4 -6 tablespoons oil
1/2 cup flour
salt and pepper
2 lbs beef, cut in cubes
2 tablespoons fresh garlic, minced
1 large onion, cut lenghwise into eighths
1 teaspoon dried chili pepper flakes (or to taste)
1/4 cup tomato paste
2 (10 ounce) cans beef broth, good quality (or use consomme)
1 cup dry red wine (optional)
1 (28 ounce) can diced tomatoes (with juice)
3 tablespoons Worcestershire sauce
1 tablespoon balsamic vinegar (optional)
2 teaspoons dried thyme
1 large bay leaf (or 2 small)
salt and pepper
2 tablespoons Dijon mustard (optional)
2 carrots, cut in 1 inch chunks
1/2 lb small potato, scrubbed and quartered
salt and pepper

Steps:

  • Heat the oil in a large Dutch oven or stockpot.
  • Season the flour with salt and pepper.
  • Coat the beef cubes in the flour mixture to coat, shaking off excess flour.
  • Brown the beef very well on all sides, then remove to a plate.
  • Add the garlic, onion, and chili flakes to the pot, cooking 3 or 4 minutes, until soft, adding more oil if necessary.
  • Add the tomato paste; stir with the onion/garlic mixture for 2 minutes.
  • Stir in the beef broth and wine to the cooked onions, scraping up brown bits from the bottom of the pot.
  • Add the beef back into the pot with, tomatoes, Worcestershire sauce, vinegar, thyme, bay leaf, salt and pepper, and the Dijon mustard (if using).
  • Mix well, and bring to a simmer.
  • Simmer, uncovered on top of the stove, or in a 350 degree Fahrenheit oven for about 1 hour, or until the meat is fork-tender.
  • Add the carrots and potatoes.
  • Season with salt and pepper to taste.
  • Cook for 30 minutes more, or until veggies are tender.

1/4 cup flour
1 teaspoon salt
1/4 teaspoon pepper
3 tablespoons oil
2 beef bouillon cubes
1 large onion, chopped
1/2 teaspoon celery seed
3/4 cup water
15 ounces tomato sauce
2 tablespoons brown sugar
4 ounces sharp cheddar cheese, grated
1/2 lb fresh mushrooms, halved

Steps:

  • Mix flour, salt and pepper. Dip beef cubes in flour and brown in oil. Add bouillon cubes, onion, celery seed and water to meat. Cover and cook slowly 1 to 1 1/2 hours (It can be cooked in a crockpot on low for 6 hours).
  • Add tomato sauce and brown sugar, continue cooking slowly for 20 minutes (Or in the crockpot add cheese and mushrooms now and cook for an additional hour) or until meat is tender.
  • Add cheese and mushrooms and cook 10 minutes more. Serve over noodles or rice.

5 lbs stew meat, cut in small chunks
1 (8 ounce) package onion soup mix
2 bay leaves
2 (2 ounce) cans cream of mushroom soup
1 (2 ounce) can condensed golden mushroom soup
1 (2 ounce) can cream of celery soup
1 quart water

Steps:

  • Preheat oven to 300°F (150°C). Combine all ingredients in a large covered casserole or dutch oven. Stir until well-blended.
  • Bake 3-4 hours until meat is tender. Cool.
  • Put in eight 1-pint freezer containers, leaving 1/2 inch space at top. Seal and label containers. Freeze. Use within 3 months.

Braised Beef Cubes with Garlic image

This is an original Czech recipe for slow-braised beef cubes in garlic sauce. The dish is very popular in the Czech Republic, often served with potato dumplings and stewed spinach.

1 and 1/2 lbs (680 g) beef chuck or round
3 cloves of garlic
1 Tbsp all-purpose flour
2 Tbsp pork lard (or sunflower/Canola oil)
1 onion (large)
1 and 1/2 tsp salt
water (in which the meat will stew)

Steps:

  • Cut the beef into cubes about 1 inch (3 cm) in size. Peel the onion and chop it finely. Peel and press the garlic.
  • Salt the meat cubes and mix with garlic.
  • Heat the lard or oil in a frying pan to a higher temperature and brown the meat in it. The meat will probably release its juices. Cook until the juices evaporate and the meat cubes are golden brown. Stir.
  • Remove the fried meat and fry the onion in the same fat. If it sticks to the bottom of the pan, add a tablespoon of water. Using a flat spatula, scrape the drippings from the bottom of the pan and stir them into the onions.
  • Return the beef cubes to the onions, cover with water so that the meat is half submerged. Cover with a lid, turn the heat down to a minimum and simmer until the beef is tender. Stewing time for beef cubes: 2-3 hours.
  • At the end of the stewing (the meat is already soft and tender), remove the lid, add a little water if necessary and dust the surface of the stew with flour through a sieve. Put the lid back on and let the flour steam for 15 minutes at low heat - do not stir!
  • Finally, season with salt to taste, stir and serve.

Grandpa's Braised Beef image

Extra-virgin olive oil, for sauteing and drizzling
4 onions, very thinly sliced
6 cloves garlic, very thinly sliced
3 pounds chuck, bottom round or top sirloin steak
Sea salt and freshly ground black pepper
4 to 5 starchy potatoes
1 (32-ounce) can Italian tomatoes, sliced or roughly crushed
2 tablespoons chopped fresh thyme
2 sprigs fresh rosemary, leaves picked and finely chopped
Parmigiano-Reggiano, for grating
A few fresh basil leaves, torn
1 loaf ciabatta, for serving

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat a large skillet over medium heat with a thin layer of extra-virgin olive oil. Add the onions, and garlic to the hot oil and sweat them until very soft and very light caramel in color, 20 to 30 minutes. Turn off the heat and reserve.
  • Heat a large Dutch oven over medium-high heat. Add a thin layer of oil to the pan. Pat the meat dry and season very liberally with salt and pepper. Brown the meat to a deep brown all over, 12 to 15 minutes.
  • Peel the potatoes and very thinly slice them lengthwise into planks. Slice the tomatoes working over a bowl to catch their juices.
  • Arrange 1/2 the onions over top of the meat, season with salt, pepper and 1 tablespoon thyme. Arrange 1/2 the potatoes over the onions and dress the potatoes with a liberal drizzle of extra-virgin olive oil, about 1 tablespoon, salt, pepper, rosemary, and a handful freshly grated cheese. Top the potatoes with 1/2 the tomatoes and their juices, and season with salt and pepper. Scatter a few leaves of torn basil. Repeat the layers. Do not add basil to the top layer of tomatoes.
  • Cover the pan and roast the meat in the oven until very tender, 4 hours. Cool and store for make-ahead meal.
  • To reheat: Reheat, covered, in a preheated 325 degree F oven until warmed through, 45 minutes to 1 hour. Take off the lid of the pot, drizzle the top of the meat with oil, sprinkle with cheese, and broil to lightly crust the top. Cut down through the layers of the potatoes, tomatoes, and onions to portion the meat, serve in shallow bowls with crusty bread and pan juices.

1.5-2 pounds chuck roast or stew beef
1/3 cup flour
1 teaspoon salt
1/4 teaspoon pepper
2 Tbsp coconut oil or lard
2 cups hot water (use beef broth for extra flavor)
1/2 cup whole milk

Steps:

  • Cut the meat into large cubes and trim all visible fat. When the meat is in cubes or chunks, set it aside. In a bowl, combine the flour, salt and pepper. Place the meat in the bowl and toss it in the flour, coating it on all sides. Meanwhile, heat up the oil in a large skillet over medium heat. Place the coated chunks of beef into the hot oil. Brown them on all sides. This will take about 10 minutes of cooking. Save the leftover flour in the bowl. You will use it later for the gravy. After the meat is well browned, add the water. Bring the meat to a boil. Reduce the heat so the water barely simmers. Cover the pan and allow it to simmer for 1-2 hours. If the water simmers away, add more as you see fit. After two hours, the meat should be tender. In a pint size canning jar, or other container with a good lid, combine the remaining flour and the milk. Screw the lid to the jar on tightly and shake it until the flour is completely dissolved in the milk. Then pour this into the skillet on the stove, to thicken the gravy. Stir it up and bring it to a boil. Continue cooking for a full minute. If the gravy is too thick, add water until it is the consistency you like.

4 thick generous slices beef shin, about 700g/1lb 9oz
plain flour, for dusting
2 tbsp sunflower oil
3 medium onions, halved and thinly sliced
2 tsp caster sugar
6 garlic cloves, sliced
700ml beef stock (made with 2 cubes)
3 tbsp Worcestershire sauce
4 large flat mushrooms, thickly sliced
chopped parsley, to serve

Steps:

  • Dust the beef in flour, then set aside. Heat the oil in a large pan. Add the onions and fry for 5 mins. Add the sugar and cook for 5-10 mins, stirring frequently, until the onions are caramelised. Stir in the garlic for the final few mins.
  • Pour in the stock and stir in the Worcestershire sauce. Add the beef and mushrooms, then season, adding plenty of black pepper. Cover and cook gently for 2 hrs until the meat is tender. Can be chilled for up to 3 days. To freeze, cool and store in freezer bags. Thaw and reheat in a pan. Serve scattered with parsley.

3 lbs boneless beef cubes, cut into 1 1/2 inch pieces
1 teaspoon salt
1/2 teaspoon pepper
2 medium onions, thinly sliced
8 ounces mushrooms, undrained
12 ounces dark beer
1 tablespoon vinegar
2 beef bouillon cubes
2 teaspoons sugar
2 garlic cloves, minced
1 teaspoon thyme
2 bay leaves

Steps:

  • Cut stew beef cubes into 1 1/2 inch pieces. Place cubes in bottom of crock pot.
  • Combine all other ingredients and pour over beef.
  • Cook on Low for 8 to 10 hours or on High for 4 - 5 hours.
  • Before serving, you can thicken broth with some flour and water. Turn crock pot to high and stir in flour mixture.
  • Serve over cooked egg noodle pasta.
  • Note: I like to use Negro Modelo which is a dark Mexican beer for this recipe. The dark beer is really nice to cook with.

3 strips of bacon diced
2 lb beef stew meat cut into 1 inch cubes
1/2 tsp crushed peppercorns (i use the tricolor)
1/4 tsp salt
1 tsp olive oil
1 medium onion cut into wedges
1 tsp minced garlic
1 bay leaf
1 can(s) beer or non-alcoholic beer
1 Tbsp soy sauce
1 Tbsp worcestershire sauce
1 tsp dried thyme
2 Tbsp all purpose flour
1/4 c water
hot cooked noodles

Steps:

  • 1. In a large skillet, cook bacon over mediumheat until crisp. Remove from pan to paper towels to drain, discard drippings. Sprinkle beef with pepper and salt. In the same skillet brown the beef on all sides in the oil; drain.
  • 2. Transfer to a 5 quart slow cooker. Add the bacon, onion, garlic and bay leaf. In a small bowl, combine the beer, soy sauce, worcestershire sauce and thyme. Pour over beef.
  • 3. Cover and cook on low for 5 1/2 to 6 hours or until meat is tender.
  • 4. In a small bowl, combine flour and water until smooth, Gradually stir into slow cooker. Cover and cook on high for 30 minutes longer or until thickened. Discard bay leaf.
  • 5. Serve beef over noodles.

1 tablespoon(s) vegetable oil
1 can(s) 15 ounces tomato sauce or diced tomatoes
1 cup(s) water
1 - chopped onion
1 clove(s) garlic, minced
1 teaspoon(s) salt
1/2 teaspoon(s) sugar
1/2 teaspoon(s) dry mustard
1/4 teaspoon(s) pepper

Steps:

  • Cut stew meat (or cut you prefer) into small cubes.
  • Put oil into large fry pan and saute the onions and garlic until soft and glassey. Add the beef cubes and saute until meat has lightly browned, add tomato sauce, water, salt, sugar mustard and pepper.
  • Simmer for 1 1/2 to 2 hours stirring occasionally. Add more water if needed. Serve over mashed potatoes or rice with a side vegetable.
