2 ½ cups all-purpose flour
1 tsp sea salt
1 tsp granulated sugar
1 cup salted butter (chilled and cubed)
½ cup ice water
2 chicken breasts (cooked and shredded (about 4-5 cups))
2 red potatoes (diced (about 2 cups))
4 TBS butter (divided)
½ cup water
1 ½ TBS minced garlic
3 carrots (diced)
2 stalks celery ((1 cup), diced)
½ cup onion (diced)
Salt and freshly ground pepper
½ cup frozen peas
½ cup frozen corn
2 cups water
2 ½ TBS better than bouillon chicken base
1 ½ cups 2% milk
¾ cup all purpose flour
½ tsp onion powder
½ tsp sea salt
¼ tsp black pepper
½ tsp garlic powder
1 TBS heavy cream (or whole or 2% milk)
1 egg yolk

Steps:

  • Add flour, sea salt, sugar, butter and ice cold water to the container of a food processor fitted with the "S" blade.
  • Process until coarse crumbs form.
  • Dump the dough mixture out onto a work surface and form it into a ball. Then divide it into two equal portions and form those portions into two discs.
  • Wrap each disc in plastic wrap and chill in the fridge for at least 1 hour, or overnight.
  • After crust has chilled and you are ready to make the chicken pot pie:
  • Preheat oven to 425 degrees F.
  • In a medium bowl, whisk together flour, onion powder, garlic powder, garlic salt and pepper.
  • Add milk and whisk until combined, set aside.
  • In a 4-quart pan over medium heat, boil water.
  • Add chicken bouillon and whisk until dissolved.
  • Add milk/dry ingredient mixture to boiling water/bouillon, whisk to combine.
  • Cook over medium heat, stirring constantly, until thick (about 3 minutes).
  • Remove from heat, cover and set aside.
  • Add potatoes, 2 TBS butter and garlic and water to a large, nonstick saucepan and cover. Cook covered for 10 minutes, or until the potatoes are soft, stirring occasionally.
  • Add carrots, onion, celery and additional 2 TBS butter. Cover and cook for 10 minutes, or until soft, stirring occasionally.
  • Add peas, corn, chicken and sauce. Stir until combined. Remove from heat and set aside.
  • Roll out both discs of dough.
  • Fit one disc to the bottom of the pie plate. Roll out the second to be used as the top.
  • Place bottom dough into the pie plate.
  • Put filling on top of the crust.
  • Add the other crust on top, pinch the edges together and cut an "X" in the top.
  • Whisk together the egg yolk and heavy cream.
  • Brush it all over the crust with a pastry brush.
  • Use a pie crust shield to protect the outer crust.
  • Bake at 425 for 30 - 35 minutes on the lower rack of your oven, until the crust is golden brown and the filling is bubbling. Remove the pie crush shield in the last 5 minutes of baking if the outer crust is not browning.
  • Remove from the oven and place the chicken pot pie on a wire cooling rack. Cool for at least 10 minutes before serving.

2 celery ribs, sliced
1/2 cup chopped onion
3 cups frozen mixed vegetables (about 15 ounces)
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/2 cup 2% milk
1/2 teaspoon onion powder
1/4 teaspoon garlic salt
1/8 teaspoon dried thyme
1/8 teaspoon pepper
2 cups cubed cooked chicken breast
4 tubes (6 ounces each) small refrigerated flaky biscuits (5 count)

Steps:

  • Preheat oven to 375°. In a large skillet, heat butter over medium heat; saute celery and onion until tender, 4-5 minutes. Stir in vegetables, soup, milk and seasonings; heat through, stirring occasionally. Stir in chicken; remove from heat. , On a lightly floured surface, roll each biscuit into a 5-in. circle. Press each onto the bottom and up sides of a greased muffin cup, allowing edges to extend above cup. Fill with about 3 tablespoons chicken mixture. Pull up edges of dough and fold partway over filling, pleating as needed., Bake until golden brown and filling is bubbly, 15-18 minutes. Cool 1 minute before serving.

2 cups milk, warmed
1 tablespoon white sugar
1 tablespoon active dry yeast
2 tablespoons butter, melted
1 egg
1 teaspoon salt
6 cups all-purpose flour
1 tablespoon butter
½ medium head cabbage, finely chopped
6 hard-cooked eggs, chopped
salt and pepper to taste

Steps:

  • Place 1/2 cup milk in a cup or small bowl. Stir in sugar and sprinkle yeast over the top. Set aside until foamy, about 10 minutes. Pour the remaining milk into a large bowl.
  • Add the melted butter, egg, salt and 1 cup of flour to the large bowl with the milk. Stir in the yeast mixture. Mix in flour 1 cup at a time until dough pulls away from the sides of the bowl and doesn't stick to your hands. Cover the bowl loosely and set in a warm place to rise for about 1 hour. Dough should almost triple in size.
  • While you wait for the dough to rise, melt the remaining butter in a large skillet over medium heat. Add cabbage and cook, stirring frequently, until cabbage has wilted. Mix in the eggs and season with salt and pepper. Continue to cook, stirring occasionally until cabbage is tender. Set this aside for the filling.
  • Place the risen dough onto a floured surface and gently form into a long snake about 2 inches wide. Cut into 1 inch pieces and roll each piece into a ball. Flatten the balls by hand until they are 4 to 5 inches across. Place a spoonful of the cabbage filling in the center and fold in half to enclose. Pinch the edges together to seal in the filling.
  • Preheat the oven to 400 degrees F (200 degrees C). Line one or two baking sheets with aluminum foil. Place the pirozhki onto the baking sheet, leaving room between them for them to grow.
  • Bake for 20 minutes in the preheated oven, or until golden brown.

1/4 cup finely chopped celery
6 tablespoons butter, divided
3 tablespoons all-purpose flour

  • In a large saucepan, saute onion and celery in 3 tablespoons butter until tender. Combine flour and 1 cup milk. Gradually add to pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Add parsley, seasonings and chicken. Remove from the heat. Chill until completely cooled. , Shape chicken mixture into six patties, using about 1/3 cup mixture for each patty. Place crumbs and remaining milk in separate shallow bowls. Roll patties in crumbs, then dip into milk; roll again in crumbs. , In a large skillet, cook patties in remaining butter for 3 minutes on each side or until golden brown. I found this recipe from Ingham's. I prefer chicken breasts to use, but thigh's are listed in the ingredients. I actually use left over chicken also and this works really well and makes for an even quicker meal. Just cut out the cooking the chicken and move onto the next step.

4 medium round bread rolls
2 tablespoons olive oil
1 small brown onion, finely chopped
100 g button mushrooms, thickly sliced
350 g chicken thigh fillets, finely diced
45 g cream of chicken soup mix
300 ml light thickened cream

Steps:

  • Preheat oven to 180ºC. Line a baking tray with baking paper. Slice the top off the bread rolls. Set aside.
  • Using a teaspoon, gently remove bread from the inside of the rolls, leaving a 2cm thick crust on base and sides. Brush inside of rolls and underside of tops with 1 tablespoon of oil.
  • Place on prepared baking tray. Bake for 5 to 10 minutes or until crisp.
  • Heat remaining oil in a non stick frying pan over a medium heat. Add onion and cook for 3 to 4 minutes or until soft. Add chicken. Stir until well combined. Cook for 4 minutes or until just cooked.
  • Sprinkle packet of soup mix over chicken and stir until well combined. Remove pan from heat.
  • Slowly add cream and milk, stirring constantly. Return to heat and bring to the boil, stirring constantly. Reduce heat to low and simmer for 1 to 2 minutes or until sauce has thickened. Stir through parsley if using.
  • Spoon chicken mixture into prepared bread rolls. Bake for 5 minutes or until heated through. Serve.

The cornmeal and buttermilk biscuits that bake on top of the filling are the best of both worlds: crisp and flaky on top and soft and dumpling-like on the bottom. A hint of sweetness in the biscuits makes them reminiscent of classic American cornbread. This is not a recipe for rushed weeknights, though you can save time by making the biscuit dough and prepping the vegetables in advance (see Tip).

1 1/2 to 2 pounds bone-in, skin-on chicken breasts (2 breasts)
Olive oil
Kosher salt and black pepper
3 tablespoons unsalted butter
3 large carrots, peeled and cut into 1/2-inch dice (about 1 1/2 cups)
4 large celery stalks, trimmed and cut into 1/2-inch dice (about 1 1/2 cups)
1 medium yellow onion, chopped (about 1 1/2 cups)
2 teaspoons minced fresh rosemary
3 tablespoons all-purpose flour
1 1/2 cups chicken stock
1/2 cup whole milk
3 tablespoons dry sherry
2 tablespoons minced fresh chives or parsley
1 egg beaten with 1 tablespoon water, for egg wash
1 1/4 cups/160 grams all-purpose flour
3/4 cup/105 grams yellow cornmeal
2 tablespoons granulated sugar
1 tablespoon baking powder
3/4 teaspoon kosher salt
5 tablespoons/70 grams chilled unsalted butter, diced
3/4 cup/180 milliliters buttermilk, shaken

Steps:

  • Heat the oven to 400 degrees and line a sheet pan with parchment paper.
  • Pat the chicken breasts dry and place them on the prepared sheet pan. Rub all over with olive oil and sprinkle generously with salt and pepper. Roast until just cooked through, 35 to 45 minutes, depending on the size of the breasts. Set aside until cool enough to handle, then discard the skin and bones and shred the meat into bite-size pieces.
  • While the chicken roasts, begin making the biscuits: In a large bowl, combine the flour, cornmeal, sugar, baking powder and salt. Whisk until well combined. Add the butter, and working quickly, cut the butter into the flour using your fingers or a pastry cutter, until it forms crumbles about the size of peas. Switch to a fork, and stir constantly while adding the buttermilk in a slow, steady steam. Mix just until a wet, sticky dough forms. (Do not overmix!) Scrape the dough onto a piece of plastic wrap, pat it into a mound, then wrap and chill it in the refrigerator while you make the filling.
  • In a 10-inch cast-iron skillet, melt the 3 tablespoons butter over medium heat. Add the carrots, celery, onion and rosemary, season with salt and pepper, and cook, stirring occasionally, until tender, 10 to 12 minutes.
  • Add the flour and cook, stirring constantly, for 30 seconds, or until no white clumps of flour are visible. Add the chicken stock, milk, 1 1/2 teaspoons salt and 1/2 teaspoon pepper, and bring to a simmer over medium heat. Turn the heat to low and simmer, stirring often and scraping the bottom of the pan, until very thick, 7 to 10 minutes; remove from heat. Add the sherry, chives and chicken, and stir until well combined.
  • Unwrap the chilled biscuit dough and place it on a well-floured surface. Working quickly (you want the biscuits to be as cold as possible when they go into the oven) lightly press the dough with your hands into a rectangle about 3/4-inch thick. Fold the dough in half and press once more to a 3/4-inch-thick rectangle. Cut out biscuits with a 2 1/2- to 3-inch-round cutter and arrange them on top of the filling. (You should have about 10 biscuits.)
  • Brush the tops of the biscuits with the egg wash. Place the skillet on a sheet pan to catch any drips, and bake, uncovered, for 20 to 30 minutes, until biscuits are puffed and golden. Cool for 10 minutes to let the filling thicken slightly, then serve.

2 (12 ounce) cans crescent roll dough
1 cup cooked chicken
1 cup frozen peas and carrot
1/2 cup condensed cream of chicken soup
4 ounces cream cheese
1/2 cup cheddar cheese

Steps:

  • Preheat your oven to 375 degrees.
  • In a large bowl, combine the frozen veggies, cheddar cheese, and chicken. In a separate bowl mix together the cream cheese and the condensed soup. Add it to the chicken-veggie mixture.
  • Spread the crescent roll dough out on a silicon mat or parchment paper and place that on a baking pan. Leaving three inches in the middle, make cuts down the side of the dough an inch apart on both sides.
  • Spread the chicken-veggie-soup mixture down the middle of the dough. Take a strip of dough from one side and fold it over the middle mixture. Then take a strip from the other side and fold it over the middle. Continue down the dough, alternating sides until it is completely folded over.
  • Pinch the ends of the dough to keep the filling inside while it bakes.
  • Bake for 20 to 25 minutes so that the top is nice and golden brown.
  • Let stand about 10 minutes before cutting in to it.
