CLASSIC CANDIED YAMS RECIPE
Candied yams are a classic Southern side dish, especially when it comes to Thanksgiving. Even though Mama makes the same sweet potato casserole every year, she won't be offended if you bring these candied yams once she tries them. Lightly spiced and oh-so-sweet, these candied yams will become a mainstay in your Thanksgiving recipe lineup. Cinnamon, nutmeg, and vanilla combine with sweet potatoes for the most comforting holiday dish you can serve. One of the best parts about this side dish is that it only has 20 minutes of hands-on time, and you can assemble the dish up to 3 days in advance. Make the recipe through step 3, store it covered in the refrigerator, then bake it Thanksgiving Day. With all the other dishes you have to worry about on Thanksgiving, these candied yams will be a breeze. We recommend serving them straight from the oven while the syrup is still hot.

Steps:
- Preheat oven to 350°F. Layer sweet potato slices in a lightly greased 13- x 9-inch baking dish.
- Melt butter in a small saucepan over medium. Add sugars, stirring until well combined. Stir in cream; cook, stirring often, just until mixture comes to a simmer, 5 to 7 minutes. Remove from heat; stir in vanilla extract, cinnamon, salt, and nutmeg.
- Pour sugar mixture evenly over sweet potatoes, and cover with lightly greased aluminum foil.
- Bake, covered, in preheated oven, about 40 minutes. Uncover and gently stir potato mixture. Bake, uncovered, until potatoes are tender, 25 to 30 more minutes. Transfer potatoes to a serving bowl with a slotted spoon; pour syrup over potatoes. Serve immediately.
GRANDMA'S CANDIED YAMS

Steps:
- Preheat the oven to 375 degrees F.
- Cut off the ends of the yams, then peel and cut the yams into 1/2-inch-thick circles. Add to a 2-quart baking dish. Set aside.
- In a medium pot, melt the butter over medium heat. Add the brown sugar and stir until thoroughly blended. Stir in the pineapple juice, cinnamon, vanilla and cloves. Taste the mixture to make sure it's sweet to your liking and pour over the yams. Spread the strawberry preserves on top of the yams.
- Cover the dish with aluminum foil and bake until the yams are semi-tender, about 40 minutes. Remove the foil and bake until the yams are caramelized, 20 to 25 minutes more.
- Plate and serve hot. And don't forget to pour the sauce from the baking dish on top!
BRANDIED CANDIED SWEET POTATOES
This has been a Thanksgiving favorite of ours for many years because it is different from the many mashed sweet potatoes recipes.

- Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil. Cook 15 minutes, or until tender but firm. Drain, and set aside.
- In a large skillet over low heat, melt the butter. Stir in the brown sugar, brandy, and salt. Add the sweet potatoes, and stir to coat. Cook, stirring gently, until sweet potatoes are heated through and well glazed.

Steps:
- Preheat oven to 350°F.
- Boil the four medium yams with skins until tender. Then drain and peel the yams. Either slice or cut them into cubes and place in a buttered casserole dish.
- Boil the brown sugar, water, butter and raisins. Once the sugar is fully melted and the mixture has a good boil add the brandy and remove from heat. Pour mixture over the yams.
- Then add a layer of the small marshmallows on top of the yams (may add sliced almonds to your liking).
- Bake at 350°F for 30 minutes uncovered. Be sure to baste occasionally.

- 1/2 c packed brown sugar.
- 2 tbsp cold butter.
- 2 tbsp all purpose flour.
- 1/4 tsp ground cardamon or ground cinnamon.

Steps:
- Cut yams into large cubes and steam until fork inserts easily.
- Combine the sauce ingredients in a sauce pan and gently heat until butter and brown sugar are melted.
- Place yams into a casserole dish and cover with sauce.
- Bake for 45 minutes at 350 degrees.
- Note: You can make this a day ahead which I find is actually better than when cooked the same day that they are served as the yams become somewhat carmelized.
- If you would like to make the dish a day ahead bake for 30 minutes at 350 degrees, let cool and refrigerate. The next day remove from the fridge early in the day to allow them to come to room temperature, then bake for 30 minutes before you want to serve them.

- Spread yams onto bottom of 13x9-inch pan sprayed with cooking spray.
- Melt butter in small saucepan on medium heat. Add sugar, orange juice and cinnamon; mix well. Cook 5 min. or until mixture comes to boil and sugar is completely dissolved, stirring constantly. Pour over yams; cover.
