchment), then make shallow cuts, creating 12 squares in each quadrant (do not cut all the way through).
Cover dish with plastic wrap and freeze until dough is solid, about 1 hour. Unwrap, separate dough quadrants, and place in 4 freezer bags. Stack bags in freezer until ready to use.
