GRILLED BRATWURST WITH CARAMELIZED ONIONS
Steps:
- Combine the hard cider, 1 cup of the broth and the bratwurst in a large saucepan, bring to a simmer and gently simmer over low heat for 15 minutes.
- Meanwhile, heat the oil and butter in a large skillet over medium heat. Add the onions, sprinkle with 1 teaspoon salt and 1/4 teaspoon pepper and cook until just tender, about 5 minutes. Add the remaining 1/2 cup broth and simmer until the onions are browned and completely soft, about 5 minutes more. Keep the onion mixture warm while you cook the bratwurst.
- Preheat a grill to medium-high heat or heat a grill pan over medium-high heat.
- Transfer the bratwurst to the grill or grill pan and cook, turning occasionally, until browned, about 10 minutes. Lightly grill the pretzel rolls, cut-side down. Serve the bratwurst topped with the onions and with the pretzel rolls and mustard on the side.

Steps:
- Wash and dry jalapeno, slice thinly.Bring brats to room temperature if you have time. Brush a heavy skillet preferably cast iron, with a very light coating or oil.
- Over medium heat, brown brats for about 5 minutes total. Once you are happy with the browning. Carefully fill the pan with about ½ cup of water. Reduce heat to medium-low, cover and simmer for 10-12 minutes or until cooked through. You want to see clear juices running and most of the pink gone from the brat.
- Spread a thin layer of mayonnaise on the buns and heat in the same skillet you cooked the brats in. Once the buns are golden brown, remove and add some more mayonnaise.
- Top with a piece of lettuce, the cooked brat, 2 Tablespoons of pickled red onion, a pinch of hot pepper flakes (leave out if you have heat sensitive eaters), and a few slices of fresh jalapeno. Awesome!

Steps:
- Preheat the oven to 400°F (204°C). Slice the onions into 1/2 inch wide strips.
- Add the bratwurst to a large cast iron skillet or any other oven safe baking dish. Top with the sliced onions and pour the beer on top. Cover the pan tightly with tin foil.
- Set the pan in the preheated oven and cook for 20-22 minutes. Carefully peel back the foil and use a meat thermometer to test that the internal temperature of the brats has reached at least 160°F, per USDA.
- Turn the broiler on. Use a spatula or tongs to push the softened onions off the top of the brats. Set under the hot broiler for about 2-3 minutes, or until the brats are beginning to brown. Turn the brats and set back under the broiler for another 2-3 minutes to brown on the other side.
- Carefully assemble your brats on toasted rolls (if using), top with the cooked onions, and serve with sauerkraut and mustard.

BRATS, ONIONS, AND APPLES
A very hearty meal that's good in the autumn or winter. Lots of flavor and very much a comforting meal after a long day in the cold. It pairs well with coleslaw.

SAUTéED BRUSSELS SPROUTS WITH SAUSAGE AND PICKLED RED ONION
There's a special place at the dinner table for anything cooked in bacon or sausage fat, but brussels sprouts pair especially well with that kind of smoky, fatty flavor. Caramelized in sausage drippings, the sprouts stay lighter than expected thanks to some quickly pickled red onion and lots of fresh parsley.

Steps:
- Toss onion in vinegar and season with salt and pepper. Mix thoroughly and set aside.
- Heat 1 tablespoon oil in a large skillet (at least 12-inches) over medium-high heat. Add sausage, using a wooden spoon or spatula to break it up into smaller pieces. - Add remaining 2 tablespoons olive oil to the skillet along with brussels sprouts. Season with salt and pepper and shake skillet so that most of the sprouts land cut-side down, turning some over with a fork, if necessary. Cook, without stirring, until brussels sprouts are well browned on one side, 5 to 8 minutes. Shake skillet to continue to brown sprouts all over, another 5 to 8 minutes. Add sausage back into skillet and stir to combine.
- Remove from heat and add onions and any vinegar left over, tossing to coat. Season with salt and pepper, add parsley and serve.

BRATS WITH GLAZED RED ONIONS
Being German, fall reminds me of Oktober fest, brats and beer! BUT brats also remind me of football games and the north woods too! This is a different type of brat recipe, esp with the addition of the marinated/grilled onions. From a grilling website. Prep time is marinating time and these can be done on a tabletop grill, outside or over the campfire.
