Put a couple of twists on an Italian fave with this Bow-Tie Lasagna Skillet. No need to layer this bow-tie lasagna to get the classic flavors you love.

- Cook pasta as directed on package, omitting salt.
- Meanwhile, brown sausage in large skillet on medium heat; drain. Add onions; cook 3 min. or until tender, stirring frequently. Add tomatoes, tomato paste and 3/4 cup mozzarella cheese; mix well.
- Mix ricotta, Parmesan, water and pepper. Drain pasta; add to skillet; mix well. Top with cheese mixture; sprinkle with remaining mozzarella. Cover; cook on low heat 3 min. or until mozzarella is melted.

- In a large cast-iron or other heavy skillet, cook beef, onion and garlic until meat is no longer pink; drain. Add the tomatoes, water, tomato paste, parsley, oregano and salt. Stir in pasta; bring to a boil. Reduce heat; cover and simmer until pasta is tender, 20-25 minutes, stirring once. , Combine cheeses; drop by rounded tablespoonfuls onto pasta mixture. Cover and cook for 5 minutes. If desired, sprinkle with additional dried oregano.

SKILLET CHICKEN LASAGNA

- Cook the pasta according to the package instructions; drain and set aside.
- Heat the oil in a large skillet over medium-high heat. Season the chicken with the Italian seasoning and some salt. Add the chicken to the skillet and cook until golden brown, 2 to 3 minutes per side. Remove the chicken to a plate and set aside.
- Add the onions and garlic to the same skillet and cook, stirring, for 3 minutes. Add the broth, then scrape the bottom of the skillet to loosen the bits. Cook for another 2 to 3 minutes to let the broth reduce. Add the marinara sauce and red pepper flakes, bring to a simmer and simmer for 10 minutes.
- Turn off the heat and add the drained pasta, mozzarella, ricotta, Parmesan and basil. Add the cooked chicken on top. Toss to combine, then add more of the mozzarella, ricotta, Parmesan or basil until the sauce is just how you like it. Serve with a sprinkling of Parmesan and a little basil on top.
PARMESAN BOW-TIE SKILLET

- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add spaghetti sauce, tomatoes, onion, garlic, basil, oregano, salt, and pepper. Cook over low heat until sauce is hot, about 15 minutes.
- Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil. Cook mafalda noodles at a boil until tender yet firm to the bite, about 8 minutes. Drain.
- Add cooked and drained noodles to the sauce and stir until completely coated. Sprinkle mozzarella cheese on top.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Place skillet under the hot broil and cook until cheese is golden and bubbly, 3 to 5 minutes.

- Preheat oven to 425.
- Grease 8x8 square baking dish.
- In large pot boil 4 qts water and partially cook pasta for half of the directed time.
- In large skillet heat oil over medium heat.
- Add onion and saute 1 minute.
- Stir in beef or turkey and cook until lightly browned about 3 minutes.
- Add spaghetti sauce and bring to a boil.
- Reduce heat to low and partially cover the skillet.
- Simmer for 5 minutes.
- In small bowl mix ricotta or cottage cheese with egg and Parmesan.
- Drain the pasta throughly.
- Layer half the pasta in the pan.
- Spoon cheese mixture over the pasta.
- Spoon half the meat mixture over the cheese.
- Sprinkle with half the mozzarella.
- Make another layer with the remaining pasta, then the meat then the mozzarela.
- Cover pan with foil, spraying the inside facing the cheese with pam.
- Bake for 15 minutes.
- Uncover and bake for another 8-10 minutes or until heated through.

LASAGNA IN A SKILLET - IN ABOUT 30 MINUTES!
What I love about this recipe, is that it's possible to have lasagna within approx. 30 minutes and only have one pan to wash! It's an easy weeknight recipe to prepare. Comfort food with ease. :) This is an adaption from Cook's Illustrated. *Note: I use preshredded cheeses for quick prep. The 30 minute time is what the original recipe states, and the time it takes me to prepare - however, the time is an approximation and may take a bit longer. Enjoy!

- Cook meat in a large nonstick skillet over medium-high heat, breaking it into pieces with a wooden spoon, for about 5 minutes (until cooked through).
- Drain meat and return to skillet.
- Stir in garlic, red pepper flakes and 1/2 t. salt and cook over medium-high heat until fragrant (about 30 seconds -- do not burn garlic).
- Sprinkle broken lasagna noodles into the skillet, then pour in marinara sauce and water over the top.
- Cover and cook, stirring often and adjusting heat as necessary to maintain a vigorous simmer, until noodles are tender (about 20 minutes).
- Take the skillet off the heat source and stir in half of the mozzarella and half of the parmesan. Season with salt and pepper.
- Dot heaping tablespoons of ricotta over the noodles, then sprinkle with remaining mozzarella and parmesan.
- Cover and let stand off heat until the cheeses melt (about 3-5 minutes).
- Sprinkle with basil before serving.
