- DIRECTIONS Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a sheet pan with parchment paper. In a small bowl, beat the egg and water together with a fork. In a medium bowl, combine the brown sugar, flour, and cinnamon. Add the apple slices and the walnuts, and toss to coat. Dust your work surface with flour and unfold the puff pastry. Lightly dust the top of the dough with flour and roll out into a 16-by-12-inch rectangle. Place the dough on the parchment-lined sheet pan. Arrange the coated apples lengthwise, down the center of the dough. Cut slits 1 inch apart along the two sides of the rectangle to within ½ inch of the apples. Starting at one end, fold the strips over the apples, alternating sides, to "braid" the dough. Continue to fold the dough strips until the apples are covered completely. Tuck the end strips under and brush the pastry with the egg wash. Sprinkle with coarse sugar. Bake for 35 minutes, or until golden brown, rotating halfway. Remove from the oven. Place the sheet pan on a wire rack and allow to cool for 20 minutes before slicing and enjoying.

- In a large bowl, combine the sugar, flour and cinnamon; add apples and toss to coat. On a lightly floured surface, roll out each pastry sheet into a 12-in. square. Cut each into four squares. , Spoon 1/2 cup apple mixture into the center of each square; fold diagonally in half and press edges to seal. Place on a parchment-lined baking sheet., In a small bowl, combine the butter, sugar and cinnamon; brush over pastry. Bake at 400° for 12-16 minutes or until golden brown. Serve warm with ice cream if desired.

Steps:
- Preheat oven to 375 degrees.
- Unroll crescent dough and place in bottom of 9x13 inch baker.
- Lightly sprinkle with flour.
- Roll dough until perforations are sealed and dough is flat.
- Peel, core and slice apples. Cut into quarters.
- Combine sugar and spices in bowl. Add apples and toss lightly.
- Place apple mixture down center of dough, approximately 2-inches wide.
- Cut 10 slits, about 3/4 inch wide on each side of dough surrounding apple mixture alternating dough strips from one side to the other. Fold ends over to seal.
- Melt butter in Micro just until it liquefies; do not boil.
- Brush with butter. Bake 30 minutes.
- Cut and serve warm. Combine sugar and milk for glaze.
- Stir until smooth. Pour over warm braid.

- Heat oven to 200C/180C fan/gas 6. Heat 75g of the sugar and the vanilla seeds in a medium, heavy-based frying pan over a medium-low heat for 5-8 mins, or until golden brown and caramelised. Add the apples, currants, sultanas, allspice, nutmeg and walnuts, then cook for 10 mins or until the apple is tender. Remove the apple mix from the pan with a slotted spoon and cool to room temperature.
- Line two baking trays with baking paper. Place a sheet of filo on one of the trays, then brush lightly with the melted butter. Sprinkle over 1 tsp sugar. Repeat the process until there are 3 layers of filo. Repeat with the remaining sheets of filo on the second tray.
- Divide the apple mix along the shorter edge of both pastry sheets and gently roll into 2 logs, tucking in the ends as you go. Brush with melted butter and sprinkle over 1 tbsp sugar. Can be made up to one day ahead, kept chilled. Bake for 25 mins, or until the pastry is golden brown and crisp. Let cool slightly, then cut each strudel into 6 diagonal slices. Serve two slices each with a dollop of crème fraîche on the side.

- Begin by making the apple filling. In a large, shallow saucepan melt butter and add apples. Add the brown sugar, white sugar, cornstarch, salt and cinnamon. Mix well and cook over high heat for a few minutes while constantly stirring to break up the sugar and combine all of the ingredients. Once the apples release some juices and the sauce begins to thicken it is ready. Do not overcook or the apples will break down and become mushy. Keep in mind that they will continue to cook in the oven. Cool completely.
- Lightly dust your work surface with some all-purpose flour. Roll out each puff pastry to a 12” by 15” rectangle. Place each puff pastry sheet on a baking tray lined with parchment paper.
