HERBED BREADSTICKS
These braided breadsticks are a showy starter or side dish for your next Italian dinner. Try them alongside a cheese plate, pasta, or soup.

- In a large bowl stir together 3/4 cup of the all-purpose flour, the yeast, rosemary, and pepper. In a small saucepan heat milk, butter, sugar, and salt just until warm (120°F to 130°F) and butter almost melts.
- Add milk mixture to flour mixture. Beat with an electric mixer on low to medium speed for 30 seconds, scraping sides of bowl constantly. Beat on high speed for 3 minutes. Using a wooden spoon, stir in semolina flour. Let stand for 1 minute. Stir in as much of the remaining all-purpose flour as you can.
- Turn dough out onto a lightly floured surface. Knead in enough of the remaining all-purpose flour to make a stiff dough that is smooth and elastic (8 to 10 minutes total). Shape into a ball. Place in a lightly greased large bowl, turning once to grease surface. Cover; let rise in a warm place until nearly double in size (45 to 60 minutes). (To serve today, omit Step 4 and continue as directed in Steps 5 through 7.)
- Punch dough down. Place dough in a freezer container; seal. Freeze for up to 3 weeks. Thaw dough overnight in refrigerator before using.
- Punch down dough. Turn out onto a lightly floured surface. Divide dough in half. Cover; let rest for 10 minutes. Line a baking sheet with foil; grease foil. Roll one dough portion into a 10x9-inch rectangle. Cut lengthwise into 24 strips.
- For each breadstick, pinch together ends of three strips; braid the dough strips. Pinch the other ends together. Tuck under the thin, pinched ends.** Place on the prepared baking sheet. Repeat with remaining dough portion. Cover; let rise in a warm place until nearly double in size (about 30 minutes).
- Preheat oven to 350°F. In a small bowl beat together egg white and the water. Lightly brush egg white mixture on breadsticks. Bake for 15 to 20 minutes or until golden. Serve warm.

- In a large bowl add 2 cups flour and sea salt mix together. Then in a small bowl add warm water, yeast and sugar, let rise for 5 minutes. Mix your egg in a small bowl and in another bowl warm butter, mix together then pour both in with the dry ingredients. After yeast have risen pour in with the other ingredients, then start mixing everything together with a spoon or mixer with hook. When dough becomes hard to mix with spoon, use your hand adding in the extra 1 cup and knead it by pulling the dough towards and pushing downwards, if you need more warm water or flour to bring it all together thats ok. Form into a ball and cover, place in warm place to rise for 30 minutes. After risen DON'T DEFLATE dough, then cut into 18 to 21 small pieces around 1-1/2 to 2 inches thick, then roll them by pulling the dough on a floured countertop and rolling the dough into a thin long piece of dough around 8" long and 1/2 inch thick. Do this three times for braiding the three pieces together, first pinch the three pieces of dough together at one end. Then fold each piece over one at a time, forming a braid. Then continue the same method for all dough remaining. Prepare a cookie sheet lined with parchment paper, place all the bread braids on the pan, then melt garlic butter and glazing all braids, this is optional. Then cover with a piece of parchment paper and towel let rise for 20 minutes in a warm place. Pre-heat oven to 350ºF then bake for 20 to 25 minutes, depending on your oven. Then remove from oven take out of pan and place on a cooling rack or serve hot, brush with butter. Bonita's Baking Tips: After bread braids are cooled put in freezer bag and freeze, if you wish to keep them fresh for longer. If you don't like garlic butter, use cheese or melted plain butter to glaze.

- Make the dough: Place 1/4 cup warm water in the bowl of a mixer; sprinkle in the yeast and set aside until foamy, about 5 minutes. Add the flour, butter, sugar, fine salt and 1 1/4 cups plus 2 tablespoons warm water; mix with the paddle attachment until a slightly sticky dough forms, 5 minutes.
- Knead the dough by hand on a floured surface until very smooth and soft, 3 minutes. Roll into a 2-foot-long log; cut into 16 1 1/2-inch-long pieces. Knead each piece slightly and shape into a 7-inch-long breadstick; arrange 2 inches apart on a parchment-lined baking sheet. Cover with a cloth; let rise in a warm spot until almost doubled, about 45 minutes.
- Preheat the oven to 400 degrees. Make the topping: Brush the breadsticks with 1 1/2 tablespoons of the butter and sprinkle with 1/4 teaspoon kosher salt. - Place all dough ingredients in your bread machine pan according to manufacturers direction.
- Select dough setting.
- When dough cycle is complete, turn out onto floured board and divide dough in half.
- Cut each portion into 12 pieces and roll each piece into a 4 to 6" rope.
- Place 2" apart onto greased baking sheets.
- Cover and let rise in a warm place for about 20 minutes or until doubled.
