Braised Red Cabbage with Blackberries image

A sweet red cabbage side dish that is simple to cook. Just throw all the ingredients in a pan and simmer for just over an hour! Serve with your roast dinner or festive meal.

Number Of Ingredients 12

1 red cabbage, thinly sliced
1 red onion, thinly sliced
2 bay leaves
50g butter
5 tablespoons white wine vinegar
3 tablespoons soft brown sugar
1 glass red wine
Zest and juice of 1 large orange
1 eating apple, peeled, cored and diced
50g blackberries
1/2 teaspoon black pepper
1/2 teaspoon of salt

Steps:

  • Place all ingredients into a large saucepan and bring to the boil on a medium heat
  • Mix well and leave to simmer for approx 60-75 minutes, stirring occasionally. If it is looking too dry during cooking, add in a little more wine or water.
  • Add salt and pepper to taste. Serve.

1 tablespoon butter
1 red cabbage, sliced 1/4 inches thick
Salt and freshly ground black pepper
1/2 red onion, sliced
2 sweet apples, quartered and sliced thin
6 allspice berries, lightly crushed, wrapped in cheesecloth and tied
1/3 cup red wine
1/3 cup red wine vinegar
1/4 cup molasses or cane syrup (the cane syrup is lighter in color)

Steps:

  • Melt butter in a deep saute pan with a cover. Once the butter's melted, and the foam's subsided, add the cabbage and stir to coat.
  • Add salt and pepper, to taste, red onion, apple, and allspice packet, cover the pan and lower the flame to low-medium, turning once in a while, until the cabbage is soft, but still slightly firm, about 15 minutes.
  • Remove lid and deglaze with the red wine, bring up flame and cook, uncovered, until the wine is reduced by at least half. Add the red wine vinegar reduce a little, add the molasses or cane syrup and toss to coat. Cook 2 to 3 more minutes, remove allspice packet, season with salt and pepper, to taste.

2 medium yellow onions, thinly sliced
1 cinnamon stick
2 bay leaves
4 teaspoons kosher salt
1 large or 2 small heads red cabbage (about 3 pounds), cored and thinly sliced
1 Granny Smith apple, cored and cut into bite size pieces
2 to 3 cups low-sodium chicken broth
1/2 cup red wine vinegar
2 tablespoons sugar
1/2 teaspoon freshly ground black pepper

Steps:

  • Cook the bacon until crisp, over medium heat in a large Dutch, that has a lid, about 4 minutes. Add the onions, cinnamon, bay leaves, and 1 teaspoon of the salt. Cover, and cook, stirring occasionally, until the onion is tender, about 8 minutes.
  • Increase the heat to medium-high, add the cabbage and cook, stirring, until wilted, about 8 minutes. Add the apple, broth, vinegar, sugar, the remaining salt, and pepper, and cook, covered, stirring occasionally, until the cabbage is tender, about 1 hour.
  • Uncover; bring to a boil, and cook, stirring, until the liquid has reduced to a sauce-like consistency, about 5 minutes. Transfer to a serving dish and serve.

3 slices maple bacon
1 small shallot, peeled and sliced
1/3 cup balsamic vinegar
1/2 head red cabbage, cored and thinly sliced
1 cup chicken stock
Kosher salt and freshly cracked black pepper

Steps:

  • Heat a large Dutch oven over medium-high heat. Add the bacon and the shallot slices and cook until just light golden, about 3 to 4 minutes. Pour in the vinegar, scraping the pan to release any browned bits and simmer for 2 to 3 minutes. Add the cabbage, tossing to coat and soften slightly; pour in the stock and season with lightly with salt and pepper. Reduce the heat to a simmer, cover and cook, stirring occasionally until the cabbage is very soft, about 30 minutes.
  • Remove the lid and cook, stirring occasionally, to allow the moisture to evaporate and cooking liquid to thicken, about 5 minutes. Transfer to a serving dish, top with crumbled bacon and enjoy!

8 juniper berries
1 cinnamon stick

3 pounds red cabbage (about 1 large or 2 small heads), cored and shredded
1 granny smith apple, cored and diced
1 1/2 cups red wine
1 1/2 cups water
1/2 cup red wine vinegar
1 tablespoon sugar
4 teaspoons kosher salt
Freshly ground black pepper

Steps:

  • Heat a large pot, with a tight-fitting lid, over high heat. Add the bacon and cook, stirring, until crispy and its fat has rendered, about 3 minutes. Lower the heat to medium, add the onion, allspice, juniper berries, cinnamon, and bay leaf and cook, covered, stirring occasionally, until the onion is soft and the spices are fragrant, about 7 minutes.
  • Increase the heat to medium-high, add the cabbage and cook, stirring, until wilted, about 8 minutes. Add the apple, wine, water, vinegar, sugar, and the salt, season with pepper, and cook, covered, stirring occasionally, until the cabbage is tender, about 1 hour.
  • Uncover; bring to a boil, and cook, stirring, until the liquid has reduced to a sauce-like consistency, about 5 minutes. Season generously with pepper. Transfer to a serving dish and serve.

1 sliced red onion
70g soft light brown sugar
70ml cider vinegar
150ml red wine
a large knob of butter
1 cinnamon stick

Steps:

  • Quarter the red cabbage and remove the core, then finely shred. Tip into a large pan with the red onion, brown sugar, cider vinegar, red wine, butter and cinnamon stick and season well. Bring to a simmer, then cover with a lid, lower the heat and cook for 1 1/ 2 hrs, stirring every so often. Remove the lid and continue cooking for 30 mins until tender. Will keep for two days, or can be frozen for two months. Reheat until piping hot.

1 cup finely chopped onion
1/2 cup raisins
5 black peppercorns, crushed
2 juniper berries, crushed

  • Melt butter in a large, deep skillet over moderately high heat. Add shredded cabbage, onion, raisins, black peppercorns, and juniper berries and cook and stir until cabbage is wilted, about 15 minutes. Add red wine, red wine vinegar, grenadine, orange zest and blackberry jam. Bring to a boil, then reduce heat and simmer until liquid is reduced and cabbage is tender and glazed, stirring frequently. 1 tbsp butter
1 red onion , thinly sliced
1 small red cabbage (about 600g/1lb 5oz), cored and thinly sliced
5 tbsp balsamic vinegar
3 tbsp soft brown sugar
1 tsp mixed spice
2 tbsp redcurrant jelly
4 venison steaks (about 175g/6oz each)
175g blackberry
2 tbsp crème de mure or crème de cassis (optional)
1 tbsp oil
mashed potato , to serve

Steps:

  • Melt the butter in a large saucepan, add the onion and cook slowly for 10 mins until really soft. Add the cabbage, vinegar, sugar, mixed spice and half the jelly along with 100ml water, then season. Bring to the boil, stir, then cover with a lid. Cook for 40 mins over a medium-low heat. Meanwhile, remove the venison from the fridge to come to room temperature.
  • Add the blackberries and crème de mure or crème de cassis, if using, to the cabbage mixture. Continue cooking, uncovered, for 5-10 mins until the liquid has evaporated and the blackberries have broken down slightly.
  • Heat a frying pan until hot. Rub the venison steaks with the oil, then season. Cook in the hot pan for 4-5 mins on each side, depending on thickness, for medium-rare. In the final 1 min of cooking, add the remaining jelly to the pan and spoon it over the steaks as it melts. Remove the steaks from the pan and leave to rest. Serve the cabbage and venison with mashed potato.

Huntsman's Braised Red Cabbage With Blueberries image

I adapted this from a recipe I saw at Mediterranean Cooking in Alaska. I had been looking for ideas for red cabbage with mushrooms since I had both on hand. I was intrigued by their recipe, and adapted this one out of that, with some seasoning changes. It is a variation on rotkohl and I served it with (Cottage Ham) Recipe #493933, which paired together perfectly. Bill's German culinary roots were screaming "Ya Buddy"!

16 ounces red cabbage, shredded
1/2 cup chopped shallot
6 ounces white mushrooms or 6 ounces cremini mushrooms, chopped
1 tablespoon olive oil
4 garlic cloves, chopped
2 teaspoons fresh thyme
1/2 teaspoon crushed juniper berries
sea salt
black pepper
1 tablespoon minced fresh chives
1 tablespoon brown sugar
2 tablespoons butter
2 cups pinot noir wine
6 ounces organic fresh blueberries

Steps:

  • Saute the shallots in olive oil until translucent, then add red cabbage and mushrooms and cook until wilted.
  • Stir in the garlic, thyme, juniper, salt, pepper, chives, and brown sugar, top with wine, bring to a boil, lower heat, cover and simmer 30 minutes, Stir occasionally and add a little water if it becomes dry.
  • Remove lid, and stir in blueberries and taste for acidity. Different wines have different acidity and you will achieve a balance by adjusting the brown sugar if needed.
  • Cook over low heat for another 15 minutes or so, stirring frequently.
