SALTED CARAMEL FROSTED BROWNIES

- For the brownies: Preheat the oven to 325 degrees F. Line a 9-by-13-inch baking pan with foil or parchment paper.
- In the top of a double boiler over medium heat, heat the chocolate and butter, stirring, until melted, about 5 minutes. Add the granulated sugar and stir gently until combined. Remove from the heat.
- In a separate bowl, gently whisk the eggs. Add a small splash of the chocolate mixture to the eggs, stirring immediately (but still gently). Then add the tempered eggs into the chocolate, stirring constantly. Add the flour and stir until combined. Pour the batter into the prepared baking pan and spread to even out the surface.
- Bake until just beginning to crisp at the edges, 25 to 30 minutes. Let cool completely in the pan.
- For the salted caramel sauce: Add the brown sugar, cream, butter, vanilla and salt to a pan and cook over medium heat, whisking occasionally, until thickened and combined, about 5 minutes. Remove from the heat and allow to cool.
- For the salted caramel buttercream: Add the confectioners' sugar, butter and cream to a mixer fitted with the paddle attachment. Mix until light and fluffy, 3 to 4 minutes. Turn the mixer off, drizzle in the salted caramel sauce, turn the mixer back on and mix until combined.
- To frost the brownies: Remove the cooled brownies from the pan, spread with the buttercream and cut into individual pieces.
BOURBON BACON BROWNIES

- Follow directions on back of brownie box regarding baking using an 8 x 8-inch pan.
- Prepare brownie mix according to package instructions. Fold in crumbled bacon and stir in 3 tbsp bourbon.
- Pour brownie batter into a lightly greased 8 x 8-inch pan. Bake as directed on package or until a toothpick inserted two inches from the edge of the pan comes out mostly clean.
- Remove brownies from oven and immediately pour 1/4 cup bourbon on them. Cool in refrigerator completely before slicing and serving.
SALTED CARAMEL-BOURBON SAUCE

- Cook 1 1/2 cups sugar and 1/2 cup water in a saucepan over medium-high heat, swirling the pan but not stirring, until dark amber, about 12 minutes. Remove from the heat and whisk in 1 cup heavy cream, 1 teaspoon vanilla and 1/2 teaspoon sea salt. Whisk in 2 tablespoons bourbon. Let cool completely; transfer to jars and refrigerate. (Makes about 2 cups.)

These are an elegant, indulgent, melt-in-your mouth chocolate dessert. If you prefer the brownies without the bourbon, omit the drizzling step.

- Grease an 8x8x2-inch baking pan;set aside;Heat oven to 350 degrees.
- In a medium saucepan, combine the 1/3 cup butter, sugar and water; cook and stir over medium heat just until boiling, remove from heat, add the 1 cup of chocolate pieces; stir until chocolate is melted.
- Stir in eggs and vanilla, beating lightly with a spoon until combined; stir in flour, baking soda and salt; stir in pecans.
- Spread batter into prepared pan;Bake at 350 degrees about 20 minutes or until edges are set and begin to pull away from the sides of pan.
- Using a fork, prick the warm brownies several times, Drizzle BOURBON evenly over brownies; cool in pan on wire rack.
- For frosting; In a small mixing bowl beat the 3 tablespoons butter with an electric mixer on medium to high speed for about 30 seconds; gradually add powdered sugar, beating well, slowly beat in 2 teaspoons of the milk and the vanilla; if necessary, beat in remaining milk to reach spreading consistency, spread over brownies;Melt chocolate; drizzle melted chocolate over frosting.
