Enjoy these during the holidays or anytime at all. These nuts could easily be put into airtight jars and given as gifts.

Steps:
- Preheat oven to 325 degrees Fahrenheit. Simmer the bourbon in a small saucepan over medium heat until reduced by a quarter, just a few minutes. Blanch the pecans in boiling water for 1 minute ( blanching the pecans in boiling water is an old Chinese trick that makes them especially crisp), then drain.
- Combine the bourbon, oil, Worcestershire sauce, bitters, and sugar in a large bowl. Add the HOT pecans and toss. Let stand for 10 minutes.
- Spread the pecans in a single layer on a large baking sheet. Bake until the nuts are crisp and the liquid has evaporated, 30 to 40 minutes, stirring every 10 minutes. Turn the nuts into a clean bowl.
- Combine the cumin, cayenne, salt, and pepper in a small bowl. Toss with the nuts and serve.

BOURBON PECAN CAKE

- For the cake: Preheat the oven to 350 degrees F.
- Whisk together the flour, baking powder, cinnamon and salt in a medium bowl and set aside. Combine the bourbon, milk and vanilla in a separate bowl (it may get clumpy looking--that's ok) and set aside.
- In a stand mixer fitted with a paddle attachment, cream the butter and coconut oil until fluffy, about 1 minute. Add 1 3/4 cups of the granulated sugar and beat until fluffy, about 1 more minute. Add the egg yolks one at a time, mixing well between additions. Add the dry ingredients in four batches, alternating with the wet mixture, starting and ending with the dry. Stir in the pecans.
- In a stand mixer with a whisk attachment and a clean bowl, whip the egg whites with the cream of tartar on medium until soft peaks form. Sprinkle in the remaining 1/4 cup granulated sugar and whip to stiff peaks, about 5 minutes total. Fold the egg whites into the batter in thirds.
- Pour into a bundt pan and bake until a cake tester comes out clean, 55 to 60 minutes. Let cool before turning the cake out of the pan.
- For the glaze: In a medium bowl, combine the confectioners' sugar, bourbon and 2 tablespoons water. Once the cake is cool, top it with the glaze and sprinkle with the chopped pecans.

- Combine sugar and 1/3 cup water in a small saucepan over medium-high heat.
- Cook 5 minutes or until sugar dissolves, stirring constantly.
- Stir in pecans, milk, butter, bourbon, and vanilla extract.
- Reduce heat, and cook 3 minutes or until mixture is thick and bubbly.

CHOCOLATE BOURBON PECAN COOKIES
These cookies made such a wonderful aroma in the Test Kitchen, I was counting down the minutes until they came out of the oven. I couldn't wait and ate a few without the icing ... they were good. Once topped with the brown butter coffee frosting, they were really good!

- 1. Preheat oven to 350F degrees
- 2. In large bowl cream butter and sugars until light and fluffy; beat in egg, vanilla and bourbon.
- 3. In medium bowl combine flour, cocoa powder, baking soda and salt; add to creamed mixture. Stir in chocolate chips and chopped pecans.
- 4. Drop by heaping tablespoonfuls onto cookie sheet and refrigerate for at least 30 minutes.
- 5. After cookies have chilled, place them about 2 inches apart onto nonstick cookie sheet and bake for 12 to 14 minutes. Cool completely on wire racks. Once cooled, frost them and place a pecan on top for the finishing touch.
- 6. *Gluten Free Flour Blend 2 cups rice flour 2/3 cup potato starch 1/3 cup tapioca starch 1 teaspoon xanthan gum Add all the flours together in a bowl and then whisk thoroughly to remove lumps.
- 7. Browned Butter Coffee Frosting Heat butter in a heavy saucepan over medium heat. Stir the butter constantly so that the butter doesn't burn. Remove from heat when butter turns light brown and gives off a nutty aroma. Let cool completely. In a medium bowl combine the hot water with the instant coffee and whisk to dissolve. Then add the cooled butter with the dissolved coffee and all remaining ingredients and mix on medium speed until well combined and frosting forms.
- 8. Frost each cookie and place a pecan on top. I think you'll agree it's love at first bite!
CARAMEL PECAN BOURBON SAUCE

- Preheat over to 325 degrees.
- Spread pecans on a baking sheet and bake until lightly browned. This takes approximately 5-8 minutes. Watch them carefully so they don't burn. Set aside toasted pecans.
- In a large heavy sauce pan, combine brown sugar, corn syrup, heavy cream and butter. Bring to a boil over medium heat. Reduce heat to medium low and continue cooking. Stir constantly so it doesn't burn. Cook until mixture is reduced to 3 cups. This takes about 10-15 minutes.
- Remove from heat. Stir in bourbon, vanilla and pecans. Let cool.
- NOTES: If made in advance, cover and refrigerate up to 2 weeks. To reheat in microwave use 30% power for a minute or two. For the power notation--adjust to your microwave. The goal is to bring this to a room temperature or slightly warm temperature.
