Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute the mushrooms, salt and pepper in butter until tender. Add spreadable cheese and broth; cook and stir until blended. Drain pasta; add to skillet and toss to coat.

4 tablespoons schmaltz (rendered chicken fat, or oil, or margarine for a vegetarian dish)
2 large onions (sliced into thin rounds)
4 ounces uncooked bow tie pasta (or more if you like more noodles)
2 cups chicken stock (or salted water for a vegetarian dish)
1 cup kasha (toasted buckwheat groats)
1 large egg (room temperature and beaten lightly)
Salt and pepper (to taste)

Steps:

  • Gather the ingredients.
  • Melt schmaltz in a large skillet and add onions. Sauté over medium-low, stirring frequently until onions are turning brown. Using a slotted spoon, remove onions to a bowl and set aside.
  • Cook bowtie pasta in 2 cups chicken stock or salted water until al dente or done to your liking. Drain, reserving liquid, and set aside.
  • While the pasta is cooking, mix uncooked kasha with beaten egg, coating well. Warm a medium skillet that has a lid and turn kasha into the pan, patting down flat. Cook, stirring often, until kasha has separated into individual grains.
  • Deglaze the pan you cooked onion in with the reserved hot chicken stock or pasta cooking water by pouring it into the pan with the kasha. Stir, bring to a boil, stir again, reduce heat to simmer, cover, and cook until tender, 20 to 40 minutes. Toward the end of cooking, set cover slightly askew to allow any liquid to fully evaporate.
  • In a large saucepan, combine onions, pasta, and kasha, mixing well. Season to taste. Reheat and serve hot as a side dish or main course.

1 package (340 g) farfalle (bow tie) pasta
1/4 cup 60 mL unsalted butter
2 tsp 10 mL olive oil
1 1/2 cups 375 mL sliced onion
1 lb 454 g mushrooms
4 garlic
2 cups 500 mL CAMPBELL'S® Ready to Use Mushroom Broth
1 tsp 5 mL black pepper
1/4 cup 60 mL all-purpose flour
1/4 cup 60 mL fresh parsley
3 tbsp 45 mL grated Parmesan cheese
1 tsp 5 mL dried thyme

Steps:

  • Cook pasta according to package directions and drain, return back to pot, set aside covered.
  • Heat oil in a large skillet over medium-high. Sauté onions and mushrooms for 4-6 minutes or until golden brown. Add garlic and sauté 1 minute longer. Remove from pan, set aside in a bowl.
  • Reduce heat to medium, add butter to skillet, once melted, add the flour and stir briskly making a roux, once bubbly and starting to brown add the broth, thyme and pepper. Bring to simmer and allow to thicken, about 3-5 minutes, stirring constantly.
  • Reduce heat to low, return the mushrooms back to the skillet, stir to coat in sauce and heat through about 2 minutes. Pour the sauce over the pasta, add the chopped parsley and Parmesan cheese, stir well. Serve immediately.

2 boneless, skinless chicken breasts
Salt and freshly ground black pepper
1 tablespoon butter
1 tablespoon olive oil
2 cloves garlic, minced
1/2 cup low-sodium chicken broth, plus more if needed for thinning
1/2 cup half-and-half
1/4 cup heavy cream
1 cup good-quality grated Parmesan
1 cup halved grape tomatoes
4 ounces baby spinach
2 tablespoons fresh parsley, minced

Steps:

  • Bring a large pot of water to a boil. Cook the pasta according to the package directions. Drain and set aside.
  • Slice the chicken into thin strips and season with salt and pepper. Heat the butter and oil in a large skillet over medium-high heat. Add the chicken strips and cook until deep golden brown on both sides and done in the middle. Remove the chicken from the skillet and add the minced garlic. Cook the garlic for 1 minute, then pour in the broth. Let it bubble up and reduce for 1 1/2 to 2 minutes.
  • Next, add the half-and-half, cream and some salt and pepper. Add the Parmesan, whisking constantly until it's all combined. Allow the liquid to heat up and thicken for a few minutes. If it gets too thick, you may thin it with a little chicken broth.
  • When the sauce looks good, remove it from the heat. Return the cooked chicken to the skillet along with the grape tomatoes, spinach and pasta. Toss, taste, adjust the seasoning, top with minced parsley and serve immediately in the skillet!

1 tablespoon olive oil
3 yellow onions (, large, sliced)
1/4 teaspoon salt
1 tablespoon balsamic vinegar
1 tablespoon olive oil
10 oz mushrooms (, sliced (I used button mushrooms))
6 oz spinach
1 cup half-and-half
1 cup Parmesan cheese (, shredded)
1/4 teaspoon salt
8 oz farfalle pasta

Steps:

  • Heat 1 tablespoon olive oil on medium-high heat in a large skillet. Add sliced onions and cook on high heat for about 10 minutes, constantly stirring with the spatula.
  • The onions should start to brown, but without burning.
  • Reduce heat to medium and continue cooking onions for 10 more minutes, continuing to stir, as onions brown even more without burning. At this point add a pinch of salt over onions.
  • Continue cooking for 10 more minutes on medium or low heat, stirring occasionally to make sure onions don't stick to the bottom of the pan or burn.
  • In total, you should have cooked onions for 30 minutes.
  • Remove the skillet from heat and sprinkle the onions with a small amount of balsamic vinegar to deglaze the pan.
  • Using a spatula, stir the onions, scraping the bottom of the pan and coating onions with a pinch of balsamic vinegar you just added. Remove caramelized onions to a plate.
  • Heat 1 tablespoon olive oil in the same skillet on medium heat. Add sliced mushrooms. Sprinkle with a pinch of salt.
  • Cook mushrooms for about 5 minutes, occasionally stirring, until mushrooms are soft.
  • Add fresh spinach to the skillet and stir on low heat just until spinach starts to wilt.
  • Add half-and-half to the mushroom and spinach mixture and bring to a quick boil. Immediately reduce to simmer.
  • Add 2/3 cup of shredded Parmesan cheese and 1/4 teaspoon salt. Keep stirring while the sauce simmers until the cheese melts.
  • Add caramelized onions back to the skillet with the pasta sauce.
  • Cook pasta according to package instructions. Drain.
  • Add cooked and drained farfalle pasta to the creamy sauce. Stir on low heat for a couple of minutes to reheat.
  • If the sauce is too thick, add a small amount of half-and-half to thin it out. If it is too thin, add a small amount of shredded Parmesan cheese, and stir it in, while the sauce simmers.
  • Serve with more shredded parmesan cheese sprinkled on top.

Steps:

  • Cook pasta in large saucepan as directed on package, omitting salt.
  • Meanwhile, heat oil in large nonstick skillet on medium-high heat. Add mushrooms and onions; cook 8 min. or until crisp-tender, stirring frequently. Stir in garlic and sage; cook and stir 1 min. 1 small shallot, diced
5 garlic cloves, minced
1/2 tsp dried thyme
1 1/2 tsp fresh oregano or 1 tsp dried oregano
10 ozs mushrooms, sliced
1/2 cup cream
2 chicken breast fillets, sliced crosswise, width about 3/4 inch
3 tbsp olive oil
1/4 cup white cooking wine
1/3 cup grated parmesan cheese
salt & pepper to taste
12 oz bow tie pasta (also known as farfalle)

Steps:

  • Heat 1 tablespoon of olive oil in a large skillet on medium heat. Add shallot, sauté about 5 minutes until softened, then add garlic, sauté another minute. Stir in the mushrooms, cook about 3-4 minutes until they begin to soften.
  • Stir in the cooking wine along with the thyme and oregano. cook a couple of minutes so the mushrooms absorb the wine.
  • Push the mushroom mixture to the sides of the pan, put another tablespoon olive oil into the center of the pan and heat. Cook the chicken on 1 side until that side turns white, about 2-3 minutes, then flip to begin cooking the other side.
  • Start cooking the pasta according to package instructions around the time you add the chicken to the skillet.
  • When the outside of the chicken pieces are white and beginning to brown, stir up the pan to combine the chicken with mushrooms. Cook a couple minutes more until the chicken is nearly cooked through, then stir in the cream and simmer to finish cooking the chicken. The chicken will need about 10-12 minutes total cooking time-but cut a piece open to see that it is cooked through.
  • Drain the pasta when it has cooked to your liking. Toss with the chicken and mushroom mixture and the grated cheese. Add salt and pepper to taste. Serve and enjoy!

1 lb bowtie pasta
2 tbsp olive oil
1 lb chicken breasts
2 tbsp butter
2 tbsp sliced garlic
3/4 cup white wine
10 ounces sliced mushrooms
2 cups heavy cream
1/2 cup fresh shredded parmesan
1 1/2 cups chopped spinach
2-3 tsp cayenne pepper
salt and pepper
Red pepper flakes, if desired.

Steps:

  • In a large pot, boil dried bowtie pasta according to package directions. This can be done while the other ingredients are being worked on.
  • Place chicken breasts between two pieces of plastic wrap. Hammer flat with the flat side of meat tenderizer until chicken is one uniformed thickness, about 1/2 inch. Sprinkle with a little salt and pepper.
  • Heat oil in large saute pan over medium heat. I used a large enamel cast iron. Cook chicken for about 5-6 minutes per side, or until chicken is done all the way through. Remove from pan, cover, and set aside.
  • In the same pan, melt butter. Saute sliced garlic for about 2 minutes.
  • Add white wine and deglaze the pan. Let simmer for a few moments while you scrape up any bits stuck to the pan and mix the contents.
  • Add sliced mushrooms. Reduce heat and let simmer in the sauce for about 8 minutes or until the wine reduces down by at least half. Add heavy cream and cayenne pepper. Bring to low boil, stirring frequently with a whisk. Simmer for about 5 minutes, or until sauce is thickened. Mix in parmesan. Add chopped spinach and continue cooking for about 5 minutes, or until spinach is wilted.
  • Monitor sauce by tasting frequently. Add salt, pepper, and cayenne as your tastes prefer.
  • Chop chicken into little strips about 1 inch long, 1/2 in wide, or whatever size you prefer.
  • Toss cooked bowtie pasta into sauce. Coat well. Add chicken.
  • Top with red pepper flakes if preferred. Serve with a side of garlic bread and enjoy!

This is a great from scratch Tuna Casserole. No canned soup here, an easy Parmesan cream sauce with just a touch of cayenne to give it a nice kick. Red bell peppers, green onions and mushrooms give it the right flavor and colors to pull an ordinary tuna casserole to over the top. This recipe comes from Art Smith's cookbook "Kitchen Life" which I am enjoying very much! When I make this again, I will probably substitute Ritz cracker crumbs for the dried bread crumbs to add a little more pizzaz to the top.

5 tablespoons unsalted butter
1 red bell pepper, chopped

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350. Lightly coat the inside of a 2 ½ to 3 quart baking with vege spray.
  • Bring a large of water to a boil over high heat. Add the pasta and cook until barely tender (it will cook further in the oven). Drain well. Return the pasta to the cooking pot.
  • Meanwhile heat the butter in a large skillet over medium heat. Add the bell pepper and cook stirring often, until softened, about 3 minutes.
  • Add the mushrooms and the scallions, and cook, stirring often, until the mushroom juices evaporate and the mushrooms are tender, about 6 minutes.
  • Sprinkle with the flour and stir well. Stir in the milk and broth, and bring to a boil, stirring often.
  • Reduce heat to medium low and simmer until slightly thickened, about 3 minutes.
  • Remove from heat and stir in the tuna, ½ cup parmesan and the cayenne. Stir this into the pasta mixture and season with salt and pepper.
  • Pour the pasta into the baking dish and sprinkle with bread crumbs and remaining ¼ cup parmesan. Bake until the sauce is bubbling, 25 to 30 minutes. Let stand 5 minutes, then serve hot.

2 tablespoons onion, small diced

  • Heat a skillet over high flame. Put 3 tablespoons of olive oil, onions, garlic, thyme, and saute for 1 minute. Then add the chicken stock, and allow the sauce to reduce by 1/2. 1 lb bowtie pasta
8 slices bacon
2 Tbsp minced garlic
8 oz mushrooms (sliced)
2 Tbsp butter
1/4 cup sun dried tomatoes
1 jar artichoke hearts
1 large handful spinach
2 cups heavy cream
1 cup parmesan cheese
(save some pasta water to thin if needed)

Steps:

  • In a pot add water and make the pasta according to the directions on the back of the box. Then grab a skillet or a cast iron skillet and add the bacon. Then cook the bacon. Then remove the bacon from the skillet leaving the bacon grease in the pan. Then add the garlic and saute for a minute or two. Then add the mushrooms and cook for a minute and then add the butter. Continue to cook the mushrooms stirring constantly. Then add the sun dried tomatoes and the artichoke hearts. Juice and all. Then add the handful of spinach continuing to stir and saute it all. Then pour in the heavy cream and then the parmesan cheese and bring it to a boil. Once the pasta is done cooking drain reserving 1 cup of the pasta water just in case you need to thin the pasta sauce. Then add the pasta directly to the sauce and then serve.

1/3 cup onion, diced
1/2 cup tomato sauce
1/4 cup vodka
2 tablespoons butter, divided

  • Cook the pasta in at least 2 quarts of salted water according to package instructions. Drain.

  • If desired, grated Parmesan cheese can be added after the pasta has been plated.
