NO-KNEAD CRUSTY BOULE



No-Knead Crusty Boule image

All you need is four ingredients and some patience to pull off a delicious No-Knead Crusty Boule.

Number Of Ingredients 4

3 cups (14¾ oz.) bread flour, plus more for work surface
2 teaspoons kosher salt
0.5 teaspoon active dry yeast (from 1 [¼-oz.] packet)
1.5 cups tap water

Steps:

  • Whisk together flour, salt, and yeast in a large bowl. Gradually stir in water until no dry bits of flour remain and mixture is well combined. Cover bowl tightly with plastic wrap and let stand at room temperature until very bubbly and consistency resembles pancake batter, 12 to 18 hours.
  • Turn dough out onto a generously floured surface or floured parchment paper. (Dough will be very loose.) Incorporating as little flour into the dough as possible, shape into a taut ball by folding edges of dough in toward middle and repeating folding process until dough begins to develop structure and hold its shape, 2 to 3 minutes. Line a medium (9-inch diameter) bowl with a large piece of parchment paper that goes up sides bowl; flour parchment. Gently lift and place dough, seam side down, into prepared bowl. Cover with plastic wrap and let stand in a draft-free warm place until doubled in size, 1 to 2 hours.
  • Preheat oven to 500°F. About 20 minutes before baking, place a cast-iron Dutch oven (5-quart or larger) with lid in oven to preheat.
  • Once Dutch oven is fully preheated, remove from oven and carefully remove lid. Carefully lift dough using the parchment paper as handles and place dough into hot Dutch oven. Using shears or a very sharp knife, make one or multiple slits down the middle into the dough about ½-inch deep. Replace lid to cover pot and return to oven. Reduce oven temperature to 450°F. Bake, covered, until loaf has increased in volume and turned a light golden brown, 28 to 30 minutes. Remove lid and continue baking until a deep golden brown, 12 to 15 more minutes. Carefully transfer loaf, by lifting parchment paper and using as handles, to a wire rack. Remove parchment and let cool on wire rack, at least 1 hour before slicing.

3 Cups lukewarm water ((100 - 105 degrees F))
6 1/2 to 7 1/2 Cups All-Purpose Flour
1 Tablespoon salt
1 1/2 Tablespoons instant or active dry yeast
1 Tablespoon Sugar

Steps:

  • Proof the yeast by combining warmed water, sugar & yeast. In the meantime measure & combine flour & salt in a large 5-7 quart bowl.
  • When yeast begins to bubble, add it to the flour mixture. Turn KitchenAid on speed 2 and mix just until combined - about 60 seconds. This step can be accomplished with a sturdy wooden spoon instead if desired. (note, the dough will be rough & sticky)
  • Cover bowl & let dough rise at room temperature for about 2 hours. Then refrigerate the covered dough for up to 7 days (but at least 2 hours). The longer you keep the dough chilled, the more tangy it becomes. If you're using a cover on your bowl you'll want to keep one corner open to allow pressure to escape.
  • To bake the bread, pull the covered bowl from the refrigerator. Sprinkle a section of the dough with flour to make it easier to pull away. Flour your countertop as well. Then bring out a baking sheet and grease it lightly. Also grease your hands.Pull a section of dough from the bowl about the size of a softball and place it on your floured counter top.
  • Shape the dough by stretching the top & tucking it beneath the dough ball. The ball will be rustically shaped, don't strive for perfection with this step.
  • When the dough ball is round-ish, put it on the greased baking sheet and sift a light coating of flour over the surface of the dough. This will keep the dough from drying out during its rise time.
  • Place the dough into a cold oven with the light turned on for gentle warming to allow it to rise After about 45 minutes, remove the dough from the oven. Make sure one oven rack is in the center of the oven and one oven rack is at the bottom. Place a shallow metal pan on the bottom rack and preheat the oven to 450°FNOTE: Use a metal pan not glass as the procedure to follow could crack glass or Pyrex pans
  • When the final 15 minutes rise time is finished & the oven has preheated, slash the bread top 3 times.
  • Place the bread onto the middle rack of the preheated oven. Then pour 1 cup water into the shallow pan on the bottom rack When the water hits that hot pan it'll sputter but that's what you want it to do. Now just close the oven door & set your timer to check your bread in 25 minutes.
  • Allow the bread to bake for about 25 minutes, or until it's golden brown.
  • Remove the bread from the oven and place it on a baker's rack to cool. Cover the cooling bread with a clean kitchen towel to help keep the crust softer.

The Artisan Bread in 5 Minutes a Day people (e.g., "Artisan Bread in Five Minutes a Day" by Jeff Hertzberg & Zoe Francois) have developed a gluten-free loaf - this is from their website and recommended to me by duonyte when I asked for some suggestions on how to work with gluten-free bread dough I was having problems with. Recipe makes enough dough for at least four 1-pound loaves. This recipe suggests baking the free-form loaf in a 5-quart dutch oven -- this is for the steam effect that produces the nice crust and wonderful crumb for this bread. Reading through their website, I also saw an option that this bread can be baked free-form, on a stone or baking sheet as long as a metal pan of hot water is placed in the oven below the dough in order to produce the steam effect while baking. 2 cups brown rice flour
1 1/2 cups sorghum flour
3 cups tapioca flour (also called tapioca starch)
2 tablespoons yeast (can be reduced but you will have to increase the rise time)
1 tablespoon kosher salt (increase or decrease to taste)
2 tablespoons xanthan gum
2 2/3 cups lukewarm water
4 large eggs, whisked together
1/3 cup neutral-flavored oil or 1/3 cup olive oil
2 tablespoons honey or 2 tablespoons sugar

Steps:

  • MIXING AND STORING THE DOUGH:.
  • Whisk together the flours, yeast, salt and xanthan gum in a 5-quart lidded Round Food Storage Container or the mixing bowl of your stand mixer (a metal mixing bowl should be fine as long as it is stainless steel).
  • Combine the oil, honey and water; set aside.
  • Dump the eggs into the dry ingredients and then stir while you pour in about 1/3 of the oil and water. (Unlike wheat doughs, we do not add all of the liquid at once and stir. If you do that it will result in a lumpy dough).
  • Continue to stir while you pour in another 1/3 of the liquid; the dough will start to come together in a thick dough. NOTE: You can use your mixer for these steps with your bread hook rather than stirring the dough ingredients together.
  • Add the final 1/3 of liquid and stir until the dough is nice and smooth. Cover container with the lid, but do not snap it shut. Allow it to rest on the counter for about 2 hours.
  • Place the dough in the refrigerator and store for up to 7 days.
  • NOTE: If you want to bake a loaf immediately after the initial proving you can bake it the first day, but you need to reduce the resting time before hand. In fact, you can mix the dough, shape it and let it rest on the parchment. After it has risen then slide it directly into the oven.
  • BAKING DAY:
  • On baking day take the bucket from the refrigerator. The dough will be quite fluffy still and you do not want to handle the dough too much. Just like our other doughs the trick is to keep as much of the air bubbles intact as possible.
  • Use WET HANDS to remove a 1-pound (grapefruit-size) piece of dough from the bucket. In order to not handle the dough too much you can even scoop it out of the bucket with a slightly wet metal spoon.
  • The dough will be quite scraggly when you take it out, just place it on a piece of parchment paper.
  • Use wet hands to smooth out the surface of the dough and shape it as desired. DO NOT KNEAD. This may take dipping your hands in the water a few times...to get a nice shape. Gently smooth it out with wet hands into the shape you want.
  • Cover dough loosely with plastic wrap and allow to rest on the counter for about 90 minutes. If your kitchen is very warm you may only need about 75 minutes.
  • The dough will not have grown much while resting, but it will seem a little bit puffier. Use a serrated knife to cut slashes in the dough.
  • BAKING OPTIONS:.
  • STONE OR COOKIE SHEET OPTION: If you want to bake using a baking stone, you can OR you can use a cookie sheet.
  • Preheat oven to 450°F
  • Place parchment paper with your prepared dough on prepared stone or baking sheet.
  • Place a pan (not glass) under the baking stone or sheet (at least 4 inches away) and add a cup of hot water to it when you put the loaf in the oven to create steam.
  • Bake at 450 degrees for 30 minutes.
  • DUTCH OVEN OPTION: Preheat the oven with a 5 1/2 quart Dutch Oven in it to 500 degrees 30 minutes before baking time. (Be sure it is fitted with a metal Replacement Knob, the original plastic knobs can only be heated to about 400 degrees.)
  • Remove the pot from the oven and take off the lid.
  • Lift the bread on the parchment and VERY CAREFULLY lower the parchment and bread into the pot, replace the lid onto the pot.
  • Return to the oven and bake for 20 minutes.
  • After 20 minutes remove the lid, turn the heat down to 450F and bake for an additional 15 minutes.
  • COOL THE BREAD:
  • Once the bread is done baking remove it from the pot using a spatula or from the stone/sheet and transfer to a baking rack to cool.
  • ALLOW THE BREAD TO COOL COMPLETELY before eating or the center may seem gummy.
  • The loaf is also wonderful toasted and served with butter and marmalade. Enjoy!

¼ tsp fast-action dried yeast
500g strong white bread flour , plus extra for dusting
3-4 rosemary sprigs, leaves picked
2 tsp sea salt
2 tbsp olive oil

Steps:

  • Pour 500ml warm water into a large bowl and sprinkle over the yeast. Stir to distribute the yeast, then add the flour, rosemary leaves and sea salt. Once everything is well mixed and you have a very, very soft dough (don't worry if it's sticky, you won't be kneading it), cover the bowl with cling film and leave to rise overnight, or for 8-12 hrs.
  • Once the dough has risen, brush the inside of another large bowl with the olive oil and dust with 1-2 tbsp flour. Carefully tip the bread, which will be very soft and bubbly, into the floured bowl and dust the top with more flour. Cover again with cling film and leave to prove for 1 hr.
  • Heat oven to 200C/180C fan/gas 6. Place a large casserole dish, small roasting tin or cake tin in the oven to heat up. When it's really hot, take it out of the oven, line it with a square of baking parchment or a silicone liner and quickly tip in the dough. Sprinkle with a little more flour and bake for 45 mins-1 hr or until the bread is risen, golden and, if you tap the crust with your knuckles, it sounds hollow.
  • Turn the bread out onto a wire rack and leave to cool for 10-15 mins before slicing. Delicious served warm with olive oil, balsamic vinegar and sea salt flakes.

1/4 teaspoon instant dry yeast
1 tablespoon honey
3/4 cup room-temperature water

Steps:

  • In a medium-sized bowl add all ingredients. Stir with a wooden spoon until a shaggy blob of dough forms. Do not over mix. Cover bowl with plastic wrap and let dough sit at room temperature for 12-24 hours. Dough will double in size and bubble up.
  • 1 hour before you're ready to bake, pour dough onto a lightly floured worktop. With floured hands form dough into a ball by pulling edges toward the middle. Place dough ball seam-side down on a piece of parchment paper placed on a baking sheet.
  • Dust top of dough with flour and cover loosely with plastic wrap and let rise at room temperature until dough has doubled in size and does not readily spring back when poked with finger, about 1 hour.
  • Preheat oven to 450°F When dough is ready to bake make a 3" slash 1/2" deep across the top of the dough with a sharp knife or razor.
  • Cover dough ball with an upside-down large, deep, oven-safe pot or aluminum roasting pan. Make sure pot edges are flush with the baking sheet so that no steam can escape. Place baking sheet in oven and bake for 25 minutes.
  • After 25 minutes, uncover bread and reduce heat to 400°F Bake for 10 more minutes, until deeply golden brown and internal temperature measures 205-215°F.
  • Immediately transfer bread to a wire rack and cool for 2 hours.

This is a great recipe I adapted from Mother Earth News Magazine. It is super simple. I mix it up, let it rise, put it in the fridge, pull off a hunk of dough before I make my supper. Then I bake it and it's ready for supper. I haven't bought bread since I started using this recipe. It also makes wonderful chewy buns for hamburgers/sandwiches. I've used this basic recipe to make pizza crust and cinnamon rolls too. Once you get the hang of it, it's really easy.

3 cups lukewarm water (just above body temp.)
1 1/2 tablespoons granulated yeast
1 -1 1/2 tablespoon coarse sea salt
3 cups unsifted whole wheat flour
3 cups unsifted unbleached all-purpose flour
cornmeal, for pizza peel

Steps:

  • (I do this in my stand mixer) Combine water, salt, and yeast. Mix in flours. Don't over mix. It should be loose and just combined.
  • Put in a non-airtight container. It needs to be covered, but the gasses need to be able to be released. Let rise about 2 hours, until it starts to collapse on its self.
  • Refrigerate covered until ready to make bread. (At least 3 hours.).
  • Preheat oven to 450 F with baking stone in center of oven. Place an empty broiler pan on another rack. (Preheat at least 40 minutes.).
  • Prepare pizza peel with cornmeal (I don't have a pizza peel, I use a flat metal baking pan with no edges, and it works ok).
  • Dust the dough with a bit of flour. Pull a hunk of dough from the refrigerator (1lb loaf is about the size of a grapefruit, if you make a single batch it will be 1/4 of the dough). Do not kneed. Gently tuck the rough edges underneath the ball. Place on the cornmeal. Let rise 20 minutes.
  • Before you bake cut 2-3 slits in the top of the loaf. It helps it to rise during baking. Using a "flicking" motion with your wrist, shake the loaf onto the baking stone. (I almost always need to use a spatula to help it along) Carefully add 1 cup warm water to the broiler pan. Quickly trap the steam in the oven and bake for 30 minutes. Until nicely brown on the outside. (Try not to peak).
  • Let cool on a wire rack. Then cut.
  • Store extra dough in fridge until you need it. The longer it stays in the fridge the more of a "sourdough" taste you get.
