I found this recipe online and made a few changes to suit what I had available. If you have leftover grilled chicken, use it instead of the pre-cooked chicken strips. I like to use homemade blue cheese dressing. These are very sloppy sandwiches so be sure to have lots of napkins or a wet washcloth handy! Enjoy!

4 garlic cloves, minced
4 tablespoons Frank's red hot sauce
2 tablespoons barbecue sauce
1 teaspoon chili powder
2 (6 ounce) packages pre-cooked southwestern chicken strips
4 hoagie rolls, split
1 cup shredded lettuce
1/4-1/2 cup blue cheese dressing

Steps:

  • In a medium saucepan, melt the butter over medium-low to low heat. Add the garlic and cook for 30 seconds. Add the hot sauce, barbecue sauce, and chili powder and stir to combine.
  • Add the chicken and cook the mixture uncovered over medium-low heat for five minutes, or until heated through.
  • Spoon chicken onto bun bottoms; top with lettuce and blue cheese dressing. Top with bun tops.

1 teaspoon sweet paprika, 1 /3 palm full
1 teaspoon chili powder, 1/3 palm full
A drizzle extra-virgin olive oil
2 tablespoons butter
1/2 cup, 4 ounces, cayenne pepper sauce, preferred brand Frank's Red Hot
Bib or leaf lettuce leaves
4 crusty rolls, split
2 cups sour cream
4 scallions, thinly sliced
1/2 pound blue cheese, crumbled
Small red onion, thinly sliced
8 ribs celery, cut into sticks
2 large carrots, peeled and cut into sticks

Steps:

  • Heat a large nonstick skillet over medium high heat. Season chicken with salt, pepper, paprika and chili powder. Drizzle breast with a little extra virgin olive oil to coat. Pan grill chicken breasts 5 minutes on each side.
  • Heat a metal or oven safe glass bowl over low heat and melt butter in the bowl. Add hot sauce to the butter and combine. When the chicken breasts are done, remove from pan and add to the bowl and coat evenly with hot sauce mixture.
  • Place chicken breasts on bun bottoms and top with crisp lettuce. Combine sour cream, scallions and blue cheese and slather bun tops with blue cheese sour cream. Affix bun tops on sandwiches and serve with remaining sauce for dipping your veggies. Arrange Buffalo Chicken Sandwiches on dinner plates with red onion, celery and carrot sticks.

4 defrosted chicken breasts or 20 frozen chicken wings
1/2 cup flour
1/4 teaspoon paprika
1/4 teaspoon salt
4 whole wheat bread or 4 whole wheat rolls, for sandwiches
olive oil (for frying)
1/4 cup butter, melted (we use I Can't Believe its Not Butter, really no difference in taste)
1/4 cup frank red hot sauce
1/8 teaspoon garlic powder or 1 garlic clove, minced very fine
1/2-1 1/2 teaspoon cayenne pepper
red pepper flakes, depending how much heat you want, to taste
sliced tomatoes
iceberg lettuce
bleu cheese salad dressing (optional)

Steps:

  • You will also need: 1 Gallon size storage bag.
  • Preheat skillet on stovetop.
  • Add enough olive oil to cover the bottom of the skillet.
  • Combine flour, paprika, and salt in storage bag.
  • Give a good shake to coat pieces.
  • Add coated chicken breasts to heated skillet and fry until nicely browned on both sides.
  • Remove chicken breasts and place on paper towels to drain off excessive oil.
  • Combine melted butter, garlic and cayenne pepper in large bowl.
  • To make a mild sauce, use 1/2 teaspoon of cayenne pepper.
  • Read next step if wanting a hotter sauce.
  • Whisk Frank's Red Hot Sauce with the melted butter combo.
  • If dividing the sauce into mild and hot, pour half into another bowl.
  • For the hotter sauce, use up to another 1 teaspoon of cayenne pepper.
  • Add whatever amount of red pepper flakes you may like.
  • I just shake it on to semi cover the buffalo sauce.
  • Place cooked chicken breasts inside sauce and coat both sides.
  • Make sandwich and enjoy!
  • Special Note on wings: Flour coat wings frozen!
  • Deep fry frozen wings for about 20-25 minutes.
  • Sauce coat right before eating!

4 C vegetable oil, for frying
1 pkg Gardein chicken scallopini, thawed in the fridge (4 pieces)
2 sesame seed buns
2 tbsp vegan mayonnaise, divided
1/2 C green leaf lettuce, chopped into 1/4 inch ribbons, divided
1 garlic dill pickle, sliced widthwise into 1/8-inch slices
1/2 C unsweetened nondairy milk
1/2 tbsp apple cider vinegar
1/8 C buffalo style hot sauce
1 tsp cornstarch
1 C all-purpose flour
1/2 tbsp sea salt
1/2 tbsp chili powder
1 tsp garlic powder
1 tsp onion powder
1/2 tsp ground white pepper or ground black pepper
1/2 tsp ground sage
1/2 tsp ground coriander
1/2 tsp smoked paprika
1/2 tsp celery salt
1/4 tsp ground nutmeg
1/4 tsp ground cinnamon
1/4 tsp ground cumin
1/4 tsp ground allspice

Steps:

  • In a medium to large heavy bottom pot, heat up frying oil to a temperature between 325°F to 350°F.
  • Gently press two vegan chicken scallopini cutlets together to double up the thickness and set aside.
  • Prepare your dredging stations. To make the liquid batter, combine nondairy milk with apple cider vinegar and hot sauce in a large bowl. Mix the cornstarch with a small amount of the milk mixture to make a slurry and then add it to the bowl.
  • In another bowl, combine the flour with the sea salt, chili powder, garlic powder, onion powder, ground white pepper, ground sage, coriander, paprika, celery salt, ground nutmeg, ground cinnamon, ground cumin and ground allspice.
  • When the oil reaches 350°F, dunk the vegan chicken into the liquid batter first, letting the excess drip off. Then place it in the dry batter to coat evenly. Place the vegan chicken back into the liquid batter and then back into the flour mixture to double dredge.
  • Fry the chicken separately in 2 batches. Carefully place 1 battered vegan chicken into the hot oil, using a splatter guard if desired. Fry for 3 to 4 minutes, flipping halfway. Remove from the hot oil with tongs and place on a paper towel lined plate to absorb any excess oil. Repeat with the second piece of battered chicken.
  • To assemble your sandwich, on the bottom of the sesame seed bun, spread 1 tablespoon of vegan mayonnaise, add 1/4 cup of lettuce, the vegan chicken, half the pickle slices and the top bun.

2 tbsp. Corn starch
1 tsp. Salt

4 whole eggs
Vegetable oil
12 oz. Buffalo Wing Sauce
Blue cheese crumbles

Steps:

  • Using a heavy metal shallow skillet, fill with vegetable oil ⅔rds full. Place on medium high heat. Meanwhile, in a separate bowl, whisk together flour, cornstarch, salt and pepper. In another bowl, whisk eggs until yolks and whites have combined. Pour buffalo sauce in a bowl or container that is big enough to dip the chicken breasts and set aside.
  • Dredge the chicken breast through the flour mixture on both sides, shake off excess; dredge through the egg mixture on both sides, shake off excess; and dredge through the flour mixture again on both sides and shake off excess. Place in hot oil and cook on both sides for 7-10 minutes on each side, just until gold brown. Remove from heat using tongs and place on plate lined with paper towel and turn on both sides to remove excess oil and while still hot, dredge through buffalo sauce on both sides and place on cooling rack.
  • Once chicken is finished, serve on potato bun with butter lettuce and bleu cheese crumbles to preference.

2 boneless, skinless chicken breasts, cut in half
1/3 cup all-purpose flour
1/4 cup cornstarch
1 1/2 tsp each garlic powder, onion powder, and paprika
1/2 tsp kosher salt
1/2 tsp freshly ground pepper
2 tbsp Frank's Wing Sauce
1 1/2 tbsp almond milk, divided (or skim milk)
1 large egg
oil cooking spray
1/3 cup Frank's Wing Sauce
1 cup coleslaw mix
2-3 tbsp Light Ranch Dressing
4 hamburger buns
extra Light Ranch Dressing
blue cheese crumbles

Steps:

  • Pound the chicken breasts out to even thickness. Pat chicken very dry with paper towels. If you're running out of breading it's mostly likely that your chicken isn't dry enough. Set chicken aside on a cutting board.
  • Create your breading station. In one bowl, mix together flour, cornstarch, and seasonings. In another bowl, whisk together egg and 2 tbsp Frank's Wing Sauce.
  • Whisk 1 tbsp of the seasoned flour into the egg/wing sauce mixture.
  • Coat chicken in seasoned flour mixture. Shake off all of the excess flour. Set chicken aside.
  • Add 1 1/2 tbsp of milk to the seasoned flour blend. Mix the milk through the flour with a fork or your fingers until you see some small clumps of flour in the mixture.
  • Dip flour-coated chicken into egg mixture and let excess drain off almost completely.
  • Place chicken into seasoned flour mixture and press the flour into chicken. Gently shake off excess and set on cutting board. Let set for about 5 minutes. Then spray both sides of the chicken with cooking spray--enough to lightly coat the breading.
  • See below for cooking methods. After the chicken patties are cooked, brush on remaining wing sauce. Serve immediately. If you want to to eat the chicken later, wait until you're ready to eat them to glaze with wing sauce. This will keep the coating crunchy.
  • FOR ALL METHODS, make sure you let the chicken rest for 5-10 minutes before eating. This will set the juices of the chicken and the breading.

Truly crispy baked buffalo chicken tenders with simple blue cheese dip - perfect party fare! I love to serve cold and crunchy carrot and celery sticks with this too.

1 cup panko breadcrumbs
1/2 teaspoon kosher salt
1/4 cup butter
1/4 cup hot sauce (such as Frank's Red Hot or Cholula)
1 small clove garlic (minced)
1 egg
1/3 cup all-purpose flour
1 pound chicken breast tenders
1/4 cup blue cheese (crumbled)
1 small clove garlic (minced)
1/2 cup sour cream
milk (for thinning)
salt and freshly ground black pepper

Steps:

  • Preheat oven to 350°F.
  • Spread panko breadcrumbs in a single layer on a rimmed baking sheet. Bake 3 to 5 minutes, until lightly browned. Transfer to shallow plate immediately to keep them from continuing to cook. Stir in kosher salt.
  • Place an oven-proof cooling rack inside the rimmed baking sheet and spray or brush with oil to keep tenders from sticking. (If you don't have an oven-proof cooling rack, just line the baking sheet with parchment paper)
  • Increase oven temperature to 425°F.
  • Meanwhile melt butter in a small saucepan and transfer to a bowl. Whisk hot sauce into butter to cool it down.
  • Whisk egg and garlic together in a shallow bowl. Add butter and hot sauce mixture and whisk to combine.
  • Spread flour on a shallow plate for dredging.
  • Pat tenders dry with paper towels. Dredge one tender in flour and shake to remove excess. Dip in egg mixture and lift to let excess drip away. Then dredge the tender in toasted panko crumbs, patting crumbs down to be sure they adhere. Transfer to prepared baking sheet. Repeat with remaining tenders.
  • Bake tenders at 425°F for 15 to 18 minutes until breading is crisp and chicken is cooked through but still juicy.
  • Serve with Simple Blue Cheese Dip (recipe below)

Steps:

  • preheat indoor grill to it's recommended setting for chicken breasts.
  • Sprinkle chicken breasts with salt, pepper, cumin, chili powder, and paprika on both sides. drizle with olive oil and rub to evenly distribute. Place on preheated grill, and cook for 3-5 minutes, or until juices run clear (depending on thickness of chicken breasts).
  • While chicken is cooking, combing bleu cheese, sour cream, and sliced scallions. Set aside.
  • In a small sauce pan, combine pepper sauce and butter over low heat, and allow butter to melt.
  • Preheat griddle or non stick skillet over med-med high heat. Slice sandwich rolls, and place them cut side down on the skillet. Allow to toast until lightly browned. Remove from skillet.
  • To assemble, spread the bun bottoms with the bluecheese mixture. Take a chicken breast and coat it in the hot pepper sauce, then place on the bottom bun. Add top bun.

2 chicken breasts
1 1/2 cup buttermilk
peanut oil or vegetable oil for frying
1 1/2 cup flour
1/2 teaspoon salt
1 teaspoon paprika
5 tablespoons Frank's hot sauce , divided
4 tablespoons butter
4 tablespoons ranch dressing
1/2 tablespoon blue cheese
2/3 cup arugula
2 potato buns

Steps:

  • Gather the ingredients.
  • Begin by brining the chicken. Mix the buttermilk and 1 tablespoon of the Frank's hot sauce in a ziplock bag. Add the chicken and refrigerate up to 2 days.
  • When ready to cook heat peanut or vegetable oil to 360 F. Meanwhile, in a shallow dish, mix flour, salt, and paprika together.
  • Remove the chicken from the buttermilk mixture and let excess liquid fall off. Dip the chicken in the flour mixture, then back in the buttermilk, then back in the flour.
  • Add the chicken to the heated oil and fry until cooked through and golden brown, about five minutes, flipping halfway through. Remove from the heat and set on a paper towel. Sprinkle with a little bit of salt and set aside.
  • To make the buffalo sauce, use a small saucepan. Melt the butter and stir in the reamaining Frank's hot sauce.
  • Meanwhile, toast the buns by adding a bit of extra butter to a small frying pan and toast the interior of the bun until it's golden and crispy. Set aside.
  • Smear both sides of the bun with some ranch dressing. Once the chicken has fried, toss it in the buffalo sauce and place it in the sandwich. Top with arugula and crumbled blue cheese. Serve immediately.

3/4 teaspoon cayenne
1 1/4 cups buttermilk
4 brioche or pretzel hamburger buns
1/3 cup pickle juice, plus 16 dill pickle slices
2 tablespoons hot sauce
Kosher salt and freshly ground black pepper
4 boneless, skinless chicken thighs
Vegetable oil, for frying
1 cup vegetable shortening
2 cups self-rising flour
1 1/2 teaspoons paprika
1 teaspoon dry mustard powder

Steps:

  • Combine the pickle juice, 1 tablespoon hot sauce and 1/2 teaspoon salt in a large resealable plastic bag. Add the chicken thighs, seal the bag and shake to evenly disperse. Refrigerate and let marinate for at least 2 hours or up to overnight. When ready to fry, remove the chicken from the marinade and pat dry. (Discard the marinade.)
  • Fill a large, wide Dutch oven or pot with about 2 1/2 inches of oil, then add the shortening. Attach a deep-frying thermometer to the side of the pot and bring to 350 degrees F over medium heat. Line a large baking sheet with paper towels and set aside.
  • Whisk together the flour, paprika, mustard, cayenne, 1/2 teaspoon salt and 3/4 teaspoon pepper in a large bowl. Pour in 1/4 cup of buttermilk and use your fingers to work it in, making the flour shaggy.
  • Whisk the remaining cup of buttermilk and 1 tablespoon hot sauce together in another large bowl.
  • Dip one of the chicken thighs in the buttermilk mixture and let the excess drip off. Add to the flour mixture, making sure to press the chicken into the flour to fully coat. Set on a plate. When the temperature reaches 300 degrees F, turn the heat back on low and continue to fry, turning the chicken as needed for even browning, while adjusting the heat to maintain a temperature around 300 degrees F. Fry until the chicken is a deep golden brown with an internal temperature of about 170 degrees F, about 5 minutes. Remove to the lined baking sheet and sprinkle with a little salt. If you're working in batches, dredge the remaining chicken and increase the heat to 350 degrees F again and repeat the process.
  • Once all the chicken is fried, split the buns and toast in a toaster oven or broiler, cut-side up, until golden. Put 4 pickles on each bottom bun, add a piece of fried chicken and sandwich with the top buns. Serve hot or wrap in foil to transport.
