6 x 300 - 350g / 10 - 12 oz beef ribs ((aka beef short ribs) (Note 1), patted dry)
1 tbsp brown sugar ((sub white))
2 tsp paprika
1 tsp garlic powder ((sub 1 tsp fresh garlic))
1 tsp onion powder ((sub garlic powder))
1/2 tsp cumin powder
3/4 tsp mustard powder ((Note 2))
1 tsp salt
1/2 tsp black pepper
2 garlic cloves (, minced (sub 2 tsp powder))
1/2 cup apple cider vinegar ((Note 2 subs))
1 1/2 cups ketchup (, or Aussie tomato sauce)
1/2 cup brown sugar (, loosely packed (ie don't pack it tight)(sub white))
2 tsp EACH black pepper, onion powder, mustard powder ((Note 2))
1 tsp cayenne pepper ((adjust to taste re: spiciness))
1 tbsp Worcestershire sauce ((sub soy sauce))
2 cups water
Parsley or chives (, chopped)

Steps:

  • Preheat oven to 160°C/320°F (all oven types).
  • Mix Rub in a small bowl large, enough to fit one rib.
  • Press beef ribs into the rub, coating all sides. Shake off excess.
  • Mix Barbecue Sauce ingredients, except water, in a baking pan. Then mix in water.
  • Place ribs in sauce, turning to coat. Arrange meat side down in the sauce, bone side exposed (sauce won't cover completely, that's ok).
  • Cover tightly with foil or lid, bake 3 1/2 hours.
  • Remove from oven, remove foil. Turn ribs (some may have fall over, that's ok, just turn them). Spoon over sauce.
  • Bake 30 minutes uncovered, spooning over sauce again halfway through, until surface is caramelised and sticky. Check to ensure ribs are tender - pry a bit apart using two forks. (If not, cover and return to oven, but after 4 hrs they certainly should be!)
  • Remove ribs onto serving plate (use a spoon as meat will barely be attached to bone, if at all). Mix sauce to bring together (Note 3 on adjustments). Serve with ribs!

These Braised Baby Back Ribs are fall-off-the-bone tender and the Zesty BBQ Sauce is amazingly delicious! A bit sharp, a bit sweet, a bit spicy - these ribs and sauce will make your taste buds sing!

3/4 cup ketchup (or tomato sauce)
3/4 cup water
2 tablespoons white wine vinegar
2 tablespoons Worcestershire sauce
2 tablespoons light brown sugar (not packed)
1 teaspoon kosher salt
1 teaspoon paprika (regular or smoked)
1 teaspoon chili powder
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper, or more to taste
1 1/2 large yellow onions, sliced, and slices cut into quarters
2 3/4 to 3 pounds pork baby back (or pork loin back) ribs
1 tablespoon extra virgin olive oil (not needed if using a good nonstick pan)
Kosher salt, to taste
Fresh ground pepper, to taste

Steps:

  • In a medium mixing bowl, stir together the ketchup, water, vinegar, Worcestershire sauce, sugar, salt, paprika, chili powder, black pepper and cayenne pepper. Stir in onions. Set aside.
  • Remove membrane from bone side of ribs - see easy to follow directions from Weber. Cut into individual ribs. Pat dry. Season with salt and pepper.
  • In a large heavy skillet or Dutch oven, heat olive oil over high heat. Add half of ribs and brown on all sides. Remove and set aside. Repeat with remaining ribs. Drain any oil or fat off from the pan. Add reserved ribs back; spoon BBQ sauce over all. Cover tightly and cook at a low simmer for 1 1/2 to 2 hours, or until meat is very tender. Stir occasionally.
  • Preheat oven to 225 degrees.
  • Remove ribs from pan and place in a covered baking dish in the oven to stay warm.
  • Cool sauce to room temperature. Skim any grease off the surface of the sauce. Purée in a blender until smooth. Place back in pan and bring to a medium boil. Cook, stirring often, until thickened, around 15 minutes. Taste and adjust seasonings as needed (I like to add a touch more vinegar and salt).
  • To serve, baste ribs with some of the sauce, passing the rest on the side (I like to put it in individual dipping bowls for each person).

2 cups barbecue sauce
2 cups brown sugar
Two 5-ounce cans chipotle peppers in adobo
2/3 cup brown mustard
2 tablespoons white vinegar
6 cloves garlic, minced
6 racks pork baby back ribs

Steps:

  • To prepare the marinade, add the pop, barbecue sauce, brown sugar, chipotles, mustard, vinegar and garlic to a medium saucepan. Bring to a gentle boil and cook until reduced and thick, about 20 minutes. Allow to cool completely. Divide into 2 containers and refrigerate one container for later.
  • Brush the remaining container of the marinade all over the ribs on both sides. Wrap each strip of ribs individually in foil and refrigerate for 8 hours to marinate.
  • When you're ready to cook the ribs, preheat the oven to 275 degrees F.
  • Place the ribs, still covered in foil, onto baking sheets and cook for 2 hours. Increase the temperature to 300 degrees F. Open the foil packages and use the other container of marinade to brush another generous layer all over the ribs. Return the ribs to the oven with their foil packages still open and continue cooking for another 30 to 40 minutes, brushing on another layer of marinade as they cook.
  • Remove the ribs when they're fork-tender (keep cooking until they are). Slice and serve!

Steps:

  • Preheat oven to 250 degrees.
  • In a bowl, combine all dry ingredients and mix well. Place each slab of baby back ribs on a piece of heavy-duty aluminum foil, shiny side down. Sprinkle each side generously with the dry rub. Pat the dry rub into the meat. Refrigerate the ribs for a minimum of 1 hour. In a microwavable container, combine all ingredients for the braising liquid. Microwave on high for 1 minute.
  • Place the ribs on a baking sheet. Open one end of the foil on each slab and pour half of the braising liquid into each foil packet. Tilt the baking sheet in order to equally distribute the braising liquid. Braise the ribs in the oven for 2 1/2 hours.
  • Transfer the braising liquid into a medium saucepot. Bring the liquid to a simmer and reduce by half or until of a thick syrup consistency. Brush the glaze onto the ribs. Place under the broiler just until the glaze caramelizes lightly. Slice each slab into 2 rib bone portions. Place the remaining hot glaze into a bowl and toss the rib portions in the glaze.

45 pounds baby back ribs, diamond scored on bone side
2 quarts Rib Spice, recipe follows
Salt and pepper
3 quarts porter or other dark beer
3 quarts vegetable stock
5 white onions, julienned
Molasses Barbeque Sauce, recipe follows
2 1/2 cups brown sugar
1 cup chili powder
1/2 cup granulated onion
1/2 cup salt and pepper, mixed
1/2 cup salt and pepper, mixed
1/4 cup granulated garlic
1/4 cup dried oregano
2 cups ketchup, such as Heinz
1/2 cup molasses
1/4 cup cider vinegar
4 1/2 tablespoons steak sauce, such as A1
1/4 pound brown sugar
1/2 tablespoon chili powder
1/4 teaspoon granulated garlic
1/4 teaspoon granulated onion

Steps:

  • Rub the ribs liberally with the Rib Spice and let them sit, covered, in the refrigerator overnight.
  • Prepare a charcoal grill.
  • Season the ribs with salt and pepper. When the coals are very hot, grill the ribs for 5 to 7 minutes per side.
  • Preheat the oven to 300 degrees F.
  • Arrange the ribs in roasting pans. Pour the beer and vegetable stock over the ribs and spread the onions over the top.
  • Cover each roasting pan with plastic wrap and heavy-duty aluminum foil. There should be no holes in the plastic wrap or the foil. Braise the ribs until a bone comes out with minimal resistance when pulled, about 2 hours. Do not over-braise.
  • Remove the plastic wrap and foil and let the ribs cool in their braising liquid.
  • To serve, prepare a charcoal grill. Warm the ribs over medium heat and baste with the Molasses Barbeque Sauce. Serve hot.
  • Combine the brown sugar, chili powder, granulated onion, salt and pepper, granulated garlic and dried oregano in a large bowl and whisk until well combined.
  • Combine the ketchup, molasses, vinegar and steak sauce in a medium saucepan over low heat. Once the mixture comes to a simmer add the sugar, chili powder, granulated garlic and granulated onion. Stir the sauce often to prevent the sugars from scorching and do not allow the sauce to boil. Simmer for 30 minutes. Yield: enough for 3 racks of ribs.

1 tablespoon vegetable oil
1/2 large onion, chopped
3 cloves garlic, chopped
2 tablespoons chili powder
Kosher salt and freshly ground black pepper
1/4 cup bourbon
1 cup ketchup
1/2 cup brewed coffee
1/3 cup light brown sugar
2 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
2 racks baby back pork ribs (4 to 5 pounds)

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the onions, garlic, chili powder and 1/2 teaspoon salt and cook, stirring occasionally, until the onions are softened, about 10 minutes. Add the bourbon and cook until slightly reduced, 2 to 3 minutes. Then add the ketchup, coffee, 1/2 cup water, brown sugar, cider vinegar and Worcestershire. Increase the heat and bring to a boil; lower the heat and simmer until slightly thickened and the onions are tender, about 25 minutes. Transfer the mixture to a blender and puree until smooth (be careful when blending hot liquids). Transfer the sauce to a bowl and cool slightly.
  • Preheat the oven to 325 degrees F. Line a baking sheet with heavy-duty aluminum foil.
  • Sprinkle the ribs with salt and pepper, and coat the racks on both sides with about 2 cups total of the barbecue sauce (reserve the remaining sauce). Put the ribs, bone-side down, on the prepared baking sheet and wrap each rack with foil. Bake until the meat is tender and pulling away from the bone, about 2 hours.
  • Remove the foil and turn the ribs bone-side up. Preheat the broiler to high. Brush the bone side of the ribs with half of the remaining sauce, and broil until lightly charred in spots, about 5 minutes. Turn the ribs over, brush with the remaining sauce and broil again until charred stops on top, another 5 minutes. Cut the racks in half and serve.

4 cloves garlic, minced
1 tablespoon chopped fresh rosemary
1 tablespoon packed dark brown sugar
1 tablespoon balsamic vinegar
1 1/2 teaspoons kosher salt

1 cup balsamic vinegar
1 cup ketchup
1/2 cup apple cider vinegar
1/4 cup honey
2 tablespoons whole grain mustard
1 tablespoon molasses
2 teaspoons Worcestershire sauce
1 1/2 teaspoons hot sauce
1/4 teaspoon kosher salt

Steps:

  • For the ribs: Place the ribs in a roasting pan, cutting the racks in half to fit if necessary. Combine the garlic, rosemary, brown sugar, balsamic vinegar, salt and cayenne in a small bowl, and rub the mixture evenly all over the ribs. Allow the ribs to marinate in the refrigerator for at least 1 hour and up to 4 hours.
  • Place a rack in the center of the oven and preheat the oven to 425 degrees F. Pour 1/2 cup water into the roasting pan and cover the pan tightly with aluminum foil. Roast the ribs until the meat is very tender and separate easily from the bone, about 1 1/2 hours. While the ribs are roasting make the BBQ sauce.
  • For the sauce: Place the balsamic vinegar in a medium saucepan over medium-high heat. Bring to a boil then lower the heat to medium and cook the vinegar until it is reduced by a third, about 8 minutes. Whisk in the ketchup, apple cider vinegar, honey, mustard, molasses, Worcestershire, hot sauce and salt. Bring the the sauce back to a boil then lower the heat and simmer until thickened, 15 to 20 minutes, stirring occasionally. Remove from the heat and let cool to room temperature.
  • To finish, remove the ribs from the oven and transfer to 2 aluminum-foil-lined baking sheets. Increase the oven temperature to 450 degrees F. Brush both sides of the ribs generously with the BBQ sauce and bake uncovered for 10 minutes, until the sauce is browned and sizzling. Allow the ribs to rest for 10 minutes before slicing.

5 pounds Danish baby back ribs (4 racks) or St. Louis ribs (2 racks)
Kosher salt and freshly ground black pepper
1 recipe Barbecue Sauce (recipe follows)
1/2 cup vegetable oil
1 1/2 cups chopped yellow onion (1 large onion)
1 tablespoon minced garlic (3 cloves)
1 cup (10 ounces) tomato paste
1 cup cider vinegar
1 cup honey
1/2 cup Worcestershire sauce
1 cup Dijon mustard
1/2 cup soy sauce
1 cup (8 ounces) hoisin sauce
2 tablespoons chili powder
1 tablespoon ground cumin
1/2 tablespoon crushed red pepper flakes

Steps:

  • Preheat the oven to 350 degrees F. Line a sheet pan with aluminum foil.
  • Place the ribs on the sheet pan meat-side up and sprinkle them with 2 teaspoons salt and 1 teaspoon pepper. Pour the barbecue sauce generously on each rack and cover the ribs loosely with aluminum foil. Bake for 1 1/2 hours for baby backs and 1 3/4 hours for St. Louis ribs, until the meat is very tender when tested with a fork. As soon as the ribs are out of the oven, spread them generously with additional barbecue sauce. Grill right away or refrigerate to grill later.
  • About 40 minutes before you want to serve, heat a charcoal grill with a layer of hot coals or heat a gas grill to medium-high heat. After the charcoal turns gray, brush the cooking grate with oil to keep the ribs from sticking. Place the ribs on the grill ribs-side down, put the lid on top (be sure both vents are open!) and grill for 5 minutes. Turn the ribs meat-side down, put the lid back on and grill for another 4 to 5 minutes, until nicely browned. Place on a cutting board and cover tightly with aluminum foil and allow the ribs to rest for 10 minutes. Cut into ribs and serve hot with extra barbecue sauce on the side.
  • Heat the oil in a large saucepan over low heat, add the onions and cook for 10 to 15 minutes, until the onions are translucent but not browned. Add the garlic and cook for one more minute. Add the tomato paste, vinegar, honey, Worcestershire sauce, mustard, soy sauce, hoisin sauce, chili powder, cumin and pepper flakes.
  • Bring to a boil, then lower the heat and simmer uncovered for 30 minutes. Use immediately or pour into a container and refrigerate for several weeks.

sweet barbecue sauce
olive oil
vegetable oil
hickory chips
water, to use at the grill
1/2 cup brown sugar
1 teaspoon garlic powder
1 teaspoon garlic salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon onion powder

Steps:

  • Combine rub* ingredients in a plastic bag, shake to mix.
  • Rub olive oil on ribs then generously cover both sides of ribs with rub, there's enough to do 2 racks.
  • Wrap tightly in plastic wrap and refrigerate for a minimum of 4 hrs or as long as 24 hours.
  • For covered charcoal grill: Start coals 30-45 minutes prior to cooking, soak a couple hand fulls of hickory chips in water.
  • Meanwhile, place each rack of ribs, curved side down on two layers of heavy duty aluminum foil, which have been wiped with a thin coat of vegetable oil use a piece of foil large enough to seal over the top.
  • Form a pan with the foil.
  • After coals turn white push them all to one side, drain wood chips, place soaked wood chips on hot coals, replace grill top.
  • Soak some more chips.
  • Place ribs and foil on cool side of grill, carefully pour water to the foil 'pans' to no more than 1/2" up the sides of the ribs.
  • Replace lid on grill.
  • Every 30 minutes add a few coals and some of the soaked chips and reverse the position of the ribs (rotate and reverse).
  • Turn over about 1/2 way through the cooking process so they finish curved side up.
  • Depending on your grill it could take as long as 4 hrs or as little as 1 hr to cook.
  • To finish ribs, remove from heat, drain liquid from foil pan (reserve for sauce if desired) carefully cut racks into serving sized chunks (3-4 ribs), brush with sauce and return to hot side of grill for a few minutes to brown a bit.
  • You can brown them under the broiler right in the foil pans if coals are not hot enough.
  • This procedure can be replicated on a two (or more) zoned gas grill.
  • Put the chips in another foil 'pan' and place them over the heat, when they start to smoke put the ribs over the cool side and cover.
  • Replenish chips as necessary, rotate and reverse rib pans about every 30 minutes.
  • *This is a sweet rub and may be a bit too sweet for some tastes, if so decrease sugar.

  • Meanwhile, in a saucepan, melt the butter. Add the onion, garlic and thyme and cook over moderate heat until the onion is softened, about 5 minutes. Add the ketchup, vinegar, beef broth, hot sauce, Worcestershire sauce and molasses and bring to a boil. Simmer over low heat, stirring occasionally, until thickened, about 30 minutes.
  • Preheat the broiler and position a rack 10 inches from the heat.
