4 1/4 cups bourbon
2 figs, seeded and sliced
2 pears, seeded and sliced
1 vanilla bean, seeds scraped
1 ounce bitter orange digestif, such as Campari
1 ounce sweet vermouth
1 slice orange, for garnish

Steps:

  • For the infused bourbon: Combine the bourbon, figs, pears and vanilla bean seeds and pod in an airtight container. Let infuse in the refrigerator for at least 2 weeks but no more than 3 weeks. Strain.
  • Combine 2 ounces of the infused bourbon, the digestif and sweet vermouth in a mixing glass. Stir for 90 seconds, and then strain into a chilled martini glass. Garnish with a slice of orange.

1 ounce bitter orange aperitif (such as Campari)
1 ounce sweet vermouth
Orange slice, for garnish

Steps:

  • Make the infused bourbon: Combine the bourbon, figs, pears and vanilla seeds and pod in an airtight container. Let infuse in the refrigerator for at least 2 weeks but no more than 3 weeks. Strain through a fine-mesh sieve.
  • For each drink, combine 2 ounces of the infused bourbon, the aperitif and vermouth in a mixing glass with ice. Stir for 90 seconds, then strain into a chilled martini glass. Garnish with a slice of orange.

The Boulevardier image

A marvel of a cocktail with an enviably colorful peerage, the Boulevardier is effectively a cross between a Manhattan and a Negroni. In colder months, it's a magnificent drink to have as a fallback when you want something richer and more complex than just a whiskey but can never seem to think of what else to order. It's composed of two parts American whiskey, with one part each of sweet vermouth and Campari. Taken one way, it's a Manhattan with a portion of Campari swapped in for the regular few drops of Angostura or other aromatic bitters. Seen the other way, it's a Negroni with whiskey in place of the gin.

1 ounce sweet vermouth (I love a half and half mixture of Cinzano Rosso and Carpano Antica Formula).

Steps:

  • Stir ingredients together in a mixing glass filled with ice, strain into either a stemmed cocktail glass or a rocks glass with ice, to preference. Garnish with a twist of lemon zest.

Any-Spirit Negroni image

This take on the classic drink uses a combination of sweet and dry vermouths in the standard gin-vermouth-red bitter formula, adding depth and character. The vermouths are paired with the spirit of your choice for an adaptable drink that puts whatever bottles you prefer or have on hand to work. If you're not a fan of the traditional gin, rum, tequila or bourbon or rye whiskeys are all great here.

1 ounce spirit of your choice (gin, rum, tequila or bourbon or rye whiskeys all work)
1 ounce red bitter liqueur, such as Campari, Cappelletti or Contratto Bitter
1/2 ounce sweet vermouth
1/2 ounce dry vermouth
1 (2-inch-long) piece of orange or lemon peel, for serving

Steps:

  • Fill a mixing glass with ice, and add the spirit, red bitter, sweet vermouth and dry vermouth. Stir for 30 seconds, then strain into an ice-filled lowball glass. Garnish with the citrus peel.
