4 cups thinly sliced yellow summer squash (3 medium)
3 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon cayenne pepper
3/4 cup panko bread crumbs
3/4 cup grated Parmesan cheese

Steps:

  • Preheat air fryer to 350°. Place squash in a large bowl. Add oil and seasonings; toss to coat., In a shallow bowl, mix bread crumbs and cheese. Dip squash in crumb mixture to coat both sides, patting to help coating adhere. In batches, arrange squash in a single layer on tray in air-fryer basket. Cook until squash is tender and coating is golden brown, about 10 minutes.

This recipe was my Grandmother's and it actually won a Blue Ribbon in the Tennessee State Fair! Be sure to use fresh squash, I use butternut but other squash would also be good.

6 pounds butternut squash - peeled, seeded and sliced
1 egg, beaten
½ cup milk
½ cup all-purpose flour
½ cup cornmeal
1 pinch salt
1 pinch ground black pepper
1 pinch garlic salt
1 cup oil for frying

Steps:

  • Combine egg and milk together in a small bowl, mix well.
  • In a second bowl, combine flour, cornmeal, salt, pepper and garlic salt. Dip squash slices first in the egg mixture, then dredge the squash in the dry mixture.
  • Heat 1/2 inch of oil in a deep skillet over medium heat. Fry squash until golden brown.

1 ¼ cups Panko bread crumbs
2 tablespoons cornmeal
⅓ cup Parmesan cheese (grated )
½ teaspoon dried basil
¼ teaspoon dried oregano
⅛ teaspoon cayenne pepper
1 medium zucchini (cut into ¼" slices)
1 egg (beaten)

Steps:

  • Preheat air fryer to 375°F.
  • Combine bread crumbs, cornmeal, parmesan cheese, and seasonings in a small bowl.
  • Toss zucchini with beaten egg. Remove zucchini from egg allowing excess to drip off and dip into breadcrumb mixture gently pressing to coat.
  • Place zucchini in the air fryer in a single layer and cook 8 minutes. Flip and cook an additional 6-8 minutes or until crisp and zucchini is tender.
  • Repeat with remaining zucchini.

1 zucchini medium size, cut into chips
1 eggs beaten
3/4 cup panko crumbs
1/4 cup Parmesan cheese
Olive Oil Spray

Steps:

  • Slice zucchini, on the thinner side
  • In a small bowl, scramble the egg.
  • In another bowl, add the panko bread crumbs & parmesan cheese. Mix to combine.
  • Gently dip the zucchini slices into the egg mixture. Than dip into the panko crumb mixture and coat both sides. You can use your fingers to press the panko crumbs down so they stick better.
  • Spray your crisper basket with Olive Oil Spray.
  • Place zucchini coins in a single layer into your basket. Spray tops of the slices with oil spray. Close the crisping lid. Select AIR CRISP, set temp to 400 degrees, set the time to 12 minutes.
  • After 8 minutes, flip your zucchini slices and spray the tops with olive oil. (Be careful when flipping to not touch the edges of your crisper basket, it will be HOT)
  • Cook the remaining 4 minutes and ENJOY!
