4 tablespoons olive oil
6 whole chicken legs, (about 12 ounces each), drumsticks and thighs attached, skin removed
Coarse salt and ground pepper
1 large onion, halved and thinly sliced
1 teaspoon turmeric
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1 1/2 cups large pitted prunes, (dried plums)

Steps:

  • In a large (5-quart) heavy pot, heat 2 tablespoons oil over medium-high. Season chicken generously on all sides with salt and pepper. Place 3 chicken legs in pot; cook, turning once, until browned, about 10 minutes total. Transfer to a plate. Repeat with remaining chicken and oil.
  • Add onion and 1/4 cup water to pot; cook, stirring to loosen browned bits on bottom. Add turmeric, ginger, and cinnamon; cook, stirring occasionally, until onion has softened, about 5 minutes. Return chicken to pot. Add 2 cups water and half the prunes; bring to a boil. Reduce heat; partially cover, and simmer until chicken is cooked through and very tender, about 45 minutes.
  • Transfer chicken to a platter; cover tightly with aluminum foil to keep warm. Add remaining prunes to pot; raise heat to high. Continue to cook, stirring occasionally, until sauce has thickened, about 10 minutes more. If not serving immediately, top chicken with sauce, cover and refrigerate up to 1 day in an airtight container. Otherwise, divide chicken among serving plates, and top with sauce.

2/3 cup extra-virgin olive oil
2/3 cup red wine vinegar
2 cups pitted prunes
1/4 cup capers with a bit of brine
2 tablespoons dried oregano
20 garlic-stuffed olives
5 cloves garlic, minced or pushed through a press
2 bay leaves
Kosher salt and freshly ground black pepper
3 pounds bone-in, skin-on chicken breasts
1/4 cup light brown sugar
1/2 cup white wine
1/2 cup fresh flat-leaf parsley leaves, finely chopped

Steps:

  • Combine the oil, vinegar, prunes, capers, oregano, olives, garlic, bay leaves, 1/4 teaspoon salt and a few grinds of pepper in a large shallow baking dish. Add the chicken and turn to coat. Cover with plastic wrap and marinate at least 1 hour or overnight.
  • Preheat the oven to 375 degrees F. Using a slotted spoon, remove the chicken from the marinade to a plate. Pour the marinade into a 9-by-13-inch baking dish. Arrange the chicken on top, skin-side up. Sprinkle the brown sugar over the chicken breasts and pour the white wine around them.
  • Bake, basting three or four times with the pan juices, until the chicken is crispy on top and cooked through, 1 hour to 1 hour 20 minutes.
  • Transfer the chicken, prunes, olives and capers to a serving platter. Moisten with a few spoonfuls of the pan juices and sprinkle generously with the parsley. Pour the remaining pan juices into a sauceboat and pass with the chicken.

1 large onion , sliced
1 tbsp olive oil
1 garlic clove , crushed
8 boneless skinless chicken thighs
2 Cox's apples or russet apples, cored and cut into chunks
100g ready-to-eat dried prune
150ml/¼ pint white wine
handful chopped parsley

Steps:

  • Place a heavy pan over a high heat and drop in the onion with the oil. Stir well and cook for 2 mins, then add garlic.
  • Add the chicken and cook for a few mins, turning each piece until they all have a little colour. Add the chopped apples and the prunes, stir well, pour in the wine and bring to the boil.
  • Simmer covered for 20 mins until the chicken is tender. Sprinkle with parsley and serve with some mashed potato.

1 tbsp olive oil
600g pork shoulder, roughly cut into 5cm chunks
small knob butter
1 onion , sliced
1 tbsp plain flour
2 large glasses fruity rosé or white wine
300ml chicken stock
140g dried prunes (about 12)
handful fresh parsley , chopped, to serve

Steps:

  • Heat the olive oil in a flame-proof casserole pan and cook the pork, turning occasionally, until it is golden brown all over, about 10 mins. You need plenty of space in the pan, so cook in 2 batches if the meat starts to steam. Remove from the pan to a plate. Tip out any burnt bits, then add the butter and cook the onion for 3-5 mins until softened.
  • Stir in the flour, then return the pork and juices to the pan. Pour over the wine and enough stock to cover the meat. Bring to the boil, reduce to a simmer, put the lid on and cook for 45 mins, stirring occasionally. Tip in the prunes, top up with stock or water if the meat isn't covered, and cook 45 mins more, uncovered, until really tender. Serve sprinkled with parsley.

I recieved this recipe from a 60-year-old Russian woman while on student exchange in Moscow. Unlike most Russian dishes, this dish is relatively easy to prepare, but it is very elegant. I reccomend it with borscht and meat dumplings.

4 chicken breasts
salt
black pepper
4 tablespoons butter
2 tablespoons vegetable oil (Olive oil works good, too)
1 carrot, scraped and cut into 1/2 inch wide rounds
1 stalk celery, coarsely chopped
1 cup onion, finely chopped
1 sprig parsley
1 bay leaf
1 cup chicken broth
water
1/2 lb pitted prune
1 tablespoon lemon juice
1 tablespoon sugar
1 tablespoon flour

Steps:

  • Pat chicken thouroughly dry with paper towel and sprinkle sides with salt and pepper In a 10 to 12-inch skillet melt two tablespoons of butter and two tablespoons of oil over high heat.
  • Add chicken skin-side down and reduce heat to moderate.
  • Fry until sides are golden brown.
  • (Don't worry if the inside is pink, we will be cooking the chicken more later) Transfer the chicken to a plate.
  • Add the celery, carrot, and onion to the fat remaining in pan, stirring occasionally, and cook until the vegetables are soft but NOT brown.
  • Return the chicken to the pan and lay the parsley and bay leaf on top.
  • Pour in 1/2 cup of chicken broth.
  • Bring to a boil over high heat.
  • Lower the heat and simmer for thirty minutes, basting it from time to time with the juices in the pan Meanwhile, in a saucepan, combine 1 1/2 cups of water, the 1 1/2 cups of prunes, the lemon juice, and the sugar.
  • Place on high heat.
  • Bring prunes to a boil and simmer for 30 minutes or until prunes are tender.
  • Preheat the oven to 250 degrees F.
  • Remove the chicken from the skillet and arrange attractively on an ovenproof platter.
  • Scatter the cooked prunes over the top.
  • Cover the platter loosely with foil and put it into the oven.
  • Press hard on the vegetables with a spoonback releasing the juices.
  • Discard vegetables.
  • Set juices aside.
  • Melt two tablespoons of butter in the skillet and add the flour.
  • Cook on high heat until flour is golden brown.
  • Pour in the 1/2 cup of reserved prune juice and the 1/2 cup of reserved pan juices (if there is less then 1/2 cup, make up for it by augmenting it with the chicken broth) Boil until sauce is smooth and thickened.
  • Serve at once.

5 chicken legs with thigh (separated)
1/2 cup dried prune, halved (4 oz)
1 cup green olives (or more to taste)
1/4 cup dry white wine
1/4 cup red wine vinegar
3 tablespoons olive oil
3 tablespoons fresh oregano, chopped or 1 -2 teaspoon dry oregano
2 tablespoons capers (with juice)
2 tablespoons fresh minced garlic
1/2 teaspoon crushed red pepper flakes (or more if you like more heat)
salt
2 bay leaves
1/2 cup brown sugar, packed
1 -2 tablespoon chopped fresh basil (to garnish)

Steps:

  • Combine the chicken, prunes, wine, wine vinegar, oil, oregano, capers, fresh garlic, chili peppers, salt and the bay leaves; turn to coat the chicken pieces well.
  • Cover, and marinate in the refrigerater 8 hours, or overnight (do not marinate for more that 24 hours, as the vinegar will start to cook the chicken).
  • If marinated for 24 hours, combine ingredients in a zip-loc plastic bag, seal and refrigerate.
  • In a casserole dish, arrange the chicken in a single layer.
  • Pour the marinade over the chicken.
  • Sprinkle the brown sugar evenly over the chicken.
  • Bake for 45-50 minutes, in a 350 degree oven, or until the chicken tests done.
  • Remove the chicken to a large platter, and top with remaining pan juices.
  • Remove the bay leaves before sprinkling the chopped basil over the chicken.
  • Serve immediately.

2 tbsp (28g) unsalted butter2 tbsp (30ml) Extra Virgin Olive Oil1.5 kg rabbit, cut into 8 serving parts1 tsp salt½ tsp freshly ground black pepper6.5oz (180g) Bacon - about 6 slices, sliced into 1/2-inch thick matchsticks2 Shallots, peeled and diced3 garlic cloves, peeled and diced1 tbsp all-purpose flour1.5 cup (350ml) white wine2 cups (500ml) chicken stock (or vegetable stock)3 bay leaves¼ tbsp juniper berries (about 12)1 ¼ cup (300g) prunes (pitted)

Steps:

  • Make sure you read the cooking notes before you start.
  • Step 1 - At least 2 hours before you start cooking, pat dry the rabbit (with paper towel) and season the rabbit pieces with salt and pepper on both sides. Be generous and make sure to get inside all the nooks and crannies. Set aside to "warm" to near room temperature. You can do your prep work (shallots, garlic, bacon) in the meantime.
  • Step 2 - In a large heavy-bottomed Dutch oven or casserole, heat up the olive oil and butter over medium heat. Place the rabbit pieces in (work in batches) and cook for 5 minutes on each side, until the outside is golden. Set aside on a plate.
  • Step 3 - Add the bacon strips and cook for about 5-6 minutes, until crisp. Remove the bacon from the Dutch oven with a spatula, so the drippings remain at the bottom, and set the bacon aside.
  • Step 4 - Add the shallots and garlic and cook for about 5 minutes, until slightly caramelized.
  • Step 5 - Add the flour and stir with a wooden spoon until fully combined. Add the rabbit pieces back in. Pour in the white wine and chicken stock. Add the bacon, 2/3 of the prunes (200g), juniper berries and bay leaves. Cover with a lid, lower the temperature to medium low and cook for 45 minutes.
  • Step 6 - After the 45 minutes, ensure the rabbit is cooked through by poking a pointy knife in it. It should insert fairly easily. Add the rest of the prunes (100G) and cook for an extra 10 minutes.
  • Optional: When adding the last of the prunes, you can add the rabbit liver. Mash up the rabbit liver in a small bowl with a fork, add 1 tablespoon of white vinegar and whisk until creamy. Pour in the mixture into the sauce, mix to combine.
  • After the 10 more minutes of cooking, serve over rice.

1/2 cup flour
3 tablespoons olive oil
1/4 cup white wine vinegar
1 cup dry white wine
12 large, plump dried prunes (preferably pruneaux d'Agen)

Steps:

  • Generously season chicken pieces with salt and pepper. Spread flour in a wide, shallow bowl, and dredge chicken until it is well coated. Shake off any excess flour.
  • Place a deep sauté pan (just large enough to hold the chicken pieces in a single layer) over medium-high heat for a minute or two. Add olive oil, and heat until oil shimmers. Arrange chicken pieces in pan, skin side down, and allow to sit without being moved until undersides are browned, about 3 minutes. Turn chicken, and allow to sit again until browned, 3 to 4 minutes.
  • Add vinegar, wine and prunes. Cover, and reduce heat to low. Simmer, basting occasionally, until chicken meat is tender and almost falling off the bone, about 30 minutes.
  • Using a slotted spoon, transfer chicken pieces and prunes to a platter, and keep warm. Raise heat under the pan to high, and reduce pan juices for a minute or two. Pour juices over chicken pieces, and serve.
