Steps:
- Preheat the oven to 425 degrees F (220 degrees C). Lightly grease a baking sheet.
- In a large bowl, mix the flour, oats, sugar, baking powder, salt, and currants. Make a well in the center. In a small bowl, beat egg until frothy, and stir in melted butter and milk. Pour into the well, and mix to create a soft dough. Pat dough into two 1/2 inch thick circles. Place on the prepared baking sheet. Score 8 wedges into each circle of dough.
- Bake 15 minutes in the preheated oven, until risen and browned. Split wedges, and serve warm.

OATMEAL SCONES
Another good on the go breakfast, or enjoy with tea. Note: These are very good adding a tablespoon of orange zest along with cranberries.

Steps:
- Preheat oven to 375 degrees.
- Combine first 5 ingredients in a food processor or bowl.
- Add butter and process until it resembles coarse meal.
- Add oats, currants and buttermilk and stir mixture until dough just sticks together.
- (DO NOT over mix) Transfer to a floured work surface and knead about 5 times.
- Roll out dough to 1 inch thickness.
- (in circle) cut into pie shaped pieces or cut with cookie cutter.
- Arrange on a slightly greased baking sheet.
- Gently brush scones with egg and bake 20 minutes or until golden.
- Serve with Apple Butter.
- Enjoy.

SCOTTISH BRAN SCONES RECIPE
Easy, tasty Scottish bran scones recipe. Made to a traditional family recipe and best served with butter and home made jam.

- Pre-heat oven to 200C fan.
- Sieve the flour, baking powder and caster sugar into mixing bowl.
- Add the wheat bran.
- Add the butter cubes to the mixing bowl and using your fingertips rub the butter into the flour mixture to form a breadcrumb mixture.
- Gradually add the milk, mixing into the flour mixture to form a light elastic dough.
- Roll out the dough on a lightly floured surface to about 1cm thick and then using a round 2"-3"/5cm - 7.5cm pastry cutter, cut out the scones one by one.
- Place the scones on a lightly greased baking tray and brush the tops lightly with milk,
- Bake in the oven for approximately 10 - 15 minutes. Check they are cooked before removing by inserting a skewer / toothpick into the middle of a scone, which should come out clean if they are ready.

CRAN OAT SCONES

- Preheat the oven to 375 degrees F.
- In a bowl, combine the flour, oatmeal, sugar, baking powder, baking soda, and salt. Using a pastry blender, cut the cold butter into the dry ingredients until the dough is crumbly. Fold in the cranberries. Add the buttermilk and stir lightly with a wooden spoon until the dough comes together to form a ball. (The dough will be sticky, but resist the temptation to overwork it.)
- On a lightly floured surface, pat the dough into a large circle about 2 inches thick. Cut the dough into wedges. With a spatula, transfer the wedges to a baking sheet lined with parchment and bake for 22 minutes, or until the edges are lightly browned. Cool on a wire rack. Best served warm and on the day they are made.

- Combine cereal, oats, raisins and yogurt. Let stand to soften.
- Combine flour, sugar, baking powder and soda, salt, cinnamon, and nutmeg in a large bowl.
- Cut in margarine until crumbly, then add cereal mixture and stir until just moistened.
- Turn onto a floured surface and knead 10 times or until smooth.
- Flatten to a 9 inch circle or 2 x 6 inch circles. Sprinkle with sugar and cinnamon.
- Place on a greased cookie sheet and bake at 425 F for 20 minutes, then cut into wedges!
SCOTTISH BRAN SCONES
A soft scone eaten at breakfast with just butter. Delicious. I have to make them now as it is very hard to find a good baker these days. Supermarkets have taken over in scotland.

- Mix in butter with a fork.
- Use as much milk as required to make a very soft dough.
- Shape into a thick round.
- Score into a quarter; dust with flour.

BANANA BRAN SCONES--COOKING LIGHT
These are tasty little nuggets from Cooking Light. They're not too sweet but just right. I think next time I make them I will add dried cranberries or some nuts, as IMO they need some more texture. When I made them I used white wheat flour and regular milk, and I'm sure buttermilk would be lovely. II also sprinkled with cinnamon sugar instead of plain granulated, and I bet turbinado would be nice as well.

- Preheat oven to 400°.
- Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour and next 6 ingredients (through cinnamon) in a food processor; pulse until mixture resembles coarse meal.
- Combine banana and brown sugar in a medium bowl; let stand 5 minutes. Add flour mixture and 1/4 cup buttermilk alternately to banana mixture, stirring just until moist.
- Turn dough out onto a lightly floured surface; knead lightly 1 1/2 minutes with floured hands. Pat dough into a 6-inch circle on a baking sheet lined with parchment paper. Cut dough into 8 wedges, cutting into, but not through, dough. Brush 1 1/2 teaspoons buttermilk over surface of dough; sprinkle with granulated sugar. PUMPKIN-OAT SCONES
A new fall favorite in our house, adapted from both an oat scone recipe and one for pumpkin scones similar to that from a well-known coffee shop. I'm not sure if quick-cooking oats would work; try them at your own risk! If you have Penzeys® Baking Spice, I like to add 1 teaspoon of that and also use a pinch in the icing.

- Preheat an oven to 425 degrees F (220 degrees C).
- Whisk the flour, oats, baking powder, salt, 1 teaspoon cinnamon, nutmeg, 1/2 teaspoon ground ginger, and cloves together in a mixing bowl. Cut the cold butter into the mixture with a pastry blender or fork until the mixture resembles coarse crumbs the size of peas or smaller. Whisk the pumpkin puree, 2 tablespoons cold milk, the egg, and vanilla together in a small bowl; fold into the flour mixture until just blended.
- Divide dough into two sections on a lightly floured surface. Gather each into a ball and knead about 10-12 times. Flatten balls to 1/2-inch thickness on a non-stick baking sheet. Leave about 2 inches between the rounds. Cut rounds into sixths with a butter knife, but do not separate the wedges.
- Bake in the preheated oven until the bottoms and edges are just golden brown, 12 to 16 minutes. Set aside to cool.
- While the scones cool, mix the confectioners' sugar, 1 tablespoon milk, remaining pinch of ginger, and dash of cinnamon together in a small bowl. Add more milk to thin the frosting as needed. Pour the frosting into a sealable plastic bag. Snip off a corner of the bag and drizzle icing over the cooled scones in a zigzag fashion. The icing will harden as it cools.

- Combine all-purpose flour, whole wheat flour, bran, oat flour, baking powder, baking soda, salt, cinnamon and brown sugar in the bowl of a food processor, pulse to mix. Toss in chopped dates, pulse 2-3 times.
- Toss in cold, chopped butter, pulse until crumbly. Or if no food processor, cut in butter with pastry blender. Slightly beat the egg, pour into the spout of the food processor, pulsing on low several times. With food processor on low, add buttermilk until dough ball forms.
- Remove from bowl and place on floured surface, kneading several times. If dough is too sticky, add a few tablespoons of oat flour and knead into the scones.Pat into a round disc, about 1 inch thick, or two smaller discs.
- Cut into desired sizes, easily makes 12 scones, more if you make smaller triangles. Transfer to a baking sheet (ungreased), if desired you may separate completely and bake as separate scones. I think they are more moist if you keep the disc together for baking. Sprinkle with demerara sugar before baking, if desired.
